I bet it was de-lish !! I love tuna.

and I still cannot get over how adorable your dog is. So cute.

It's clean out the freezer time - we're moving & I'm finding all these wonders I kind of forgot about. I bought this cookbook (Radically Simple) that has all these amazing (EASY) recipes. Most of them are already gluten-free (or can be easily adapted).

And don't let Hilde fool you- she's a holy living terror, but still a puppy. But a cute one, so she gets away with it!

I'm making these Thurs for my DD. I can hardly wait. She lives 1 1/2 hours from me. I'm stopping at the store on my way to her house to get the tortillas. mmmm We love taquitos!!!!!!!

Tonight we had my homemade chili over brown rice, my homemade cornbread; I replace the wheat flour in the cornbread recipe with Pamela's gluten-free flour mix and everybody loves it. And plenty of strawberries, as the patch is really giving right now!

Our local Loblaws store has chickens for .99 a pound. I bought five yesterday, they are nice and plump.

So I am roasting a chicken tonight and some pasta salad and something else but not sure what yet.

I finally talked (nagged) my husband into a Costco membership and picked up a 3 pound bag of fresh spinach. I'm not sure what I'll have with it but I'm definitely having a huge bowl of fried spinach. And tomorrow. And the next day.

Tonight I'm having Shepherd's Pie! Naturally gluten-free.

Oh, I love Shepherd's Pie! It is the ultimate in comfort food like Steak and Ale Pie, Chicken and Dumplings, Cassoulet and so on.

I finally talked (nagged) my husband into a Costco membership and picked up a 3 pound bag of fresh spinach. I'm not sure what I'll have with it but I'm definitely having a huge bowl of fried spinach. And tomorrow. And the next day.

Saute it with some earthbalence (or your favorite gluten-free margerine) garlic,golden raisins,pecans and baby portibellas,sliced or halved (also at Cosco in a large 24oz pkg.for $4.49)!Of couse you can Also go over to the freezer section at Cosco and get there Wickedly deishous Kirkland signiture Raw/tailon SHRIMP...For$11.95(40 count) and throw those in as well!!! YUMMY YUMMMY!!! :P:lol::D If you don't over cook the shrimp...the Kirkland cosco shrimp are actually very MEATY with wonderful flavor!...I allso sugest "21saulute all purpose seasoning" from TraderJoes...incredable for stir frys...pasta...meat...everything!LOL! :P

What can I say...I love shopping at Cosco and Trader joes!LOL! :rolleyes::D

You can also warm some corn tortillas (also at Cosco for a 2 lb bag for $3)..and make tacos out of this...I put a little Hummus($5.95..SABRA..2 lbs.)on them...so good...makes my mouth water just thinking of it!and ALL glutenfree! HaHaHa! Who SAYS we can't eat well and still savemoney?! :lol: sometimes if I don't want shrimp/don't have any...I take my hilshire farm turkey Ham/or Turkey lunchmeat and panfry it...saute the spinich, garlic,mushrooms throw it in the tortillas with some humus and sometimes a little Avacodo(Also gotten at cosco/or T.J's)and make my Tacos that way...Udis beagle work to if you want to make it a sandwich. B)

That sounds so yummy! The only 3 fats I use to cook with are butter, olive oil and lard. (I only use lard for pie crusts but you can't beat the porky crunch and I still get a good flake even gluten free.) I think next time I go though I'll leave him home so I can spend more time browsing. We don't have any Trader Joes here, but that's fine by me. With Costco added I now have 8 different grocery stores (8 if you count the double of the same company) and 2 Wal-Marts within 10 minutes of home to shop at. I drive my husband insane with my browsing ads and coupon clipping and printing since I might end up shopping at a half dozen stores in one day.

Anyway, I've changed my mind tonight about fried spinach. I have a few flour tortillas in the fridge to use up so I'm going to use one as a crust for a quiche.

Tonight is "pizza night". Husband and son are getting takeout from Domino's and I am making myself a 3 cheese white pizza with fresh garlic, extra virgin olive oil, and ground pepper on a GFP crust.

IH, this post makes me happy. You are COOKING AGAIN! HOORAY! Osso Bucco and Risotto Milanese are amongst my favourite all-time dishes.

As I put my dessert into the oven I felt a twinge of guilt. But I am justifying it by making it for my dear husband who is working such sick hours. He spoils me and I spoil him. :)
