I was gluten free for two weeks and I noticed a difference in my moods (I'm depressed a lot) but not for long, it would be like a high I suppose, I'd feel really great but then I'd level out to just being in between. I realize that there might be an underlying problem but I cannot see a doctor anytime soon so I need to do what I can in the mean time. Has anyone here with diagnosed, depression, bipolar disorder or anxiety attacks seen an improvement when switching to gluten free? How long did it take to see a difference & how long did it last? Any information would be greatly appreciated!

I'm planning on going completely gluten-free & this is what I have for food, (that'll be mixed up & cooked differently of course) Oatmeal Pasta Chicken (beef, pork & ground chuck when I can get it) Hummus Vegetables (lettuce, spinach, carrots, onions, corn, potatoes) Rice Bread (Gluten Free Pantry) Yogurt (plain, made into smoothies most days) Granola (homemade) Pancakes/Waffles/French Toast Fruit (bananas, apples, strawberries & others when they're on sale) Some dairy products Does this sound good enough? Anything I should add/try out? Thanks!

  7. I'm gluten intolerant but I'm not completely gluten-free as I'm still trying to get a grip on things & change my diet. I've been experiencing for about three months now of feeling like I can't get enough air. I breathe in as deep as I can through my nose & my mouth and yet I still feel like I'm not getting enough air. I want to start jogging and I tried to a couple of weeks ago, and I started out slow but even then, I had to stop because I was near the point of gasping for air and it was really freaking me out. So I'm wondering, can gluten cause this? I know that excessive weight can cause some problems (which is why I'm trying to get into running) but like this?? I don't have a doctor or insurance to see one so I'm looking online for help til I can. Any ideas? Thank you!

  9. I use cornstarch to thicken my gravy & sauces (for like orange chicken) but when it cools it's a solid lump that won't go back to liquid. Is there some kind of alternative? Or am I doing something wrong? I'd like to have 'normal' gravy again. LOL Thanks!
  10. I'm not sure where you are located but if you have an Aldi's grocery store near by you can go & have a look at their products. They have gotten in A LOT of gluten free items that are staples that taste great but are much cheaper than brand names. Walmart sells cheap gluten-free pasta that I eat all the time. The brand is called Heartland. It tastes fantastic! The only downside is if you have leftovers you need to boil it again in water because it drys out in the fridge for some reason (unless it's covered in like, pasta sauce) Otherwise, it's fast & cheap I use pasta sauce from Aldi's & it's much cheaper than Prego but still just as good. Fruit, vegetables, meat, rice, nuts/seeds, dairy products, etc. are all naturally gluten free. There are hundreds of foods out there to pick from. Good luck!

  12. I need more protein in my diet as I'm depressed & tired all the time. (this goes mostly away if I've had a lot of meat) Besides general health I want to start working out as well so I'm going to need more protein for that. Are there some good powdered protein drinks (or whatever you call them) that are gluten-free, you can mix into other drinks or just eat by itself & not ridiculously expensive? I'm a bit lost of what exactly I need to look for so any help is appreciated! Thanks!

  14. I'm looking for a easily modified Granola Cereal recipe. I have oats, dried fruit (mixed bag of like pears, apples, peaches, etc.), chocolate chips, honey & flaxseed. I can get another thing or two if I need to but I'd like to keep it short, tasty & simple. :] Thanks!
