Simple Recipes Using Corn Flour

Hello:

I am asking some questions on behalf of my mother as she is computer illiterate. She carefully watches what she consumes gluten-wise and recently purchased a package of corn flour. I may be incorrect but am I to assume that corn flour is finely ground corn meal? Anyway, the package states it is corn flour. She asked me to look for some simple recipes such as bread that contain corn flour. Otherwise, it is going to sit unused in the cupboard for a long long time. Thanks to everyone who stopped to read this post.

I don't know for sure since I am new to this, but I was just at our local health food store and looked at a package of Bob's Red Mill corn flour. It said it was from ground corn. However, the package did not say gluten free, nor did the store put in on the gluten free shelf, so I put it down and moved on.

I picked up their cornbread mix instead. My daughter is lamenting the loss of corn dogs. I have never made one before, nor can I eat corn but darn it, I am going to try to make her a corn dog.

We use corn flour as a breading to fry all of our foods: Fish, mushrooms, chicken, egg plant, onion rings, etc. (this can be used just like regular flour to bread anything before frying in oil)

As for making corn dogs, mix the corn bread according to package directions. Pour into a pie plate/pan of required size. THen take a pack of hot dogs and slice thinly into corn bread batter. You can also add cubed velveeta cheese into the batter as well. Bake the mixture according to package directions (may require a longer bake time dur to liquids being released by hot dogs. AND VIOLA' you've got modified corn dogs in a pan. I usually make this and then serve each slice over a portion of homemade chili in a plate. THis is as good as it gets!
