    Wow, that is scary. I pretty much just go to Jason's Deli now because they handed me a copy to keep of their Gluten free menu, and they ask me every time if it is an allergy, and then they write "Gluten allergy" on the order sheet so that the cooks will change their gloves and be careful of cross contamination. I am seriously afraid of going into a restaurant that has the attitude of this ignorant chef.

    Thanks for the advice, I will start experimenting. The original recipe was so perfect as it was, so this was quite disappointing lol. I think I can get it right, though with some practice. The good news was that they still tasted spectacular. I've read in many recipes that they use more eggs to hold the batter together, and I liked the idea of whipping the whites. Hmmm, we'll see.
  3. Thanks for the responses. I'm going to the doctor on Wednesday, where I will hopefully get more answers. I have not had any gluten that I am aware of since being told that I tested positive for celiac disease from the blood test. I have been so miserable that even going to work is becoming difficult, so rather than wait for however long the doc will take to confirm with more tests that it is celiac, I'm doing the diet on my own as best as I can. However, right now, everything that I eat makes me hurt for an hour or more afterwards. The difference is that the last couple of times I remember eating something with gluten, I was up all night with stomach cramps and did not have normal bowel movements. Now,I just have a stomach ache and feel lethargic for an hour or two, but then I'm okay other than still feeling tired. I even told my fiancee that he needs to use mouth wash after he eats before he kisses me just in case he eats a gluten product lol. I'm a runner, and I can't run anymore. I hate feeling like some kind of invalid. I guess it takes time to heal even if it truly is Celiac disease; it'll take a long time of eating right, so we'll see.
  4. I have had this chocolate chewy cookie recipe since I won a blue ribbon for them in 4H in the fourth grade, and everyone loves them when I make them. I tried making them last night at a Christmas party with my new Red Mill gluten free all purpose flour. However, they would not rise at all. They flattened out and ran into each other, becoming a huge glob on the pan instead of cookies. My fiancee, God love him, created "Brownie balls" or as I renamed them "Brownie Bites". But, I would like to be able to make my cookies again. Without having to buy 4 different types of flour/starch as suggested on many gluten free recipe sites, how do I solve this problem? My friend suggested adding more baking soda, but that didn't help. They don't spread out like that w/ gluten flour, and they puff up. Any suggestions?
  5. That is how I have been acting towards my fiancee lately. I even broke down crying last night at a Christmas party b/c I was feeling overwhelmed while I was cooking for it. I got angry and thought my fiancee was just being lazy for not helping me, when in fact, I had already yelled at him when he had tried to help me with cooking earlier. So, I know how your guy feels, but it is not fair to you. I think distance is the best thing you can give to your Celiac partner. But also, calling him out is a good idea, b/c sometimes we don't realize how terrible we are being when this "demon" takes over. Good luck, and stay strong. You are awesome for taking on this battle with him, b/c I know it must be hard.
  6. I am so relieved to read these comments b/c I am having psychological symptoms that I believe, or hope, to be celiac-related. So, this last episode sent me searching for a doctor who had good reviews/comments online, which finally brought a blood test that proved that I was gluten-intolerant. It started with constipation that would not be relieved with laxatives (I mean seriously, wtf?). Then, when I pretty much cut out everything besides fresh veggies, I started having diarrhea. I got my positive diagnosis, so I went back to eating meat and dairy but no gluten(not sure if I should stop dairy or not at this point), and my stomach started feeling a bit better, but not totally. However, the anger issues started at the beginning of this episode, then I just felt weak, run-down, and anxiety-ridden. Then, I began feeling annoyed by all human presence around me. My fiancee, who is a very good man, very loving, is being so supportive. However, I have been mean and distant to him. I don't want to be touched by him or anyone else right now. I cried on my way to work today about it, and I almost never cry. I decided that I must be depressed, but I'm going to talk to my doc about it. I'm also hurting all over my body, and I'm so freaking tired. I drank Emergent C today, which had lots of B vitamins as well as vitamin C, and that seemed to help with my energy. I still just feel miserable even though my stomach is starting to feel less horrible as I am stringent with this diet. I hope all of this is celiac, and from what I have read, the disease does render several psychological symptoms. I have had bouts of depression and anxiety since I hit puberty, but here lately, it is by far the worst it's ever been. Please tell me, those who have been on the gluten free diet for a long time, that these symptoms get better?

  8. As long as you aren't about to take more tests, I think you should go gluten free asap and tell your hubby to deal with it. You want to feel better, right? But, I have heard that if you go gluten free before being completely diagnosed with it, it can cause the test to become negative. But I know how you feel. I feel like no matter what anyone says, no one around me really takes this disease seriously b/c it has become such a buzz word now. If you were diabetic, would he not support a diabetic diet for you?
  9. I have had a stomach ache pretty much my entire life! I also have had bouts with depression, anxiety, and anger issues. I have had to have thousands of dollars worth of dental work done because some of my permanent teeth never developed. I have had serious menstrual difficulties. I feel like I could just pass out every time that I eat. Now, I know why! Yet, it is so difficult. I bought a lot of gluten free food the other day; I made it an adventure. Yet, label reading is so difficult. I am trying to read carefully all labels, and I was doing well for the first few days of being diagnosed until...beer. I wanted to try a gluten free beer, and I had read that St Peters was gluten free. Well, apparently not all of the St Peters beers are gluten free. After consuming almost all of a cream stout, I decided to read the back. Three kinds of barely are used to make it. Crap. So, now I'm starting over with this diet. My stomach has not gotten better since I've started, and now I've set myself back. My question is, how long did you wait until you saw results from your gluten free diet? I want to feel normal for the first time in my life, and I'm so angry with myself for screwing up with the beer that I almost cried. Would a total body cleansing help, or should I just stay stringent with the diet? This kind of sucks lol but there are a lot of great alternatives out there: Amy's gluten free pizza, for instance.
