  1. Celiac.com 05/05/2023 - Gluten-free products have become hugely popular in recent years, creating an opportunity for food companies to capitalize on this growing market. However, removing gluten from bread and bakery goods poses a significant technological challenge, as gluten is an essential component of the wheat dough system that gives baked goods their desired characteristics. Without gluten, bread often falls flat in terms of quality, elasticity, texture, and overall customer favorability. Creating a gluten-free bread that's like real bread is like a Holy Grail for gluten-free bread makers. Fortunately, researchers have been exploring alternative protein sources to compensate for the lack of gluten in gluten-free products. One promising option is dairy proteins, which have functional properties that can potentially mimic the protein-network structure of gluten. In a recent study, researchers examined the impact of adding different levels of dairy products, at 10% and 20% weight for weight, to gluten-free bread formulas. They found that the addition of dairy products improved the dough rheology properties, which in turn led to better bread quality parameters such as volume and firmness. The researchers also discovered a strong linear correlation between the pasting properties parameters, as measured by viscosity and elasticity, and bread staling rate, indicating that the use of dairy products has the potential to generate bread with a longer shelf-life. Overall, the results of the study demonstrate that the addition of dairy products to bread and bakery ingredients can significantly improve the technological properties of gluten-free bread. This finding is good news for those who suffer from celiac disease or gluten intolerance and must rely on gluten-free alternatives to stay healthy. As the market for gluten-free products continues to grow, there is a huge financial upside for companies to develop high-quality gluten-free options that are comparable in taste and texture to their gluten-containing counterparts. The use of dairy proteins as a substitute for gluten is a promising avenue for research and development in this area. Obviously, companies need to work information like this into their own research to fully understand the potential of dairy proteins as a replacement for gluten in their products. However, studies like this one offer valuable insights into the potential technological advantages of using dairy products in the production of gluten-free bread.   2. Celiac.com 01/24/2018 - Irritable bowel syndrome can be a frustrating condition for both patients and doctors. It can be difficult to diagnose, and the symptoms can be unpleasant, to say the least. For many people with IBS, medication does not adequately treat the symptoms. Many people just suffer and live with the IBS and its symptoms. Now, a new study may bring some hope to people with IBS. The study was conducted by Manju Girish Chandran, and colleagues from the Mary Breckinridge ARH Hospital in Hyden, Kentucky. For the study, 189 patients consumed 2 to 3 cups of homemade yogurt every day and recorded their symptoms. Their responses were assessed every 2 months for 6 months. At the end of the study, 169 patients saw their IBS go into remission within 6 months. And these weren't some special set of patients. They were true IBS sufferers. Some patients in this study had lived with symptoms of irritable bowel syndrome for 9 or 10 years. These results show that the daily consumption of homemade yogurt can lead to a complete resolution of symptoms in patients with irritable bowel syndrome in the vast majority of IBS patients. "Our study is based on the fact that there is an internal gut–brain microbiome axis," Dr Chandran told Medscape Medical News. "If you modulate the intestinal microbiome, you can actually achieve remission in some cases." That is one of the reasons Dr Chandran and her colleagues wanted to assess the potential of homemade yogurt with Lactobacilli to influence the gut microbiome. In this study, 89% of the study participants saw complete remission, which is defined as the relief of irritable bowel syndrome symptoms and one or two normal bowel movements daily. In addition to being cheap, says Dr Chandran, the yogurt can be enjoyed plain, or mixed with fruit or made into a smoothie as part of a normal diet. Dr. Chandran reported the results of the study at the World Congress of Gastroenterology. This is one of the more exciting studies on IBS in a long time. The idea that incorporating simple homemade yogurt into the diet can lead to a remission of IBS is nothing short of earth-shattering. How to make the yogurt used in the study: The yogurt is cheap and simple to make. First, boil a gallon of milk for 5 minutes and let it cool to lukewarm. Next, mix in 1 cup of Dannon plain yogurt, which is used as a starter and source of Lactobacilli. Place in an oven with the light on overnight (do not turn the oven on), and then refrigerate the next morning. Basically, you want it to sit all night at about 110 degrees F. Save 1 cup from each batch to use as a starter for the next batch. This news is potentially a game-changer for IBS-sufferers, since the solution is both simple and affordable for most people.   5. Celiac.com 07/06/2022 - We get a lot of questions from celiac community members wondering if certain products are gluten-free. Lately, we've seen a lot of questions about which top brands of yogurt are gluten-free and safe for people with celiac disease. Specifically, is yogurt gluten-free and safe for people with celiac disease? Yogurt is one of those foods that is usually formulated to be gluten-free. So, unless gluten ingredients are added during processing, most all yogurt is likely to be gluten-free, and safe for people with celiac disease. Exceptions will be yogurt products that include wheat, barley or rye ingredients, for example yogurt with granola included, and any gluten ingredients will usually be clearly labeled. At the end of the day, we regard most yogurt to be gluten-free, and safe for people with celiac disease. That said, we realize that some people, especially those with celiac disease, specifically look for products labeled gluten-free. However, many brands don't bother to specifically label their yogurt as gluten-free, while others do. Here's a list of yogurt brands that are gluten-free, or made without gluten ingredients, and are regarded as gluten-free and safe for people with celiac disease. As always, read labels, avoid gluten ingredients, and choose carefully.

Specifically, is Chobani yogurt gluten-free and safe for people with celiac disease? Since yogurt is just cultured milk, and since milk is naturally gluten-free, and the yogurt cultures are gluten-free, most yogurt, including Chobani, will be gluten-free. So, any yogurt that has not had gluten added to it is very likely naturally gluten-free, whether or not it is labeled and certified. The good news is that, with a couple of exceptions, nearly all formulations and flavors of Chobani yogurt are labeled gluten-free and are certified by the Gluten-Free Certification Organization. Celiac.com 09/11/2020 - If you're looking for a rich, creamy dessert that is also refreshing, and lower in calories, then look no further than shirkhand, a luscious, nutritious and probiotic delight. Commonly found in the Indian state of Gujarat, this silky, smooth yogurt dessert packs tremendous flavor into a simple dish, that's fit for royalty. It's sure to enchant palates, and stir the senses. Ingredients: 4 cups plain whole-milk Greek yogurt ½ tsp. saffron threads, divided 4 green cardamom pods, seeds removed, or 1 tsp. ground cardamom ½ cup sugar Tools: A mortar and pestle, coffee filters, and a sieve or colander. Directions: Line a large sieve or colander with coffee filters or paper towels, overlapping them so they cover sides, and set inside a large bowl. Place yogurt in colander and let drain in refrigerator at least 8 hours and up to 12 hours; discard drained liquid in bowl. Finished yogurt should be very thick, and even more dense and creamy than Greek or European-style yogurt. Crush ¼ tsp. saffron threads to a powder with a mortar and pestle; pour them into a small bowl. Grind the cardamom seeds until very fine. Transfer strained yogurt to a large bowl and mix in crushed saffron, cardamom, and sugar. At this point, the yogurt will likely turn a pale yellow color. Place saffron threads on top. This delicious dip blends yogurt and mayonnaise with sun-dried tomatoes, hot sauce and scallions for a perfectly light warm weather treat. Ingredients: 8 ounces cream cheese, room temperature ½ cup plain whole milk yogurt ½ cup mayonnaise ¼ cup sun-dried tomatoes in oil, drained and chopped 3 whole scallions, chopped 1 tablespoon Sri Racha hot sauce 1 teaspoon kosher salt ¾ teaspoon freshly ground black pepper Instructions: Place the tomatoes, cream cheese, sour cream, mayonnaise, Sri Racha sauce, salt and pepper in a food processor or blender. Blend quickly. Add two scallions and pulse twice. Cover and refrigerate for at least 30 minutes before serving. Bring dip to room temperature, top with chopped scallions, and serve with assorted fresh vegetables and your favorite gluten-free bread, crackers, or chips.
  10. Celiac.com 07/28/2015 - Chicken is marinated in yogurt, buttermilk and herbs, then grilled outside for a tangy, tender treat that's sure to make a bit hit at your next grill session. Ingredients: 12 cloves of fresh garlic 2 whole chickens 3 cups buttermilk 1 cup fresh whole milk yogurt ½ cup fresh rosemary, gently crushed ½ cup fresh thyme, minced ½ cup fresh oregano, chopped, or 1 tablespoon dried oregano ½ tablespoon onion powder kosher salt freshly ground pepper vegetable oil, for grilling Directions: Combine buttermilk, yogurt, onion powder, garlic, herbs, 2 tablespoons salt, and 2 teaspoons pepper. Clean and cut each chicken into 8 pieces, then divide between two large plastic food storage bags. Add marinade to each bag, and move chicken around until it's well-coated. Seal the bag and refrigerate for at least 4 hours or overnight, turning chicken occasionally. Remove chicken from refrigerator 30 minutes before grilling. Heat grill to medium with direct and indirect heat zones. Brush grates with oil. Remove chicken from marinade, and pat dry with paper towels and place on a plate. Discard marinade. Grill breast halves, thighs, and drumsticks, skin side down, over direct heat for about 10 minutes. Flip, move to cooler grill area, and cook, covered, about 10-15 minutes, until an instant-read thermometer inserted into the thickest part of thighs registers 165F. Grill wings over direct heat, turning as needed, until cooked through, about 15 minutes.
