Those Of You That Are Grain Free What Does Your Day Look Like?

I am just wondering if some of you that are grain free can post some of the things that you eat for meals.

Hmmm...

spaghetti using spaghetti squash instead of pasta

sandwich wraps using big lettuce leaves instead of bread or tortillas

open-faced peanut butter sandwich (and egg salad, and tuna salad) using "pancakes" made with coconut and almond flour and a little cheese

yoghurt (homemade SCD friendly) and fresh fruit

fresh fruit smoothies with added kale, avocado, whatever other stuff is starting to fade in the kitchen

meatloaf (2 eggs per pound of meat, a couple of tablespoons per pound of almond flour instead of breadcrumbs)

hamburger steaks smothered in caramelized onions and mushrooms

baked chicken, baked fish with fresh herbs or lemon and onion

MMMM...my daughter has been experimenting with sweets, she made some great lemon bars using an almond flour crust, and also some AWESOME "snickerdoodle" cookies using only almond flour...

Lots of fresh vegetables, both raw and cooked

things made with cooked beans (home made hummus, bean salads, mashed Mexican refrieds, soups)

that's just a sampling

It wasn't easy at first. It has taken some time to internalize a new way of thinking and figuring out "what's for dinner"!

I do have Udi's bread on occasion but most days look something like this. Oh I am not dairy free :)

eggs with sausage or bacon and an orange

slice of turkey with a slice of swiss( or some other yummy cheese) roll up dipped in mustard and a veggie tray

tonight was zucchini,yellow squash,ground turkey with marinara sauce and mozzarella cheese

cottage cheese and veggies

greek yogurt and blueberries

I do eat rice on occasion and on vacation I sort of turn into all bets are off girl, but at home it's like this:

(for example)

Breakfast: chicken breast with potato (sweet or white)

Maybe add a green drink or fruit smoothie

Lunch suggestions: pan fried fish

shredded chicken breast, tomato, with balsamic and basil

hamburger with avocado/potato/and/or salad maybe green drink (depending on breakfast)

Snack: Apple with homemade cashew butter (cashews, oil and salt in food processor) or just peanut butter

pecans or almonds with fruit

lunch meat/fruit and nuts

Dinner: Piece of meat

salad

potato (...or rice if I'm not in a grain free place)

I just got back from vacation so I feel like I need to get my home routine back...but hopefully some of these suggestions will work into your day. My problem is that I don't eat dairy nor do I eat eggs so it's a pretty limited situation.

I keep it simple, except on weekends when I have more time to play with my food.

For breakfast: beef or chicken or bacon, steamed broccoli or zucchini or spinach, dollop of Spectrum canola mayo or spoonful of olive oil

For lunch: tuna, huge bowl of romaine lettuce, variable toppings (tomato, carrots, relish, cukes, avocado, etc.), hemp seeds, olive oil, apple cider vinegar

For dinner: fish, beef, or chicken, steamed veggies, spoonful of olive oil

I rarely snack anymore. I just find I'm not hungry for one. If I'm really in need of one, though, I have a So Delicious coconut yoghurt or a bit of meat. If I want dessert, I'll pop open a can of coconut milk, spoon off some coconut cream, and plop it on berries then top it with cinnamon.

I'm gluten-free, dairy-free, low-grain

Breakfast - Coffee with coconut milk, eggs and fruit. Maybe almond flour muffins if I'm not too lazy. Today I was running late and had a Larabar.

Lunch - usually frozen homemade meat/veg soup or bean soup. I usually throw some cut veggies and a small baggie of nuts into my lunchbox for a snack. Sometimes dinner leftovers.

Dinner - Some sort of meat or fish, currently have a baked chicken in the fridge and some grass-fed beef burgers in the freezer. Fresh, cooked in-season veggies with ghee or a drizzle of olive oil or a big, crunchy salad. Fruit for dessert. If I'm wanting something carb-y I make a sweet potato or a little rice.

I have veggie and egg stir fries, yogurt and fruit, nuts, coffee and juice. I'll hopefully be able to add homegrown buckwheat soon. It helps to change the way that we think about food instead of trying to replicate things that we can't. Did you ever go to ethnic or health food restaurants? Can you have sweet potatoes or potatoes for starch?

It helps to change the way that we think about food instead of trying to replicate things that we can't. Did you ever go to ethnic or health food restaurants? Can you have sweet potatoes or potatoes for starch?

I tend to shy away from restaurants due to the gluten and my severe corn and nut allergies.

I eat a lot of sweet potatoes. I eat potatoes every day for my starch and carbs.

Oh, me too. I meant before diagnosis. I think back to meals like those for ideas.
