  1. What gluten-free food options does RR have? Other than the fries, would kids be cool with the choices? (mine are not too impressed with bun-less burgers)
  2. I highly recommend joining a celiac support group. There are a number of people in mine that don't have positive blood tests. It's nice to know you're not alone and there is a lot to be learned.
  3. Chili (frozen ahead of time) and tortilla chips. Simple, tasty, filling. Fruit for dessert.
  4. My 3yo will suddenly develop a severe stutter when he gets glutened. It really freaks me out!
  5. Not much to add, but I also was diagnosed with VV 4 years ago and then went on to find I had celiac in March 2011. I had the surgery and it was totally worth it! I actually felt a new spot forming a few months before finding out I had celiac and the pain has completely gone away after being gluten-free.
  6. This isn't helpful for right now, but did you know that there are celiac camps for kids? My state alone, which isn't huge, has 2 of them!

  8. I was in the exact same boat a few months back. I was diagnosed with celiac when my son was 5 months and I was breastfeeding too. You can check out the thread I started about it here. Nothing changed after going gluten-free, sadly. I ended up switching to Alimentum formula (hypoallergenic) and my son (now 7mos) is thriving. Strangely, I found that when I was pumping while introducing the formula, my milk had almost no fat in it (which was not he case when I was nursing my other children). And I wasn't exactly starving to death (I was just a few pounds out of my normal range at that point). It's definitely worth a try to see what being gluten-free for a time will do. For me it didn't help, but it very well might for you.

  10. The theme should be "easy". I'm super pot-off by recipes that have many ingredients. Keep it simple. I actually am sick of gluten-free cookbooks being all baking. I need main dish ideas that don't break the bank!

    Thank you all for your responses. We are already a milk-, soy, and nut-free family so it's not any of those. I notice that I'm okay if I eat something small (like a few animal crackers) but if I have a whole sandwich or piece of cake then I start to puff up. Could it just be starch overload? I also wonder about tapioca and the gums. I know I can handle rice, corn, potato, so that really just leaves tapioca, xantham gum and guar gum. I'm having a hard time losing some weight so I might just go low-grain for a few weeks and see how that helps.

    I'll check the sodium but I also don't think that's the problem. I'm thinking it is somehow grain related. I am curious about the blood pressure though. I usually run low but maybe not right now. I've had it checked within the last 2 months. It's always been fine, even when I lived off processed foods for years.

    I'm pretty sure it's not due to CC b/c I'm not having this problem with non-grains. I make all of my food from scratch except for these baking mixes and nothing else is causing me problems. The only ready-made gluten-free stuff I buy is animal crackers for the kids but I rarely eat those. It's the muffins and breads that make me swell. I'll have to check the labels and see if I am intolerant to a certain grain or xanthan gum.
  14. I've been gluten-free for 2 months. I've noticed in the last month or so that I swell when I eat gluten-free baked goods. Pamela's bread mix (which is delicious) is the worst offender but other products are problematic as well. I tried cutting gluten-free baked goods out of my diet for a while and that seemed to help until I made muffins for my kids yesterday and ate 4 of them . This morning the scale says I've gained 7 pounds (in 3 days) and my rings are so tight I can't get them off. Does anyone know why this is?
