High Altitude Baking

Rate this topic

Recommended Posts

My son, J just started school in Colorado. They have a nice kitchen in the dorm equiped with baking sheets, pans, etc. He doesn't need to be gluten-free. He met some girls who have been baking this first week of school. He wanted to make the PB cookies we make at home. They made them & he said they bubbled then fell flat.

The only 2 things they did differently was use Pam spray on the cookie sheets and the altitude.

 Brain failed.

There is no flour in your recipe, but adding extra flour can help with high altitude.

Purchase some Betty Crocker gluten free cake, brownie,or cookie mix at the supermarket.....no adjustments are needed for high altitude. I purchase mine at King Sooper and Safeway.

Namaste Spice Cake mix also comes out perfect....I'm at 7500 ft. and have not had a problem with baking.Vitamin Cottage sells many gluten free mixes, including Namaste. I've never baked cookies without flour as an ingredient....sounds like your recipe may not work at high altitude......adding flour and chilling will help.

Maybe those flourless peanut butter cookies should be chilled before baking ???

Have your son check out the Boulder Farmer's market every Saturday. There has to be at least 6 gluten free bakeries that have absolutely mastered the art of high altitude baking.

I'm not discouraging him from baking on his own, but the market is also LOADED with single females.

See? Two birds with one stone!

Here's the update -

He's at CSU and they have lots of gluten-free stuff in Ft Collins. J isn't gluten-free but he loves those cookies. This cute girl was baking so he suggested his recipe. Fortunately, the fact that the cookies flopped didn't hurt. He had a date with her last night!

I was thinking before I even read the update that the failed cookies might be just as good as if they had turned out. He can smile sweetly and ask her to teach him how to bake. Some girls will think he's cute just for trying. ;)
