About Me

In March of 2008 I began to get hives after nearly every meal. Called my GP, he said I had a food allergy and to cut out the top 8 for 2 weeks each.

I cut out wheat first and immediately felt better. Hives, IBS, joint pain, heartburn, anxiety, bloating, asthma, and depression almost disappeared.

In December 2009 I began to get hives when not ingesting wheat. My new insurance and I went to the allergist to get an official diagnosis of wheat allergy and to eliminate other allergens.

The results came back mildly positive for corn, which explained the hives, and negative for wheat.

My allergist then ordered a blood test for celiac disease even though I told her I hadn't eaten gluten for 2 years. Of course the results were negative.

In June of 2010 I began a gluten challenge and was miserable for 6 months all symptoms reappeared plus a few new ones.

Nov. 6 2010 I went to a free celiac screening and again tested negative for celiac disease.

December 17, 2010 my doctor decided I did not eat enough gluten during the challenge and offered to test me agian... I politely refused and was diagnosed as non celiac gluten intolerant.

Within a month of going gluten free most of my symptoms disappeared. Life is good again and I can go out to eat without memorizing the restroom location before I sit down to dinner.

Since my 'diagnosis' my grandmother, mother, cousin, and sister have all went gluten free and some have stck with it. God has been so good to us, and I am greatful that my struggles have convienced my family to go gluten free. I hope that no other member of my family will have to suffer through not knowing what is wrong.

All of my successful product recipes are located on my blog:
