  1. New Gluten-free Restaurant Options In Kc

    I'm slow in replying, but I have to say that I think SPIN pizza is amazing. If you join their promotional program you can buy two pizzas and get one free every Monday. We ordered two gluten free pizzas and one regular with drinks and it was only about $30. I love Waldo, but it can get pricey. I took the extra pizza home with the intention of freezing it but it was so good I ate it up. I hope all those in the Kansas City area have a chance to have this delicious pizza!!

  3. I haven't been on the boards in a really long time so someone may have already shared this, but there are now a few more places to order gluten free pizza in Kansas City. Pizza Fusion on 135th street has gourmet pizza, and offers a large gluten free version. It is extremely pricey (about $25+ for a large), but good. The time I visited we found the service to be horrible but it is new so hopefully that will improve. Everything at the restaurant is organic and they advertise as being extremely green. They also had a dark gluten free beer on the menu and my brother let me know you can ask for New Grist or Bard's Tale as well. The second place is Minksy's on College and Pflumm. This is the only Minsky's as this location has a regular customer with Celiac. I'm not sure about their preparation as I haven't had a chance to check it out yet, but thought I would pass it along! It probably wouldn't be a bad idea to call ahead on that one (913)491-5252.
  4. I've been wondering about this as well. Our baby is due any day now (actually is 9 days late as of today..) and I have been trying to find information while I wait. Would a baby react differently to gluten than an adult? And would it be an instant reaction or would it take the baby awhile to develop problems? I am very nervous about introducing gluten because I would be worried that the baby would react to it and I wouldn't know. I am assuming most pediatricians wouldn't be too familiar with this?
  5. So I am due on the 17th, and getting pretty excited about baby. A few weeks ago it occured to me that it would be smart to start freezing back some gluten-free meals for the first few months so I have been going crazy cooking on the weekends. This past Saturday I got up at 6:00 am and cooked the entire day, I think I have about 2 months worth of food made so far. For all the other expectant moms, I highly recommend the book Don't Panic, Dinner's in the Freezer. I bought it on Amazon for $10. If you have no other food allergies, most of the recipes are easily adaptable though I have stayed away from the baked good section. There are about 30 chicken recipes alone. Of course, I haven't eaten any of them yet so who knows but everything was super easy to make. Most of the meals you just prepare and freeze, and then bake when you are ready to eat it so you don't even have to mess with heating up the house. And the book gives different quantites so it is easy to make huge amounts if you have a large family. I found it to be extremely economical compared to buying pre-made gluten-free frozen meals. I even borrowed my mom's food saver and vacuum packaged everything- which is so much fun!! I also have made mexican casseroles, stuffed shells, lasagna, 5 different kinds of soups- I will be eating better the next few months than I ever have in my life! Thank goodness for these last minute bursts of energy.
  6. I have to brag on my mother in law a bit. I have posted before about so many frustrations with people not being very sensitive about the diet that I thought I should balance it out with a good story. My MIL is the one who went with me when I traveled to a natural healing center where the doctor first told me about celiac. So she has been there from the beginning, but about 6 months ago we had a huge argument after she told me that she thinks eating gluten free is no big deal and that basically I cause too much of a fuss over it. My husband talked to her about how eating gluten free has affected his life, let alone mine and I think she was able to see that while there are worse conditions to have, the diet is fairly life changing and at times challenging. After that incident she went out to the library and checked out a bunch of books on celiac and all of the gluten free cookbooks she could get her hands on. Jump to today, I am 37 weeks pregnant and have been planning ahead for what to eat when the baby comes. A month ago she offered to cook some things for us, and so far has made us: lasagna, chicken casserole, chicken noodle soup (with homemade gluten-free noodles!!!), vegetable soup, and zucchini casserole. All gluten free. She put a ton of work into researching the products to use, buying gluten free ingredients and not to mention cooking in this horrible heat!!! All so we would have some safe meals to eat when the baby comes. She has also made me cakes and other goodies for the family get-togethers we have had lately. I wouldn't trust just anyone to bake for me, but I am just blown away by how thoughtful this is and I don't think I could ask for any better support. The fact that someone would go out of their way to research a condition that they don't even have is pretty special in and of itself. It seems to me that most people don't really give anything a second thought until it happens to them so it meant a lot to me that she cared enough to do this. I just thought I would share a good story because so often those around us are frustrating and it is so nice when someone goes out of their way to make life a little easier...
  7. Ovualation Kits

    The ovulation kit I used had enough to test for 15 days I think, but I bought a number of them and used it nearly ever day for a few cycles to confirm that I really wasn't ovulating. My instructions were to use it first thing in the morning. Once I took Clomid, I had a light line one day and a really dark line the next- which happens to be the day we concieved. There are a number of different kits, if the one you are using is too confusing I would try a different brand. Good luck!!!
  8. Cravng Gluten!

    I have been craving gluten as well, basically all the unhealthy stuff I shouldn't be eating. The funny thing is I have had really vivid pregnancy dreams about eating gluten nearly every night, only I can never follow through. In the dream I will be at a restaurant and will have my mouth full of a fresh, warm, gooey roll and will be chewing it in ecstasy only to realize it is full of gluten and spit it out and run to the bathroom in a panic. I too can't even enjoy gluten foods in my dreams!!! To help with the cravings for junk food I allow myself a gluten free donut once a week or so, or I make some rolls with the sweet Chebe bread. At the beginning I survived off of instant mashed potatoes and pedialyte popsicles- pretty gross but that is what would stay down. Thankfully now I can eat normally, it's just those darn cravings...
  9. I am hosting a girl's night tomorrow and need a quick, easy menu. I had been planning on just going to the deli and getting a chicken, potato salad and some fruit when I remembered one of my friends is vegan. I would like to have enough sides for her to eat a decent meal but because I am 8-1/2 months pregnant and it is 1000 degrees outside, I would rather not have to cook something. Any ideas? Thanks in advance!!
  10. Need Advice!

    I have never been regular my entire life so when it was time to concieve it was very frustrating. My cycles were just all over the place. I finally started using an ovulation prediction kit and discovered after a few months that I wasn't even ovulating. Eventually we decided to try Clomid and one cycle did the trick. I know it isn't for everyone but if you give your body awhile to regulate and it just isn't happening then there are options. I wouldn't shy away from your OB either, if it is someone you like and trust. For now it does sound like it is related to the pill but it never hurts to make sure there isn't something else going on as well.
  11. Constipation

    I'm guessing it has more to do with pregnancy than celiac. My doctor said to take Colace, so you might ask your doctor if he would be okay with that. 7 days sounds like quite awhile to me, I know I would be miserable if I were that backed up!
  12. I use the baking mix, I think... the one for pancakes. And I used 3-1/2 cups. Otherwise I still added the baking soda that the recipe called for but I omitted the extra salt, and it turned out great. I wish I had some right now!
  13. If you like pumpkin bread, go to allrecipes.com and search for 'Super Moist Pumpkin Bread'. I make it with Pamela's flour and it is SOOOOO good. It makes two large loaves, so I have always intended to freeze one but usually eat it all up before then.
  14. I use Pamela's Baking & Pancake mix for everything and I love it! From pumpkin bread to fried okra- it's my go to flour. It also makes pancakes so good you can't tell they are gluten free. I am sure I could make up a comparable mix but I am too lazy.
  15. Roll Call?

    A February baby sounds nice to me right now. I don't know what I was thinking with this baby due in September- it is going to be a huge and hot few summer months!!
