  1. I've made more gluten-free pie crusts than I can count. Seriously. Been playing with flours and ideas quite a bit, and what has held true for pie crust is that no gums or binders will yield the best crusts. Also, a wheat crust is formulated with a considerable amount of fat, because that is what will defeat the gluten from forming long elastic structures...
  2. I also would recommend magnesium, especially the oxide form. Taken with orange or other citrus juice to magnify the effectiveness, magnesium can work where bulking laxatives don't.   3. Whenever I've had bread fall after baking, it was due to too much liquid. I've also found that fats tend to make breads fall or not rise so well, thus I never use fats in breads.   4. Yeah, I know she isn't intolerant/Celiac (as far as she knows). However, seems to me many get a negative on tests, even though some antibodies are detected.   13. I've only used the flour, but according to many posts on this board, it seems starches are more interchangeable than flours. I'd have to guess it'll probably work fine, though you may need to tweak something slightly.
  14. Since the starch in sweet potato is different from that of ordinary white potato, I'd think it would behave somewhat differently. However, that's not to say it can't be used. It might just boil down to preference.
