  2. I'm new to all this. My daughter and myself recently tested positive for gluten sensitivity thru entero labs and are now gluten-free. I'm beginning to think I should spring for genetic testing to help determine if we are predisposed to Celiac (and thus other auto-immune issues). I'm curious if entero's genetic testing is different from genetic testing I might get thru a GP or GI doc. Is there some reason I should choose one over the other? IS there value in knowing the genetics when I already know that I have gluten sensitivity (which is genetic and is an auto-immune disorder)? I'd appreciate hearing people's thoughts on this. It is so confusing to sort thru all the info. Thanks Sue
  3. I love Bette Hagman's Butter Based Bread recipe and wanted to double it (as she suggests) but I don't know how much yeast to use. In her newer books she lists a small recipe and large recipe for breads and uses the same amount of yeast in both. But the largest recipe I found was with 4 cups of flour (she uses 2 1/4 tsp yeast). Doubling the Butter Basted bread will have 6 cups of flour. Should I use the 1 1/2 Tblsp of yeast, or up it a little? Thanks! Sue
  4. Hi Laurie - Sorry I didn't reply sooner. I haven't checked this board in a while. My daughter is 13. We just went gluten-free for her in Feb. She had been having severe abdominal cramping and she tested positive for gluten sensitivity - gluten-free has cured her cramping and she is like a new person emotionally. I'm amazed at the difference! Someone also asked about hot dog buns - I'm going to try using Bette Hagman's Butter Basted Bread recipe (from More From the gluten-free Gourmet) for that. It's the closest I've found to a white bread (or you can make it more "wheaty" by using brown rice flour). Sue

  6. I found a great mix that is gluten free. The mix is made by Pamela's products and is called: Ultimate Baking & Pancake mix. i have only found it a Whole Foods and Wild Oats, but im sure you can also find it elsewere. happy cooking
