They are highly processed you could be reacting to one of the other ingredients, many develop issues with xantham gum for example, some people have issues with other grains, everyone is different with this disease and due the the way it effects the immune system you can easily develop food intolerance issues and allergies. I personally got a whole list, and some foods are minor intolerance, some depend on how they are fixed etc. The only pizza crust I have been able to stomach was califlour foods plant one -_- in small amounts with antihistamines lol (they use olives in it somewhere and I am allergic slightly to them) It is not bad and depending on prebake you can get soft chewy or extra new york crsipy. Keep a food diary write down everything you eat, spices you use, condiments and how it is cooked, then record how you feel hours later, Look for patterns in and you can track stuff down.  If you can find what you think is the offender in its purest form and try it and see.

I found this old thread because I just had a reaction to Udi's frozen pizza. I've been hard-core gluten free for many years and have been eating Udi's frozen pizzas for the past couple without complaint ... until last night. My stomach is now doing somersaults in ways that I haven't experienced since the early days of my going gluten-free.

I figured it was worthwhile to mention the pizza to others to be cautious because the box was plastered with advertising about the "new and improved recipe" and "crispier crust". Udi's seems to be "improving" many of their product lines lately in ways that are making me stop buying their products altogether. In the cases of their bread products, it is the flavor and the texture that became inedible. But last night's pizza was different. It tasted great, but my entire immune system is now on high alert, and nothing in the ingredient list would cause me concern. 

Of course not every batch of food is the same and not every person's reactions are the same. In my experience, the better you do at eating gluten free and the fewer risks you take, the more sensitive you become to smaller amounts of gluten. There are plenty of people who react to the levels that are considered safe by the parts per million requirements that are currently the standard for gluten-free labeling in the U.S. You're very lucky if you're not one of them.

It is sad to see previous posters arguing about who is right, when everyone is just discussing their own experiences ... which can vary widely. And ultimately, the goal for all of us it simply to avoid getting glutened.

I'm going to do everyone that likes pizza a favor here.

a little history behind it:when I was 14 years old our class of building construction students were so unruly that our shop teacher quit, and the principal did what any smart principal would do.he put us in mrs wileys home economics class.mrs wiley ruled with an iron fist and a three foot ruler and after several whacks with that ruler, we all came around to her way of thinking and couldn't wait to learn to sew and cook.(true story)

Mrs Wileys NO CRUST PIZZA

 

enough meat to spread in a oven pan. usually 2 pounds hamburger meat.up to 3 lbs depending on pan size

2lb hamburger or more

1 egg

3 tbl Italian seasoning(can be found at store)if preferred can use oregano only

salt and pepper

heres where you get creative,put anything you want on it

its a pizza. (I put onions,peppers,mushrooms,caraway seeds,(cause I like them),olives,pepperonis, tomato sauce or pizza sauce(it's better with pizza sauce)cheese

 

there are two ways to do this first step.

1 on a broiler pan and let grease fall to bottom of pan

2 pressed in a pan, and be prepared to pour off grease and any water rendered.

place hamburger only in 325-350 oven, till partially done

add ingredients you want and cover with cheese. cook till done.

let me add to folks reading.try to quit freaking out over the wheat problem.

I'm a bonafide tested hd, with celiac. I find many wonderful things to eat.you can too. theres chicken,with vegetables, steak with vegetables,fish with vegetables,tacos(old elpaso)frijoles,the list goes on and on and on.....salads etc.quit fretting about the junk food you can't eat anc concentrate on the many naturally produced foods you can eat.like that pizza above.you all reading this that tries that power packed caloric pizza meal will forever thank me.bread be damned! who needs bread with a no crust pizza available!

when i was first diagnosed, i thought there was gluten in *everything* - i was so paranoid (my poor husband "GET YOUR BEER AWAY FROM MY CELL PHONE!!!!"  <as if i go around licking my phone lolz)  but everybody finds their 'groove' - takes a little time, but everybody gets there.   a healthy fear in the beginning, until you get your 'gluten-free legs' isn't necessarily a bad thing :)  i had the hardest time quitting licking my fingers that i had to start wearing food prep gloves when handling gluteny foods until i could break myself of the habit   ;) 

it's also funny that you can eat amy's stuff - that's my paranoid company because it says it's manufactured in a shared facility lolz, so, it just goes to show ya, to each their own! :D  

Hello!! I am pretty new to all of this, and my symptoms for GERD have decreased since I have been gluten free for almost a year now. However, it is most frustrating that my doctor (Kaiser) has not diagnosed me with Celiac or even as having a gluten intolerance even after my test results show that I have a wheat allergy.

I came on this forum after having another bad reaction after eating Freschetta's "Gluten-Free" pepperoni pizza. I started getting sharp gas pains and terrible gas about 20-30 mins after eating. Then came the extreme fatigue, and I would keep dozing off then wake with a jolt with my heart racing. I get a jittery, anxious feeling throughout my body, and even though I had taken my Protonix (for GERD) I still felt heartburn like inflamed gases were rising into my nasal passage and causing congestion. My breathing was shallow which may have made me jolt out of my sleep. I really don't know what's going on with me because I had been doing so good with eating gluten free, but now I noticed that I will have a reaction like this if I eat BBQ sauce or even have certain spices (I learned this after letting my husband cook what he said was "gluten/ wheat free" a couple times).

Recent test results have shown that I just have a Vitamin D deficiency and my HDL (bad cholesterol) is slightly raised at 109. I get so scared of eating certain things, especially trying new things because my reactions feel so scary. I have had whole body reactions where my extremities feel cold and I have tremors and shaking in my legs. I am even scared to take vitamins LOL but I know my body needs it because I am not eating properly. On a good day I feel alert and I don't feel bloated or heavy. But on a bad day, my brain feels foggy and I feels anxiety and have excessive belching & my stomach issues are connected with my anxiety! I have gotten a LOT better but I use to think the worse... it has been hard.

So all this just to ask or see if anyone else has had a reaction with the Freschetta Gluten Free pizza?? I can eat the brand I but from Wegman's (Udi's?). 

Also, is there a specialist I can go to? Kaiser has been so dismissive and attributes everything to GERD or IBS, but my symptoms got so much better, almost nonexistent, when I kept gluten and wheat products out of my diet. Hi! 

First of all, if you want to pursue testing for celiac disease, you might want to consider changing your doctor at Kaiser.   The next hurdle is going back on a full gluten diet for 8 to 12 weeks. 

But maybe this is not necessary.  What were your test results? Were you tested for celiac disease or a gluten allergy (big difference, not to mention there is no testing for gluten intolerance, just ruling out celiac disease.  Post them and we can guide you.  

As far as the pizza, it is highly processed.  You might be reacting to gluten less than 20 ppm, but you could be reacting to any of the ingredients.  For example, I can never eat pizza because as celiac I also have some food intolerances.  No peppers, onion, or garlic.  These foods can cause tummy upset or trigger my autoimmune gastritis which is separate from celiac disease which has thankfully healed. 

Go select another doctor.  Kaiser has been great for my extended family.  Sounds like you have a dud PCP.    If that is not successful, see a doctor outside your network and pay cash.  It might be the best $150 you have ever spent.   But try another doctor within the plan first.  

Celiac disease requires a gastroenterologist (GI). If you have been on PPIs and it is not solving your problem, insist on a GI consult.  Long term PPIs are not good.  Find the root cause of your problems.  And IBS is just a “I Be Stumped” diagnosis in my non-medical opinion.

Well, I guess one upside is I've lost 20 lb (I needed to lose) since I was diagnosed! LOL

Like, my nose can smell chemicals and taste chemicals and yes you cannot trust labeling. The companies are putting chemicals in the food and NOT listing them.  Under the word "spices" they can put any chemical.

You cannot trust the FDA. It goes DEEP in the rabbit hole. All of Wal Mart products I can taste and smell the BLEACH smelling  horrid preservative they are dousing everything in.  So I don't BUY anything edible from them, not even produce. Last time I got an advocado and it was injected with some type of chemical and i reacted.     I took one tiny bite. I had bad experiences with their pinto beans and black eyed peas too, and I did NOT eat them. SMELLED like a horrid bleach chemical. I just got glutened on their corn chips I loved . That was the only thing I ate that was wal mart brand. Now NEVER any food at all!!! Wal mart go bye bye.

Buy your foods from azure standard that is what I do. the Blue berries are fantastic!!! Because i guarantee you the ones at wal mart are gonna smell and taste like bleach.

Udis tore my insides up.  I don’t even have Celiac disease nor gluten sensitive.   Something is wrong with their ingredients.  I’ve never been in such pain.   Almost as bad as when I had appendicitis

      I am not a medically qualified person, but I think in your shoes I would do the same.     If you are in the UK, there are some really good gluten-free aisles now.  The largest range near where I live, currently, appears to be in Tesco's.

      @cristiana I’ve got an appointment with the midwife next week so will speak to her then. Waiting for gp to get back to me. I’ve made the decision today to cut gluten out regardless due to the risks I’ve read about

      @cristiana hi!  the things I’ve read online about having untreated coeliac disease whilst pregnant has really scared me and made me very hesitant to continue eating it. I feel like the best option might be to eliminate gluten from my diet now and then continue with testing after I’ve given birth. I’ve got in touch with my gp and am due to get a phone call back on Monday. Really worried now as I’ve had 2 miscarriages in the past

      @Katiec123 Welcome to the forum. I started to have symptoms related to coeliac disease (mouth ulcers, aura migraines etc) but no gastric symptoms during my first pregnancy.  That went to term, in fact, I was 10 days over and had to be induced.  But my second baby, born 21 months later, arrived at 33 weeks.  He's now doing well, and taller than all of us - it was just an earlier than expected arrival! I agree, it would not be wise to eat gluten  if there is any suspicion that you have coeliac disease during a pregnancy.   It would of course be good to know for sure, one way or another, because I believe coeliacs receive extra monitoring during pregnancy in many countries.   I think it may be well worth asking your GP if you can be referred to a gastroenterologist for a formal diagnosis asap.   By the way you spell 'coeliac' I'm guessing you are posting from the UK?  If that is the case, the NHS may rush things along for you, I suspect they will.  If it appears that they cannot refer you urgently, if you have the money for a private consultation it might be well worth it, as there is a trend here in the UK (I'm British) to diagnose coeliacs without the need for an endoscopy if the blood test results are compelling. Sounds like this is the case for you.  If you can see a gastroenterologist privately s/he might be able to diagnose you there and then (make sure you take a printout of your blood tests). Generally, there is a lot of support for coeliacs through the NHS, with a nutritionist, annual reviews and blood tests to check for diet compliance and health related issues, DEXA scans to check bone density, extra vaccinations where indicated and in some areas, certain gluten free food available on prescription.  So for lots of reasons, if you can get a diagnosis it's worth it. I hope all goes well with your appointment, let us know how you get on.
