Really Yum Cookies

I just made these cookes today and hubs said they are the best I have made. I looked through the recipes here on celiac.com and found these, but they used Pamela's baking mix, which I don't have down here (I hate recipes that use a specific baking mix although I know it makes it easier for those to whom it is available :P ). Anyway, here is what I did:

I checked out the ingredients of Pamela's Baking Mix

Ingredients

Brown Rice Flour, White Rice Flour, Cultured Buttermilk, Natural Almond Meal (may appear as brown flecks), Tapioca Starch, Sweet Rice Flour, Potato Starch, Grainless & Aluminum Free Baking Powder (Sodium Bicarbonate, Sodium Acid Pyrophosphate, Potato Starch), Baking Soda, Sea Salt, Xanthan Gum.

What I used: Well, I know it doesn't look much like Pamela's but I wanted to see what Pamela's contained besides flour. (I got my gluten free mix from here: http://www.recipesfromhome-online.com/gluten-free-flour-mix.html

1 C tapioca starch

1 C cornstarch

2/3 C sorghum

1/3 C coconut fllour

1 Tbs almond flour

and just guessing I added:

1 tso baking soda

1/2 tsp xanthan gum

1/2 tsp baking powder
