Distilled vinegar is gluten-free. Malt vinegar is not safe. Check this list of safe foods.

Distilled vinegar is okay.

However, if you are a super sensitive, and the distilled vinegar is used in an item that doesn't call out everything accurately, like "spices" or "natural flavorings" the vinegar can get blamed. Also, some vinegars seems to have trace amounts of sulfites, which some can react to as an allergic reaction.

If you are mistrustful of vinegar (and I am sympathetic to this, as I've had random 'what was that' in the vinegar experiences) for your home use, you can use 100% pure apple cider vinegar. You can also try pure rice vinegar or pure wine vinegar, but watch out for the flavorings.

Most vinegars here in the US tend to be made of corn if they are saying just "distilled vinegar" on the labels and used in things like ketchup.
