  1. Simple green salad with fresh Balkans feta cheese and local capers. I am making a sort of Mediterranean vinaigrette. This afternoon I made Parmesan and garlic biscuits which will go nicely with the salad.
  2. I have a wicked craving for chile con carne so am making a big old pot of it. Right now. It will pair perfectly with bay-infused Jasmine rice and homemade garlic cheese biscuits. This is our high-carb cheat night. Will probably make some sort of cucumber salad.
  3. Ever since coming to Croatia in May, we have sort of fallen from the low-carb lifestyle a bit and I can really feel it. Strangely, we have not gained any weight but I crave carbs as I used to...when I was doing my best, I had no cravings whatsoever. And now, the more carbs I have, the more I want. I really need to stop this cycle. Carbs bloat me. So...
  4. Tsk, tsk. You girls are very, very naughty. Lisa, I forgot to email you pictures. I would love to add you to the living in Croatia emails. There is soooooooooo much to catch up on and tell. Perhaps I should start emailing a group of us celiac girls (no men allowed! ). And I, too, thought of that white powder. In fact, we had to encounter that coming...
  5. Irish, for some reason I am unable to reply to specific posts...strange. No idea why but noticed it happening perhaps a week or two ago. But you simply MUST come, it is not optional. Clothes are. It is Europe, after all. Speaking of which, do I have stories to tell! But not on a food thread. Now all we have to do is finalize a date.
  6. Lisa, thanks for your willingness to sacrifice luggage space for me! Clothes shopping here and in Slovenia and Italy is very good...you and I are really going to enjoy ourselves. How big are your suitcases?
  7. Another gorgeous, bright and hot day here in Croatia. Yesterday I made the following so today is encores: Herb butter roast whole chicken (they actually look like chickens here with beautiful yellow skin and fat) Roast potatoes (with the chicken fat, of course! ) Cabbage slaw Homemade sorghum bread I made yesterday with my blackberry jam
  8. Sorry, I was confusing...almond meal is impossible to find here (though I did find it in Italy but it said it contained wheat!) and almonds themselves are those prices I quoted above. Strange, as almonds are grown here! But most are exported. All gluten-free stuff here is unbelievably costly. We do actually have an almond tree but it winter killed a few...
  9. Ah...I got a bit lazy. If only I could find some almond meal or at least almonds that cost less than 5 euros for 125 g! Many recipes require 2+ cups of it which would be about the equivalent of about $15+ USD for the almond flour alone! I would be willing to pay quite a lot extra for some things but draw the line at some point. It is insane! I do try...
  10. Yes, it does. I have not taken the time to check what is in her almond flour blend...have you?
  11. Ruth, strangely enough I found the same recipe last night...and cannot wait to try it! These rolls really do look light and fluffy. Trouble is, here in Croatia many ingredients are impossible to find, including most flours and starches. The only ones available are white rice flour and I did see tapioca starch once, and two brands of blends. Oh, wait....
  12. Happy Labour Day to my North American friends! Tonight I am making a simple mixed salad with a Dijon and red wine vinaigrette and fresh Balkans feta. Batter for rosemary socca (flatbread) is resting. I will drizzle with local olive oil and sprinkle with...you guessed it...local sea salt. Blackberry lemon muffins for dessert. I picked the last of the...
  13. Thank you! It is nice to be back. We have now had the internet up and running for a consecutive week! Yay!! Colleen, of course... if you would like Croatia pictures, I would be happy to email you some, if I am able to choose from the 873,601,274 we have! Hopefully you are all healthy and back to your normal selves. Tonight is: Roasted...
  14. So sorry to hear about those of you suffering from illness. I hope you are feeling better, even at this very minute. Tonight we are having: Zucchini ribbons with roasted garlic and tomatoes Sweet and spicy meatballs Fresh Balkans feta with lashings of Istria olive oil, olives, tomatoes and capers Chocolate swirl peanut butter banana bread, with...
  15. Hello from Croatia! We were without internet for over three weeks (long sordid tale) until now. But, tonight we had fresh octopus, squid and shrimp peka. Peka is both noun and verb and refers to the dish (ingredients) and cooking vessel. Peka is placing potatoes and other vegetables into a heavy metal pan, along with a protein, usually pork or lamb. ...
  16. Thank you, everyone. It feels great to be missed and fabulous to be happy! Tonight we simply had fresh local cheese from a neighbour drizzled with olive oil from another neighbour, topped with local capers, air-dried ham (Croatia's is better than Italy's prosciutto), yummy pickles and an incredibly moist, low carb banana bread with chocolate swirl...
  17. Tonight is the first time posting since moving to Croatia. Wow - it sounds great even saying that! No more winter!!!!!!!!! We are settling in (finally, after a very busy few weeks). The new kitchen will be installed soon. Until then, I have been using a small outdoor oven and a hot plate. There is an outdoor wood-burning oven but it has been too...
  18. Sherry, tomato, smoked paprika, et. al. braised chicken thighs Roasted herbed cauliflower and garlic with shaved Parmesan Sautéed cabbage with bacon and apple cider Coconut and almond birthday cake drizzled with a light maple glaze
  19. Roast ham with cheesy cauliflower bake and bittersweet chocolate cake with peanut butter and peanut filling, whipped cream, caramel sauce and toasted almonds. All low carb and very good.
  20. Tsk, tsk. You girls and your crushes! Not that I don't have a few one or two myself. Roast chicken tonight with a lovely chipotle lime garlic rub. Cheesy cauliflower bake and roasted asparagus drizzled with delicious Croatian olive oil and sprinkled with pine nuts. Oh. And individual flourless chocolate cakes with peanuts and peanut butter filling...
  21. We are still low-carbing it (we probably will forever!) so I am making a luscious cream of celery soup with cumin-roasted pepitas and finishing it with a drizzle of pumpkinseed oil.
  22. Finger foods! Buffalo wings Cauliflower fritters Ubiquitous carrot and celery sticks with fresh bleu cheese dressing
  23. Big Fat Greek Salad. Not exceptionally thrilling, but it was tasty.
  24. Full English breakfast for dinner! Bacon, eggs, fried mushrooms and fried tomatoes.
  25. Crispy pork carnitas Cheesy cauliflower bake Cabbage slaw Homemade Arabian cucumber pickles Flourless bittersweet chocolate cake with hazelnut butter filling
