Mr. Pep'r's Achievements

  1. I do believe there is a path, the eyes and sinuses are connected. Do eyes drain into sinuses? From the canaliculi, tears drain into the lacrimal sac and then the nasolacrimal duct, emptying into the nasal cavity. This explains why the nose runs when one cries or eyes water excessively. .... The interconnected nature of the nasolacrimal...
  2. I would be interested in a study that looks into the time after ingesting gluten to the point of nausea and vomiting. Because until recently I too thought that when I was nauseous and vomiting after eating a meal, the last meal would be the blame for gluten exposure. But after 3 separate experiences my understanding quickly changed. The first...
  3. I work in the airline industry, and I can attest that someone with Celiac Disease (like myself) cannot trust the airlines to take care of our health needs. Unfortunately the Flight Attendants are not equipped, nor aware of the risks concerning cross contamination while handling diner rolls or fresh baked cookies within the confines of a tight aircraft...
  4. For me it was the opposite, I have Celiac and the DNA test from 23andMe said I did not have markers for it.
  5. I'd much rather a restaurant say "gluten friendly" rather than provide a false sense of security that their meals are 100% gluten free and not cross contaminated. The problem is simple, unless the restaurants are dedicated gluten free the risks are just too high for cross contamination for EVERYONE with Celiac Disease and other gluten health issues,...
  6. Every single procedure and surgery since 2007 (I've actually lost count) has required me to bring my own gluten-free food or cookies for recovery. Once I had to spend the night and they offered me a gluten-free breakfast, but I did not trust it and only ate what was sealed from the original company, like yogurt.
  7. I can relate to a lot of what you said. I cannot leave the house without planning out my meals. No longer do I eat out, way too many times I've gotten sick at the hands of others. Best of luck with the "Food Truck" business, I wish there were more like you out there! Funny thing, I really enjoy smoking meat and I often think about one day opening...
  8. There's also the career impact on top of the social. I have been an airline pilot since 25, diagnosed with Celiac Disease at 37, and now I am not bidding for the Captain position (once I bid for Captain my seniority goes to the bottom of the list based on position) due to being afraid of not having control of my monthly schedule. Every month I have...
  9. Max, thank you for the article, I will be bring this to my next Dr.'s appointment. I have been banging my head against the wall since 2007, my gut is like the tide, it ebbs and flows, two weeks great, two weeks bad, AND NOTHING HAS CHANGED IN MY DIET and our home is 100% gluten-free. Four years ago I've stopped eating out unless it is a dedicated...
  10. It is not that easy to carry food internationally, I'm an airline pilot for one of our "big 3" airlines and it is a major pain to fly international. Every single month when I bid I have to avoid international, or request trips that get me back through my base so I can go back to my car where coolers are packed with food so I can work the remainder of trip...
  11. "I mind" everything as well! The last two paragraphs sums up our disease to a tee. Last weekend, my wife and I went to a wedding and while everyone was enjoying their meals, I was in the parking garage eating cold chicken and vegetables in my passenger seat, I was not about to bring a cooler into their reception. Thanks for sharing your story...
  12. Excellent article! I wish the Celiac community and restaurant industry would take cross contamination seriously. A restaurant can put a gluten-free symbol next to whatever they want, but if the kitchen and staff are not aware of the negative impacts the prepping surfaces, cooking areas, ovens, hands, utensils ALL have on cross contamination then at...
