CHICAGO, Illinois (AP) -- And another thing about McDonald's fries: They're not gluten-free.

Not long after disclosing that its french fries contain more trans fat than thought, McDonald's Corp. said Monday that wheat and dairy ingredients are used to flavor the popular menu item -- an acknowledgment it had not previously made.

The presence of those substances can cause allergic or other medical reactions in food-sensitive consumers.

McDonald's had said until recently that its fries were free of gluten and milk or wheat allergens and safe to eat for those with dietary issues related to the consumption of dairy items. But the fast-food company quietly added "Contains wheat and milk ingredients" this month to the french fries listing on its Web site.

The company said the move came in response to new rules by the U.S. Food and Drug Administration for the packaged foods industry, including one requiring that the presence of common allergens such as milk, eggs, wheat, fish or peanuts be reported. As a restaurant operator, Oak Brook, Illinois-based McDonald's does not have to comply but is doing so voluntarily.

McDonald's director of global nutrition, Cathy Kapica, said its potato suppliers remove all wheat and dairy proteins, such as gluten, which can cause allergic reactions. But the flavoring agent in the cooking oil is a derivative of wheat and dairy ingredients, and the company decided to note their presence because of the FDA's stipulation that potential allergens be disclosed.

"We knew there were always wheat and dairy derivatives in there, but they were not the protein component," she said. "Technically there are no allergens in there. What this is an example of is science evolving" and McDonald's responding as more is learned, she said.

While the company wanted to make consumers aware that fries were derived in part from wheat and dairy sources, she said, those who have eaten the product without problem should be able to continue to do so without incident.

The acknowledgment has stirred anger and some concern among consumers who are on gluten-free diets since it was posted on McDonald's Web site.

"If they're saying there's wheat and dairy derivatives in the oil, as far as anyone with this disease is concerned there's actually wheat in it," said New York resident Jillian Williams, one of more than 2 million Americans with celiac disease, an autoimmune disorder triggered by gluten.

"They should have disclosed that all along," she said. "They should never have been calling them gluten-free."

It's not the first time McDonald's forthrightness has been called into question concerning what's in its famous fries.

The company paid $10 million in 2002 to settle a lawsuit by vegetarian groups after it was disclosed that its fries were cooked in beef-flavored oil despite the company's insistence in 1990 that it was abandoning beef tallow for pure vegetable oil.

Last February, it paid $8.5 million to settle a suit by a nonprofit advocacy group accusing the company of misleading consumers by announcing plans in September 2002 to change its cooking oil but then delaying the switch indefinitely within months. Reluctant to change the taste of a top-selling item, McDonald's has continued to maintain for the past three years that testing continues.

Asked about the status of those efforts Monday, Kapica said: "It's a very high priority and we are very committed to continuing with testing and lowering the level of trans fat without raising the level of saturated fat. ... It's a lot harder than we originally thought but that is not stopping us."

McDonald's shares rose 3 cents to close at $36.36 on the New York Stock Exchange -- up 8 percent in 2006.

That was the response I got from McD's. Then they point you to the Celiac Sprue website who did an analysis on the fries. You can make your own personal decision from there. Personally, because McD's has not been forthright in the past, I would not consider this place safe.

Instead of people suing McD's just boycott it - the more people just don't go, the more it will hurt their sales. It is all about the sales.

    • Sure, you should consider getting tested for celiac disease.  There is no test for Non-Celiac Gluten Intolerance or Sensivity.  However, you have to be consuming gluten daily for at least 12 weeks as ALL celiac tests require you to be consuming gluten.   Learn more about testing: http://www.cureceliacdisease.org/screening/
    • Welcome Isabel!   It is hard having celiac disease, but after a while it does get easier.  Just so you know, I am an adult, but I am a Girl Scout Leader, have a daughter who is 16 and one of my daughter’s friends was just diagnosed with celiac disease just three weeks ago!   Social events can be hard, but you can bring some food that is actually better than just snacks.  If I am going to a friends house, I can bring food and reheat it in the microwave.  I also have a good thermos that I can fill with Spaghetti, chili or soup.  I also bring ice cream and keep it in the freezer.  One of our troop members is really allergic  to nuts and milk, yet all her friends (true friends) accommodate her.  For example, I make some pretty good gluten free, dairy free, and nut free brownies for her.  At our troop meetings or camping, we never bring nuts.  She is never left out.  Now, we are working with our Newbie celiac friend.   My daughter and I took her a care package, so that she can start baking gluten-free chocolate chip cookies.   Short!  That is me.  Not everyone with celiac disease is short.  You may find that you end up growing more, but remember, genetics plays into it too.  My brother grew after high school!   I think that you probably see your doctor often, because they want to insure that you are following the gluten free diet.  Consider yourself lucky because some people do not have access to medical care.  They must manage this all on their own.   Take care and be safe!  Do not give out too much private information (did I say I was a Mom?”)  be patient and some other teens should show up in the other sections, but you can always ask anyone here a question.   P.S. Check out celiac summer camps.  Google it.  Imagine a ton of kids just like you!    I wanna go!    
    • I have two suggestions. First try switching to mostly natural gluten free foods. It makes the diet much easier. Second, i know you said you know the consequences, but really think deeply. in some ways, gluten is poison to your intestines. it literally eats away at it! so next time you think about eating gluten, think what you are really putting your body.
    • I’m in middle school and here is my story of celiacs. i was short all my life and had mild stomach aches. Finally, about a year and a half ago, my doctors realized it was celiacs. The blood tests came back positive for it, so i got the endoscopy. sure enough, i had celiacs. it is so hard for me for many reasons. 1. at social events it is so awful to not be able to eat anything except snacks from home. 2. I am still very short and it’s embarrassing! 3. i have to go to the doctor every 3 months for lots of blood work. Is every celiac’s life like this or just mine? Can anyone help me cope with celiacs?
    • Hey I’m around the same age! I get it and feel the same way. I was diagnosed only over a year ago and my celiacs very hard to deal with at social events. But what ever you do, don’t cheat the diet! The consequences will come back. I’m here to chat if anyone needs support
