  2. I have a friend that worked in an allergists doctors hospital for a short time and also had allergy treatments. She told me those bumps show that a person is having an allergic reacation to something. It could be a normal allergy like breathing in pollen or it could be from gluten type reactions. I had the bumps also but since going gluten-free I don't have them anymore.
  3. I keep the flour in the freezer and it seems I have bought multiple bags that do the samething. I guess I'll try a different brand.
  4. Does anyone else have a problem with products that contain Tapioca Flour. It seems whenever my husband and I eat products with Tapioca Flour we both get really bad gas afterwards.
  5. I have been using Arrowhead Mills Rice Flour for 1 1/2 years. Recently when I have baked with it, making muffins or biscuits it tastes bitter. I don't know if the flour in rancid or what but it tastes nasty. The worse time was when I made biscuits with Arrowhead Mills Rice Flour as well as with Bob's Red Mill gluten-free Baking Mix and when we added some turkey gravy to it, it became a chemistry experiement, amonia has created. My husband and I took one bite and could smell it and it tasted nasty Has anyone else had this problem with flours? I have been trying to figure out if it is something else but the only consistant thing is the flour and maybe baking Powder. Any help would be greatly appreciated. Thanks

  7. Tortillas

    I just bought so Food For Life Rice Tortillas. And I don't mind them. I think they solved their problem about sticking together. Both packages I bought had wax paper between each tortilla. Therefor the came apart easily. I heated them over my gas stove and filled them. They are a little chewyer than white flour tortillas, but not bad. Again it is personal taste, but I did want to let everyone know that they have solved the problem of the tortillas sticking together.
  8. I posted something a while ago about my Hashimoto's so I will only give a brief summary of what happened to me. I was diagnosed with Hashi's in March of 2004 and then diagnosed with Gluten Intolerance in April 2004 after I figured the Hashimoto's was due to Gluten Intolerance. So in May I went on a gluten-free diet and started taking a natural supplament called Thyrophin PMG. It helped greatly. I took it for one year, until about 1 month ago. I stopped taking it because I was very irritable. Once I stopped I stopped being irritable. Well I had my labs done a week ago and everything came back in the normal range (Yeah!!). This is my thought about what went on with my body. The gluten caused an autoimmune reaction with my thyroid. So I got off of gluten and supported my thyroid with a natural supplament. Once my body healed from the Gluten Intolerance my immune system stopped attacking my thyroid. And since I took a supplament that supported my thyroid opposed to taking over my thyroid function my thyroid is now able to do it's job as need be once again. I choose not to go on Synthroid because it takes over for the thyriod and after years of being on it, you can not get off of it. However, I will continue to monitor my thyroid function knowing that at some point I may need to take the supplament again. I also found out I am pregnant and I know that pregnancy can cause a person's auto immune responses to go into remission. So the thyroid could be working fine because of a type of remission. But I don't know for sure. This is just to say that I feel a gluten-free diet may go a long way in correcting Hashimoto's as long as you supplament the thyroid instead of overriding it. This is my theory and what I have had happen in my own life.
  9. Health Insurance

    I was diagnosed through entrolab and it didn't say celiac disease but gluten intolerance. I applied for a high deductable health insurance with an HSA acount and the question the underwriter asked was "Were you diagnosed with Celiac Sprue or only Gluten intolerance". I had to with draw my application because of some other circumstances, but by the was the question was asked I don't think they would have denied me for gluten intolerance, but they might have if I put down celiac disease. I won't find out for sure though.
  10. My little sister, 19 years old, was diagnosed earlier this year with gluten intolerance through entrolab. She also has the classic symtoms of Hypothyroidism. She also continues to have digestive problems. I think she may be allergic to multiple things, and/or she hasn't eliminated all gluten from her diet. So, does anyone know of a good doctor in the area that you would recommend for her? She lives in Park City, Works in Heber and goes to Salt Lake City sometimes. So any of those places or close there would be good. Thanks
  11. I have hypothyroidsim, but decided to be tested for gluten intolerance through Entrolab. I am gluten intolerant and so went gluten-free knowing that gluten can trigger other autoimmune reactions like hypothyrodism. I now stick to being gluten-free and take a supplament to help support my thyroid. The gluten might be causeing the thyroid problem, but the gluten-free diet may not totally correct the thyroid issues. Hope this helps at lease a little.
  12. Easy Pizza

    I also tried making this into a loaf and bread and when it didn't rise, I pressed it onto a pizza stone, and prebaked it at 450 degrees for 15 minutes. Then took it out and topped it. It worked well. 1 cup water 1 1/2 Tbs butter or Spectrum (gluten-free/non-dairy) 1 Tbs sugar 1 tsp salt 1 tsp yeast 2 cups gluten-free flour mix, sifted tsp xanthan gum 1 tsp unflav. gelatin
  13. I just bought my first turkey today and bought a Jenny-O. the problem I had was that when I first looked at the ingredients I saw that it said wheat flour. So I was mad because that was the only one that was free with a $50 purchase and I couldn't buy it. Then after a few minutes I realized I was reading the ingredients to the gravy packet not the turkey. So make sure you don't get the two confused like me. I felt stupid after I figured out what I had done.
  14. Have you been tested for hypothyroidism? Brain fog and polycystis are both symptoms of Hypothyroidism also. You might get checkout for it also.
  15. Children's Medical Center In Dallas

    Children's Medical Center in Dallas is suppose to be good. My sister works at Cook Children's in Fort Worth which I know is really good. There is a good celiac disease support group in the area. I have never been, but they meet at one of the hospitals in Dallas every month. Dallas is also where Dr. Kenneth Fine lives who has Celiac himself and runs enterolabs. If that helps at all.
