  1. Potluck Help

    Fruit dip.... 1 8oz container strawberry cream cheese, 1 container marshmallow fluff, and 1/2 container of KoolWhip stirred together --- LOTS of stirring to combine fluff in evenly.... Chill it and serve with fruit...really great with banana pineapple grapes & apple slices (not too great for the diabetic though...LOL)
  2. We just discovered a gluten free meatloaf recipe on allrecipes.com Uses ground turkey and quinoa as the binding agent. Forget the "name" of it, but if you go to allrecipes.com and search for ingredients ground turkey and quinoa it is sure to come up. I recommend doubling the sauce ingredients. It's really good and my 2yo picky eater gobbles it up!

When I'm traveling or do not have access to a full kitchen, I buy perdue short cuts and mayo...with some salt and pepper, I mix up a basic chicken salad and eat it with tostitos, fritos, or rice cakes. I'm also a big fan of cereal any time of day, so the gluten free cinnamon chex & milk - maybe with some sliced banana- would be good. Hormel has microwave kids meals that are gluten-free (not all, but some) I buy the beans & weiners one. . . Maybe buy some salad & veggies for simple salads...although the short cuts would be good on this too. If you're not opposed to hot dogs, the oscar mayer ones zap up nicely in the microwave . . I would also buy some apples and grapes with some sliced cheddar...for an easy and filling lunch.

  5. Typical Weekly Menu?

    Our menu gets pretty repetitive, but I think that's because I don't take the time to try new things. I mostly use my old recipes and adjust brands/ingredients for the diet. Here's our dinner plan for this week: Turkey Chili Pork Fried Rice Pork BBQ Nachos Lemon Butter Chicken w/ broccoli and rice Pizza Bake (Tinkyada pasta, pepperoni, sausage, pizza sauce, green pepper, italian cheese baked in a casserole) Baked Monte Cristo (From Pamela's Products Website) with fries And on our very busy night, Bell and Evans gluten-free nuggets with veggies

Tuna Pasta Salad 2 5oz cans tuna drained and flaked 11 oz tinkyada spiral pasta 1 1/2 c. cucumbers sliced thin 1/3 c. diced green bell pepper 1 green onion, chopped 1 1/2 c. tomato, diced 1 T dill weed 1 T mustard 1/2 c. italian dressing 1/2 c. mayo 1/3 c. celery diced cook pasta, drain. add tuna to pasta mix veggies, italian dressing in large bowl. Season w/ salt and ground black pepper mix mayo, mustard, dill weed add to veggies add all to pasta/tuna chill 4 hours GREAT as leftovers!! Also on allrecipes there is a GREAT recipe for "Holiday Chicken Salad". I make it all the time w/ leftover chicken or rotisserie from the store (no cooking involved, then!)...it's nice to add halved grapes to it, too.

  8. We are slowly introducing our one-year-old to table food and trying to get away from baby food. Normally for dinner, it is just the baby and me at home. I am seeking easy, low-maintenance, one-pot, no-bake, or quick gluten free recipes that I can make for myself and either give directly to him or separate into individual ingredients and give to him. We're talking probably a max of 10 minutes of prep time, if possible. Of course, I can do chicken breast with sides - but I was hoping to find suggestions for more...integrated(?)...meals. I have not been here in a while -- Little One keeps me on my toes most of the time -- but I'd really appreciate your help/input! Thanks in advance!
  9. Anyone else having a SuperBowl party? It's right around the corner! What's on your menu? We are trying to mix up our "usual" menu and come up with some new ideas......we will be keeping it all gluten-free to keep things easier.
  10. Used Pamelas Baking/Pancake mix...Wonder how much of a difference that would be.
  11. RDR, I tried that dough....used less butter than the recipe called for, cooked it 15 additonal minutes, and it was still really moist - almost seemed saturated. I can see the potential, but I'm wondering what I did wrong....

A pediatrician and a nutritionist both (independently) said to introduce gluten to my guy like I would to any child and if he does not experience any changes in bowels, skin, vomitting, etc. to continue to give it to him - even though it's much easier to keep the whole house gluten-free. My GI said they would not test (genetics) until past age 2. I'm going to introduce oatmeal and wheat cereal soon (he's 6.5 month and doing great on rice cereal - he has had breastmilk and formula). I don't think I will make them staples of his diet (for my own benefit since I will be feeding him and I have celiac) but I will introduce them. I've been weighing this in my mind carefully. It was a difficult and personal decision. I will not give "new" foods when I am unable to watch him carefully to spot any reactions.
  13. The holidays can feel so stressful and with a big Nor'easter coming, shopping time is cut even shorter this year! I have decided to take a moment to pause and reflect on what I am most thankful for this year. I'm hoping others will add their own "thanks" and enjoy a calm moment during the holiday hub-bub! I am thankful that I was able to help 2 friends with loved ones recently diagnosed with celiac by giving them pointers, recipes, and shopping tips. I am thankful that my beautiful son, born 8 weeks early is healthy, strong, and happy. And I'm thankful that I could spend 6 months at home with him before returning to work. I am thankful that my husband is an endless source of support for me in every way. I am thankful for my family for a zillion reasons I couldn't possibly list here.

    Search allrecipes for Oven Baked Eggs.....Easy, doesn't need to be watched over, and can add any combination of ingredients. We have it often. Cider Sausage is another..... Hatfield Sausage, crumbled and browned Jar of Apple Sauce (Chunky is best) Onion chopped All baked together Great on crackers or on its own and even better if cooked ahead of time and re-heated.
