  1. The weatherman says the high today will be 98 and it's still May! It looks like will be a roasty summer so I'm looking for gluten-free meals with a summer feel that do not require use of the oven. I'm fine with stove top, crockpot or microwave. Salads ideas are wonderful too! Thanks!
  2. Is the FODMAP something that you would talk to a dietician or a physician about before starting?
  3. I have been eating gluten-free for about six months, but continue to have stomach issues.I also have wheat, barley and oat allergies- in addition to a diagnosis of IBS. Now that I am gluten-free, what additional diet suggestions would you have for me in controlling my IBS symptoms. (I had thought my stomach pain, cramping was simply from my gluten-filled diet, but I'm still not better.) Anyone else with IBS? Thanks! Brittney
  4. I am gluten intolerant and have tested positive for wheat, barley and oat allergies. I am pretty careful about how I cook and have noticed the last three times I cooked a gluten-free meal with beef I had gut symptoms similar to when I have been glutened. Does this sound possible? I am trying to determine if I had cross contamination issues or if I am sensitive to red meat.

  6. Hey, I'm Brittney and I have been eating gluten-free since November. I have not be diagnosed with Celiac Disease specifically but I am intolerant and have confirmed allergies to barley, oats and wheat. I read about many people who are "glutened" like this is a big, out of the ordinary event. I eat gluten-free and get sick probably twice a week still- often with no known cause. Such was the case last night. For supper I made "maid-rites" which is a Midwest sandwich with hamburger, brown sugar French's yellow mustard and Lowes Foods (gluten-free) Ketchup. I used Udi's white bread. I also baked gluten-free Lowes brand french fries. All of these items are on gluten-free lists as safe. I felt sick to my stomach already before I had finished eating. Everyone else in my family was fine. They had regular hamburger buns. I feel consistantly well when I eat Chex cereal. (Actually my sick feelings almost always come at supper time.) When I cook for supper (any time I have casseroles or things with multiple ingredients) there is any increased chance I will get sick. I am becoming paranoid that everything creative makes me sick. When I am sick I have stomach cramping and pain, sometimes rectal pain and irritation and diareha. When I am sick I don't feel well for a few hours (until I have a bowel movement) or up to two days depending on how bad it was. Today is a bad one. I'd appreciate your advice!
  7. I eat gluten free because it is the easiest way to find foods that fit my oat, wheat and barley allergy. However, I am noticing more about "gluten-free oats"- which concerns me as someone who cannot eat oats either. I would like to have protein or some sort of granola bar that I can keep in my purse for social situations when I cannot eat the food that is served... but I don't know if there is any product out there that will work for me. (I was diagnosed one month ago with these allergies and will be going back to the doctor in January for the gluten blood test.)
  8. Pain With Spaghetti

    I have been on a gluten-free diet for a little over two weeks. I have had stomach pain off and on since I was 10 years old and have been diagnosed with IBS. For the last three months I have had to take immodium approximately 3-4x a week and strugged frequently with bloating/diarhea/stomach cramping. Upon starting the gluten-free diet I swung to constipation which is now controlled via medication. My worst trigger food has always been spaghetti, so I purchased gluten-free (brown rice/white rice/quinoa) spaghetti and ate it tonight. I have not had diarhea but I am having gas and bloating. What could be the issue? I had meat sauce. I enjoy tomatoes and had tacos with tomatoes last night (corn tortilla) with no issues. I'm just at a loss. I can also eat some hamburgers most often without issues. I *sometimes* have stomach pain and bloating with burgers or steaks or even spaghetti with alfredo sauce or chicken noodle soup. Thanks for your help! (I have had upper and lower GIs and colonoscopies in the past.)
