My Gluten-Free Waffle Recipe

For a long time I've made waffles from a Fine Cooking recipe (link here). It's a light and crispy recipe that works well with blueberries or chocolate chips added if you like that. I never have buttermilk on hand, I just use 3/4 cup of milk, minus 1 tbsp, mixed with 1 tbsp of vinegar which you let sit for 5 minutes.

I've been making this with the King Arthur gluten-free flour and it comes out really well and almost identical to the original,after reducing the amount of corn starch used and adding some guar gum. Changes:

  • substitute gluten-free flour for wheat flour (duh)
  • add 3/4 tsp guar gum
  • reduce cornstarch to 1/6 cup
