Reaction Time To Gluten Exposure - How Long?

I have been a a gluten-free diet for 1 1/2 years after getting a biopsy confirming celiac in 2009. I came back from a trip to Ireland 1 1/2 weeks ago and seem to only have problems now. Although I don't have the diarrhea, I'm experiencing fatigue, stomachaches and migraines. This has been going on for a couple of days already. Is there anyone who has experienced a delayed reaction to possible cross contamination? I am so very careful with my diet and was happy to find many restaurants with celiac-friendly menus in Ireland. I'm starting to wonder if I didn't get cross-contamination and only getting sick after 2 weeks. Is that possible?

TBH I've done a lot of reading on the subject (celiac disease) and have come across that it varies from person to person as to how quickly they react and what those reactions are. I hope you feel better soon x

You seemed to be pretty careful in Ireland, so I would suspect that you're coming down with an illness rather than reacting to gluten. But it could very well be cross-contamination. :unsure:
