I actually work at the Lonestar in Carbondale, IL. I love when I work because I get a great gluten free meal half off. I always order the bacon wrapped sirloin with Worcestershire sauce. Be sure when ordering that you remind the server to make a note in the system to specify gluten free. Also remind them to leave off seasoning and juices. I always order a baked potato with bacon, cheddar, unsalted butter and sour cream (it's gluten free at my lonestar...not sure if each location is the same...so ask). I've eaten the steak queso appetizer and haven't had issues. I watched them prepare it. You just have make sure they don't fry or season the nachos. I know the Lonestar I work at is great with cleaning the cutting boards and prep tables after EACH item portioned. So cross contamination is greatly reduced in that sense. Separate ladles are used for each dressing and salad add on, especially the croutons. Be sure to ask your server not serve any rolls. They are tempting little things.
We have a great salmon that used to be marinated, but now we have the option of ordering it gluten free. Order it without the bourbon sauce. Chicken is the same way, order it without seasoning or juices. We have great chicken breasts as well (order without seasoning and juices).
We serve peanuts in dinning room but my boss freaks if we take any to the back. So we are really good with the needs of those with food alergies. We won't gurantee 100% but of the few places I can actually dine at, Lonestar is of the top. And I guess as a celiac, I'm proud to be working there. I love when someone comes in with a gluten allergy walks in. I strike up conversation and recommend items, I even give an extra shout to the chef to be cautious.
Good eating and and good luck
