Homemade Bread

So I was reading another thread and noticed that a lot of you bake your own bread ... what recipe are you using? I was looking for a tried and true one. I've tried a few mixes and not been happy with the results - very dense and/or a weird texture. My son likes Udi's for sandwiches, but it can run almost $6 a loaf.

I have been using this recipe, but I only use 1 cup of water instead of 1 1/2 cups, and this recipe calls for a stand mixer which I don't have, so that might make the difference? Mine has collapsed a bit in the center also, so for me it's a work in progress. At least my less than stellar results have all been edible, so it's worth checking out:

I used the recipe that's on the package of King Arther gluten-free flour. I found it in the regular flour aisle of my grocery store. Be sure you get gluten-free if you want to try it.
