Last year, in response to some health issues, I decided to try to go sugar free (including honey, maple syrup, etc. in addition to regular white sugar) for a period of time.

 

Now I do use some things with very small amounts of sweetener, but I do severely limit them. The health difference is amazing! I don't get sick all the time anymore and I can breathe so much better. My chronic sinusitis is going away.

 

The difference is like night and day.

 

I would like to learn how to bake better though. Before starting to be more careful about sugar intake, I was big into baking things. Now I hardly ever bake. Does anybody have some good tried and true no sugar gluten-free recipes?

Well, I have two books that I use to bake gluten-free and sugar-free from. I suggest you check them out; they have definitely helped me. There is an adjustment period though, as these things will NOT taste like conventional foods. But to me they're pretty good. I've modified some things too. The two books I own and have used so far are:

 

The Joy of Gluten-Free, Sugar-Free Baking

The Gluten-Free Almond Flour Cookbook

 

I noticed that now there are even more books like these out there since the time I purchased them but these are a good start. You'll need to invest in almond flour and a sugar substitute.

One thing I can recommend is NOT to use Splenda. It is low in calories because our bodies don't recognize it as food so it doesn't get digested. But it is toxic so a small percentage does get stored in our fat cells. The rest goes right through us, through the sewer system, and ends up polluting our water ways.

If you are going to use sugar, go for unbleached sugars such as kane sugar. The refining process that is used to whiten sugar actually changes it in ways that adds toxicity as well.

 

Otherwise, you can look for recipes that gain sweetness from fruits such as applesauce or banana puree.

Well...I avoid sugar, but not by choice!  I was not recovering from celiac when I was diagnosed.  I asked on this forum several times if this was normal, and I received lots of good advice.  I saw a new gi recently who listened when I described my continuing problems, and he decided I needed testing for SIBO.  I was positive, so I was treated with antibiotics and put on the FodMap diet.  It worked like a charm.  The only sugar I was allowed was a serving of fruit daily and a small amount of maple syrup.  I'm ready for the challenge phase, but scared to death to add sugars back in.  I wouldn't say there are lots of recipes out there without sugar, but there are a few good ones.  I tried searching for FodMap recipes, but so many of them had glaring mistakes that I quit.  Now, I just look over ingredients and use the ones where I think I can sub maple syrup.  So far, 95% of them have been successful.

    • You make a good point about being neurotic. I'm slowly getting better. I guess time will tell. But thank you for the insight.   As far as roommates go, that's a good idea. I've definitely been thinking about that. But these guys are my best friends and the process of getting a new roommate this late in my schooling might be hard. Although, I will keep my eye out for the opportunity. 
    • Yes I have seen the allergist, dermatologist and tonight my general doctor and they all pretty much say I am crazy.  The dermatologist did a scratch test and the results came back saying allergic contact dermatitis.  So she has ordered a blood test for allergens gluten.  Will this be the proper test?  I know there is a celiac panel blood test as well.  My general doctor claims that a result that says allergic contact dermatitis means whatever it is needs to be in contact with my skin so it cannot be gluten, same as my rash comes and goes and she said since I eat gluten all the time it can't be DH and lastly since I don't have any bowel issues it can't be gluten.  I tried to dispute all of these from what I have read on here.  Believe me I hope it is not a gluten allergy, but I have not had an answer in 10 years so signs lead to this I need to explore it.  Why do all of the doctors not have the information that is being spread here, what is right?  I believe all of you guys as you have been through it.   Will the blood test for gluten allergy be sufficient?  Or should I have a full celiac panel or should I highly push for the punch test? Unfortunately money is an issue so I am trying to make sure the proper test is administered instead of just going through all of them. Thank you!
    • My son is 5 and his symptoms are all behavioral and neurological. If he eats a few pretzels he will develop something called a stereotypy where his fingers become sort of stuck in distorted positions for days. If he eats gluten he also experiences auditory and visual hallucinations, insomnia, loss of balance and fine motor, periods of confusion (doesn't know where he is), dialated pupils, chronic post nasal drip, keratosis pilaris covering torso, extreme behavioral issues, constipation and bloating. We've been to 3 neurologists, 2 allergists, an endocrinologist, psychological, psychiatrist, dermatologist,  infectious disease specialist and soon will see a gastroenterologist. He's tested negative for celiac and doesn't have the gene which would indicate gluten as an issue for him. Despite these facts, we entirely removed gluten and dairy from his diet and he is a normal happy playful child again, living the life he should be living.  He's had a few instances of dietary mishaps at school which were difficult to recover from. We implemented the AIP diet which for us included no grains (no corn, rice or quinoa), no dairy, no legumes (especially soy), no eggs and limited nightshades. Basically, we have been eating only vegetables, fruits, meats and nuts. Nothing processed. It works. Now we are at the point of adding things back into his diet and it's going well. We've determined that he's sensitive to a particular baking mix brand called Simple Mills. So there are only two possibilities to this a) Simple Mills brand isn't as gluten free as it needs to be or b)my son is actually sensitive to baking soda.  I also think he might be dealing with intestinal permeability or "leaky gut". I've been reading about a protein called zonulin and I question whether that could be a potential biomarker in our case. Prayers for your daughter. If you think it's a dietary trigger then you are right and I encourage you to never give up. You will find an answer if you keep looking. I promise.  
    • Well.... it can be... the plastic lid on the lovely chicken salad you brought for lunch sticks, you pull too hard and it, and half your salad going flying all over the company computer?  
    • @cyclinglady I heard that there were problems with Armour Thyroid when it came to gluten a few years ago. I thought it was no longer safe? @Megamaniac I had forgot to put that in my original post that I have a lot of issues with anxiety as well. I've never actually been officially diagnosed with a type of depression/anxiety/etc, but I've had problems with that ever since I was pretty young (I think before puberty). I'm sorry to hear about your medical field experience. I've actively sought out doctors (and got lucky having a great primary dr) over the past few years since very few seem to know much about it. The fact that a doctor would laugh at a patient for anything is pretty infuriating. Sorry to hear that. I went to a gastro that barely listened to a word I was saying and only offered a short term "solution" so I never went back to him.
