 Still envy your carrots....need to plant the rainbow seeds I purchased last year.

My upstate NY Uncle Jack is back in the hospital and cousins think this time is different as in may be time -- wonderful corn farmer and better man -- is 92, but never easy to watch those we love suffer.  Planting something is on my mind this evening.

Hi errbody! LTNS...Life is really busy these days! I hope you are all well.

Dinner tonight:

Mashed garlicky cauliflower

Sukuma Wiki (Kenyan Braised Collard Greens and Ground Beef) recipe here if you're interested: http://thedomesticman.com/2013/07/02/sukuma-wiki-kenyan-braised-collard-greens-and-ground-beef/#more-4993

I've been drinking ACV in a little water before each meal and I gotta say, it really helps digestion. Anybody try it?

Dinner tonight was at the ballpark for Padre home opener.  Son had a dog, I had encore chicken.  There may have been cheetos and brownies...throwback padre colored snacks are tradition for my kids.

We lost...but had a blast...hung until top of the eighth...decided to beat the crowd on the trolley as son is hoping train for his sis's in northern California later tonight.

Good day!

Hoping L and A are healing nicely : )

Glad you were able to get out to the game. :)

I'm doing fine, as fine as I expected. I'm sore, but slowing cutting back on my meds so I'm a little more lucid a little more often. I managed to make black bean chili for dinner tonight, with a little help. I am so enjoying fresh meals. It's amazing what you take for granted when you never think you'll have to do without it, even for a short time. Mostly I'm getting plenty of rest, sleeping as much as I feel like I want to so I can heal faster. And I'm getting out for short walks up and down the street to stay active without overdoing it. I'm hoping that by the end of the week I'll be sewing again. I won't risk sewing over a finger like a moron on these drugs.

So I finally figured out which bread I ate at the hospital that was the best thing Ive ever put in my mouth. It is the sandwich bread from Gluten Free Creations in Phoenix, AZ.  They sell to a regional food distributor and thats who the hospital got it from.  So, I ordered 8 loaves of it!  Haha!  I could never get my husband to happily eat gluten-free bread and I had him try it when I had it, he said he would eat that.  I haven't bought him regular bread in like 6 months anyways because it makes me nervous, haha.  I also got 2 chocolate whoppie pies, 2-2packs of pizza crusts, and a box of chocolate donuts.  :o  I am seriously excited to get it next week!  I haven't had a donut or a whoopie pie in years.

Tonight will be leftovers from last nights crock pot chicken teriyaki.  Turned out kind of stewy but tasted pretty good.  Going to throw in a steamer bag of broccoli to freshen it up today.

Country Ribs

Roasted Asparagus

Butternut Fries

Great to see Mw back

Going to check out that bread -- never hurts to have more good bread -- been very happy that I found a store that carries Canyon Bakehouse for 4.89 and then I buy eight at a time to get a 10% case discount.

Last night was:  Tagliatelle with pork ragout (the JOVIAL BRAND PASTA IS TRULY AMAZING--I suggest you all GET SOME!!)

Tonight was : Tuscan white bean soup .

Tomorrow will be whatever I can do quickly.

Saturday morning I am driving up to Orlando for the Gluten free Living Conference where I will see my man, Dr. Fasano speak, attend a few other seminars, meet a few celiac advocates & bloggers and have a drink (or three) with my pal, the gluten dude. He owes me several.....

Last night I made cornbread to have with my leftover chili. It was my first cornbread that my husband liked. Yay! Instead of trying all these new recipes for gluten-free cornbread I finally gave up, and decided there was no reason not to use my tried and true recipe. I went back to my Betty Crocker cookbook and used that recipe with my AP flour. I may add a little more milk next time, it's a bit crumbly, but the taste is perfect.

Tonight he wants chicken alfredo. It's something I think I can manage easily, and as long as I don't eat too much I think I'll be okay myself. I guess I'll find out.

Enjoy your conference! I'm sure it'll be a blast.

I keep almost trying Canyon Bakehouse bread, but then I remember I can buy really good, not frozen bread at Costco for $8 for two loaves and I just can't bring myself to pay more for a frozen loaf. Maybe one day I'll find it on sale and finally try it.

PS This  conference thinger  is a very big deal for ole Irish--- to be traveling by herself again to someplace new --because for a long time, I was too sick to drive anywhere.

My brain was too foggy, my reflexes were shot and my muscles and joints hurt so much that even turning the wheel was painful. That's the truth.

but that was then and this is now...(whoohoo!)..

So for anyone who wonders "Will I ever be "right" again?"--the answer is a resounding YES!! ;)

Decided that we should have a pizza bianca tonight as I got some chebe mixes yesterday from my pal, ama zon.

I love the UPS guy

I'm so glad you are doing well! :)  It must be an emancipating feeling, for sure.  I keep craving pizza and tacos, probably because of all the TV and commercials I have been watching while healing, lol.  But I won't dare try those for a while.  Have a chebe mix in the pantry for when I do!! :) I, too, have been eagerly anticipating the delivery guy.  I have been sleeping on the reclining sofa since it is easier on my tummy, and my doorbell rang at 9am.  I hopped up thinking my bread order was here but it was some lady who found a dog wandering the streets... of course it wasn't the Fedex guy, that wont be til next week!

Today will be a bunch of leftovers for dinner.

Have a blast Irish -- Go get it all!

I'm a bit of a grumpster today -- not bad -- just a touch of a cold and last night had another flipping idiopathic anaphylaxis deal -- abdomin still all bloaty today so I'm having smashed purple sweet potatoes -- really cool -- found another type at a farmer's market -- white skin with bright purple insides -- prob some sort of genetic mutation that will have me turning purple like Veruca in Charlie and the Chocolate Factory ; )

Men are on their own -- well kinda...I may share my potatoes if they are nice.

Happy Friday Dinner Peeps : )

Forgot...there will be wine too -- starting right about now -- Cheers!

You just keep healing and taking it easy. Time is your greatest ally, dear Laura.

My mantra is  now and always has been..."every day is a healing day" Hang in there, sweets.

you have an awesome time, IH!!!!  congrats on the solo flight!!!!  :D

last night was a big ole' pot o' chili - (and it was lunch today, too lolz)

hubs is rototilling the garden, so I had some rogue parsley and one sage plant that didn't have enough sense to freeze to death.  so, tonight's dinner will be parsley..........  and...............  yah, that's all I got hahaha  ^_^  our youngest is in for the weekend, so i'll probably make something she can't afford LOLZ  so, pretty much *anything* :P one month until she graduates - then we can all collapse and fall apart.............

rest up, surgery recovererererers  :) and take it easy, ski-lisa!  lolz, the last time I ate purple potatoes I forgot and freaked out the next day - NOW what??  that is a really weird color, IYKWIM   ;)  getting ready to open the pool, too.  I think we finally got the knack of keeping the water right.  the sand filter is da bomb, but the next time we struggle with it, we're switching to salt water :)

it's a pretty weekend day here in east Tennessee - i'm finally feeling better with this stupid sciatica.  just does whatever it wants with no rhyme or reason.  dah!  I gave in - invested in a new heating pad and ate some ibuprofen, so i'm basically taunting my skin <_<

The Dude just posted a photo of Irish with her arm around Dr. F -- we may never hear from her again

Yeah... she's not ever coming back. I'm not sure her husband knew what he was getting into letting her go alone.

I'm still waiting for days I can be awake a whole day without naps. Too tired today for cooking so I think I'll make burgers and a veggie, something super quick and super easy. At least all this napping and being too tired for anything but laying down has really gotten my reading list moved along! ^_^

Today for dinner I threw in a pre prepped and frozen recipe of Apple BBQ pork tenderloin in the crock pot that I had thawed out.  I modified this recipe: http://homegrownandhealthy.com/crock-pot-apple-bbq-pork-tenderloin/ to use just smooth applesauce, more seasoning, and added some water because my BBQ sauce was thick.  Turned out really really good.  When I went to cut up the pork tenderloin it shredded, so it basically made shredded pork but a lean cut of meat.  Before I only knew to make shredded pork for BBQ with a 4-5 lb butt roast which is fairly fatty.  So this is definitely going into my recipe rotation.  Was good over noodles.

Today I finally left the house for the first time this week, woot!  We went to Target, and I have been wanting to make smoothies safely gluten-free at home, so I got a little single serve Hamilton Beach blender for $17 and it works great.  Just use half fresh, half frozen fruit, and fill up halfway with liquid after the fruit is in there.  My husband told me I can make those any time, so I may have to try sneaking some veggies in there, haha!  After we picked up a few things there, I sent my hubby to our regular grocery store with a very detailed list, and he still managed to buy the most expensive kind of everything.  But I like the pre washed pre cut veggies and fruit to spoil myself sometimes so I don't mind just once.  He bought a 6 dollar thing of pre cut strawberries when on the list I wrote "1 lb strawberries- 98 cent ones!"  LOL... He also bought some $14 hard cheese he sampled and remembered I liked.  This is why I usually grocery shop alone, haha!

Oh to be a fly on the wall of that elevator ;)

Dinner tonight is Paleo Pizza with fresh basil, garlic, asparagus, green onion and mozzarella...not really sure what the men are having!

Teasing -- Hubs making dinner for him and one son -- other has rotten cold so I made him a nice big bowl of turkey broth, broccoli, dakota squash and pork chop soup.

Pizza last night was the best yet -- even the men liked!  Used cauliflower, cream cheese and an egg for the crust - yum.

I'm in the kitchen early as I needed a break from fighting with Mom's insurance companies -- not really fighting -- it's just the process.  Anyhoo, thought I'd roll out some enchiladas and bake something yummy while watching the delayed cup race.  This day is improving :)
