  1. Just for anyone checking out this, things have changed since Michelle1234 posted. My mom and I just ate lunch there for the first time. Yes, their fryer is still not dedicated and they still include those fried items on their gluten free menu but with a warning included that it isn't a dedicated fryer. I was definitely bummed I couldn't have their fries or their steuby snacks, but that's okay, because their gluten free menu now has MANY items on it that don't make it into the fryer. My mom had the grilled salmon with bacon braised collard greens and maple sweet potatoes. And I had the trout amandine with almonds, parsley potatoes and green beans.   2. In answer to your 1st question: Non-celiac gluten intolerance can be tested for or you can self-diagnose with a food elimination diet. I like the IgG test for non-celiac gluten intolerance offered by (Company Name Removed - They Spammed This Forum and are Banned) or the food intolerance test offered through (Company Name Removed - They Spammed This Forum and are Banned) or LEAP that measures changes in white blood cells. False negatives are common for celiac disease. What type of test were you given for celiac disease by your doctor? In answer to your 2nd question: Yes, both celiac and non-celiac gluten intolerance can have the same symptoms. There are over 200 symptoms associated with gluten intolerance that range from osteoporosis to anemia to infertility to digestive disturbances to neurological symptoms and more. In answer to your 3rd question--yes, going gluten free doesn't assure full relief of symptoms whether celiac or non-celiac gluten intolerant. If celiac, it is possible that the villi are too worn down to recover though that is rare. Usually within a year, the villi regrow. With either celiac or non-celiac gluten intolerance, it can take some time before gut integrity is restored and health returns. Also, with both, other food intolerances often play a role as the body mistakes other food proteins for gluten or other intolerances are developed as a result of leaky gut syndrome. Additionally, other health conditions can develop as a result of consuming gluten when intolerant to it for some time that can cause other health issues such as thyroid problems and adrenal problems. Additionally, there are sometimes co-existing health concerns that may mimic digestive disturbances of gluten intolerance such as parasites, small intestinal bacterial overgrowth, or candida overgrowth. You did the right thing. If you test negative for celiac disease, that is not the final word. It is possible that you had a false negative and could follow-through with additional testing or that you have non-celiac gluten intolerance. Regardless of whether you opt for additional testing or not, you learned through the elimination diet that you are gluten intolerant (unless it was a different food that you reacted to when you ate lunch). Regardless of whether you are celiac or non-celiac gluten intolerant the treatment is the same--strict adherence to a gluten free diet. Best of luck! Katie Bauer, MA, CNE, CH
  3. Guar gum (and xantham gum) serve more as binders to allow dough to stretch without breaking (like gluten) than thickeners. It would take a fair amount of starches (potato, corn, tapioca) to replace arrowroot or just a little kudzu or agar agar. Also, realize that coconut milk recipes take a little while longer to setup. So, if it is fresh off heat and not set... Well, give it 4 hours or so in the fridge and it may be set just plenty then. If you don't want to add more starches (corn, tapioca or potato) and you don't have access to the alternative thickeners (arrowroot, kudzu, agar agar) than I would suggest adding coconut oil or coconut butter which will significantly firm it up once refrigerated for a few hours and the extra fat can only make it taste better!     Congrats Srall!!!! You definitely deserve bragging rights for that. Way to go! It makes me so sad to see so many people avoiding healthy fats and healthy animal proteins because of their cholesterol levels, but unfortunately, like Chiana's dad, some people blindly listen to their doctor and don't read the research for themselves, to make an informed decision.   5. Kimis, I see this problem with my clients a lot. Unfortunately, removing gluten is often not enough to restore the gut. There are certain herbs and supplements that can support your body to rebuild the gut lining, such as marshmallow root, slippery elm, MSM, L-glutamine, licorice root (use deglycyrrhizinated if concerned with high blood pressure). My favorite product is RepairVite by Apex Energetics, but I'm sure there are other good products out there that your healthcare provider could order for you. Also, you may be experiencing inflammation from lifestyle choices, medications, infections and stress which can further intestinal inflammation feeding the vicious cycle promoted by intestinal permeability. The blood work your doctor ordered should indicate whether you are dealing with infections (e.g. candida, parasites, bacterial, or viral). Finally, the other problem I see is that in Celiac Disease our bodies can start reacting to other food proteins as though they are gluten, resulting in the same symptoms as consuming gluten. In your case, upregulating your immune system and continuing the attack on your thyroid, not allowing villi to regrow, etc. You could have your doctor order blood work through Cyrex Labs which is doing some amazing immune system work around this problem. They have a panel that tests other food protein for the potential of them being responded to as gluten. Interesting stuff.
