Red Beans And Rice - Unconventional

I made my own version of red beans and rice as I don't like a lot of meats (especially pork) and it turned out pretty good! I checked all labels and search internet and made sure my brands were gluten free.

I made white rice in the rice steamer substituted half cup of water with low sodium - gluten free chicken broth to give the rice some "flavor".

In a frying pan, I sauteed celery, garlic and onion in preheated splash (covered bottom of pan) of chicken broth.

Added Bush's Red Beans - sprinkled some pinto bean seasoning on them.

Added Rice - heated all together and added salt and pepper. It was quick, easy and tasted pretty good. :) Having the leftovers for lunch today. :P
