Baked Eggplant

Hello all,

I just joined this blog and wanted to kick off a forum topic on vegan, gluten-free middle-eastern-inspired recipes.

A friend passed on a recipe for "eggplant french fries" and while it looks / sounds delish, I'm not much into deep-frying in my tiny kitchen. Last night I picked up a wonderful entree of baked eggplant, stuffed with chickpeas and couscous.

So, I understand that couscous, as a type of pasta, is not gluten-free. But is whole-wheat couscous going to be lower on the glycemic index than white-flour couscous? Can anyone suggest a gluten-free substitute for couscous?

I am pretty good at replicating dishes that I enjoy from restaurants. But I am new to the gluten-free world. While I don't have Celiac, I do appreciate the health issues and think the principles are apropos for anyone seeking a more healthy diet.

Any suggestions are much appreciated. Thanks!
