Pumpkin Quinoa Salad

This is an easy meal that is even a favourite for my gluten loving partner.

1/4 pumpkin cut into 2cm cubes and baked in the oven until cooked through.

2 cups of quinoa (cooked to packet instructions, I like to add some gluten free vegie stock powder to the water)

1 small red onion finely chopped

1 red capsicum cut into small pieces

1/3 cup currants

1/3 cup toasted slivered almonds

A couple of handfuls of baby spinach

200g fetta crumbled

Mix everything together, it's delicious!

All amounts can be varied depending on your preference.

Whoa! This sounds awesome. And what I love about it is the fact that you are posting a pumpkin recipe outside the months of October and November. You know, we should petition the Halloween and Thanksgiving Commission to release their possession of pumpkin marketing to ALL 12 months.

In all seriousness, I am going to make this for a gluten-free potluck this Sunday.

This sounds good! Where do you get pumpkin outside of the holiday seasons tho :unsure: I may just be overlooking them but I never see them in our stores

This looks so yummy! I never dreamed of a combination like this...especially adding pumpkin. I'll be making sure to stop by the grocery store today so I can serve this with dinner. Thanks so much!

I'm in Australia and we have pumpkin in the green grocers all year. I know it is out of season even for us, but I didn't really think of that :)

      I agree christina, there is definitely many contributing factors! I have the pain today, my pelvis, hips and thighs ache! No idea why. But i have been sitting at work for 3 days so im thinking its my back. This disease is very mysterious (and frustrating) but not always to blame for every pain.

      My daughter has celiac disease and has had for a long time. She fell loses strictly gluten-free diet and recently got rid of all cutting boards in any gluten in her house at all. She just had a stool test and it came back showing of gigantic response to gluten in her diet. What could be going on since she doesn't eat any gluten and is very careful about any kind of hidden glue? Help!
