Chocolate Pud To Die For-Gluten And Dairy Free!

I felt it would be wrong, simply wrong to keep this amazing pudding to myself!!!

 

Its not my recipe lol!... its something I have very slightly tweaked, but its amazing, truly wonderful, and incredibly once made half can be eaten as a moose  and the rest  frozen to make ice cream.

 

1 tin Coconut milk

1 large soft avocado

3 tbsp coca powder

1/4 cup Gluten free Maple syrup or honey

1/2 tsp Gluten free vanilla

dash of salt

2 tbsp Gluten and Dairy free chocolate chips

 

put all in a liquidizer for a couple of minutes..

 

Pour half of mixture into a freezer dish with a handful of walnuts and a handful of chocolate chips and freeze for delicious chocolate ice cream.

 

The other half makes a delicious plain chocolate moose, with raspberries or strawberries to serve.

 

I also tried adding a dash of rum to this moose which turned it into quite an exotic dessert!!

 

Because the flavour is so intense you only need a small portion to satisfy your chocolate craving.

What is a tin of coconut milk?  Is it the same thing at a can?

avocado? wow, that is a surprize? probably makes it creamy? I will try this for my son with celiac! I'm in usa, what is liquid amount of can of coconut milk? thanks for sharing!

Hi, its a 14 Fl oz can, he will love it! and yes the avocado does make it creamy.

 

Actually I am completely stoked about this ice cream, it tastes far far better than anything I have ever bought and eaten in a shop...

 

and of course you can add your favorite nuts, chips etc before freezing..

      Hi Scott, yes I have had symptoms for years and this is the second GI I have seen and he could not believe I have never been tested. He called later today and I am scheduled for an endoscopy. Is there a way to tell how severe my potential celiac is from the results above? What are the chances I will have the biopsy and come back negative and we have to keep searching for a cause?

      I agree christina, there is definitely many contributing factors! I have the pain today, my pelvis, hips and thighs ache! No idea why. But i have been sitting at work for 3 days so im thinking its my back. This disease is very mysterious (and frustrating) but not always to blame for every pain.
