Soup! Yummy, easy...warm and delicious:   Swanson's chicken broth (2 cans, or 1 can broth, one can water), leftover diced up chicken breast, 1/2 bag frozen peas and carrots, 1/2 bay leaf, salt and pepper to taste, leftover rice. Heat it all up in a large pot.   Simple, yet good!

It's Been Awhile Since I Last Posted

My daughter was diagnosed with Type 1 Juvenile diabetes, also an autoimmune disorder, and that has just consumed our lives....ack! Like manageing one diet wasn't hard enough. We're still waiting the results to see if she has celiac as well...keep a good thought for our family! At least it has cooled off, no more 100+ days! THANK GOODNESS!

Death By Guinea Pig, And Other Ways To Go.

This is going to be the title to the book I'm going to publish for Celiacs about unsuspecting things that can get them sick...So my husband brings home a guinea pig and all of its "stuff" first five ingredients on the food are all wheat things...4 days after he's in the house, it's as if I've eaten a bowl of cheerios for breakfast...man o' man was I sick. Guinea Pig...

How To Heat Corn Tortillas

I have to post this! I've always wanted to know how the Mexicans heat their corn tortillas at homes so that they don't rip and break and so that they tast yummy...well, I have a new Mexican friend and she invited me over for lunch...and I learned how to heat tortillas.You put them directly on a burner that's heated at about 3, medium low, until they start to warm up, flip them over and continue heating them...They get a little brown and warm straight through...they were delicious!I feel like I'

Dinner 8/24/05

Tonight it's steak! Yummy! Marinated in Lawry's Chipolte marinade. Called up Lawry's and they're sending me a list of their gluten-free products. I'm also on their mailing list so now they'll send me updates and changes regarding their gluten-free foods.So: Steak, corn on the cob, frozen mixed veggies, and applesauce for dessert.Gooooood dinner!!!

Rice and Shrimp with veggies as a side:2c. rice, 1 chopped onion, 1 chopped bell pepper and 1Tbl. minced garlic browned in 2Tbl. olive oil over medium heat.Then you add 1 can chopped tomatos with their juice and 1.5c. water. Bring it to a boil, add 2tsp. oregano, 1tsp. chili powder, frozen shrimp, and salt and pepper. Movie Review: The Island

I loved it! I like suspense/sci-fi. Very interesting plot twists: creating clones to harvest organs for the rich clients of an insurance company. It reminded me a little of The Matrix, or Total Recall. Anyways, if you like the thriller suspense movies then it's great. It wasn't as violent as The War of the Worlds. 1st Gfg Meeting.

I went to my 1st Gluten-free-group meeting yesterday and I met the nicest bunch of folks! We had the bakers from one of the local gluten-free baked-goods lines come in and show their wears. YUMMY! Those little pecan cakes were really good. And someone came up with the cutest name~Winkies~ Guess what those were? Yuuuumm! I got some doughnuts and shoved them in the freezer for later! Called Fry's...beans

They had me speak to a nutritionist...she said that all of their canned veggies are gluten-free, except that the canned beans were made on the same line as their baked beans which are not gluten-free, so the canned beans could have gluten in them. Just a heads up, I wonder if this is true for the other brands of canned beans?

Found A House

We went to an open house today and we really like it. Well, it's a town home. But for first-time buyers it's what we could afford. The owner is in a contract right now and thinks that it is going to fall through. If that's the case, then she's looking for additional buyers. It'd be awesome if it all works out. I Love Blue Bunny

I have to say that they have the best ice cream in these parts... I got 6 half gallons of different flavors (they were on sale and I had coupons = $1 each, yipee!) Not Much Of A Market W/ Used Gf Cookbooks

Today I went to one of our huge resale book shops. You bring in your books and magazines and can trade them for credit. All of their inventory is used...there are about 5 of them around the Phoenix valley area. So, I went looking for gluten-free cookbooks. Leftovers For Dinner 8/8/05

Tonight it's leftovers roast chicken...I tried a Kroger brand chicken seasoning instead of my usual McKormick...it stinks. Sweet potatos I really love these...we eat them a LOT when in season, they're full of good vitamins!Green salad - nothing fancy, just tomato, romaine lettuce, carrots, and vinagar/olive oil dressingSkim milk to drink & plums for dessert! What's For Dinner 8/5/05?

Today we had: rice and corn patties: 1.5 cups of cooked brown rice mixed with 1 c. corn, mashed together with 3 eggs (pre-beaten to a froth), 6 green onions, diced, and 1 tsp. garlic powder. (I fried them like potato pancakes in 2 tbl. spoons of olive oil.) Served with a side of: black beans: 1 can black beans, drained, mixed w/ 1c. salsa, heated until they began to simmer. Also a green salad Chips and salsa. Dessert: Blue Bunny - peanut brittle ice cream.~Cheers

Today we had crockpot beef ribs with homemade BBQ sauce (Ketchup, mustard, vinager, brown sugar, salt.) Mashed potatoes (with skins on and milk added for creaminess) with Gravey made from the BBQ sauce and meat juice in the crockpot, thickened with corn starch.Steamed Carrotssweet potato 1/2 each (they're yummy and in season)Yogurt and bananas for dessert.~Cheers

Bargain Hunting!

Yesterday was a great day! I was exiting the grocery store and they had a grocery cart out with discounted items. In it were about 8 boxes of 1lb boxes of sweet rice flour! Wow, how lucky am I? That's .50 cheaper than at the Asian market. The funny thing is that 2 weeks ago I wouldn't have known what to do with sweet rice flour.Now that I know what to look for, I hope that I can find more bargains like that. Erin

Freezer Woes

Going through our huge freezer this weekend...cleaning out all the stuff that I can't eat...We donated 6 Sara Lee pies and 7 frozen pizzas, bags of rolls and biscuits, 2 loafs of bannana bread to our starving college student friends.The corned beefs that I bought at Safeway are gluten free! So tomorrow night is corned beef night. 1st Store Trip, 6 Bucks For Bread?!?

Yesterday was my first trip to the store since being diagnosed. I need some quick foods for certain days of the week. While I love cooking, it's just not always practical to make every meal of every day...besides, I really wanted a bowl of cereal for breakfast instead of egg tacos. Trader Joe's has an okay selection of gluten-free Indian entrees, expensive, and I've never tried them, but hey...it replaces my Health Choice microwave meals. Starting From The Beginning

I'm the lucky one in this crowd, no doubt about it. I had a baby and after three month of diarrhea the Dr. quickly diagnosed me as being allergic to gluten...that was 5 days ago. 3 months of suffering sounds like nothing compared to the other stories out there....I have some liver damage, but that will heal with time!
