Salmon Patties

Salmon Patties

14 oz. canned salmon

1 small onion, sauteed

1/4 cup gluten-free bread crumbs (or corn meal, or almond meal)

1 egg

1 TBSP lemon juice

1/2 cup frozen green peas (optional)

salt and pepper to taste


Mix all ingredients. Cover and let sit in fridge 15-30 minutes.

For patties:

Form salmon mixture into hamburger size patties, and fry in a combination of very hot butter and oil (or margerine). Only turn once, after bottom is browned and crusty. Can freeze and reheat

For casserole:

Spray 8-9 inch round casserole dish with cooking spray, and press salmon mixture into dish. Spray top of mixture before baking. Bake at 400 degrees for 30 minutes.

Hey Sara! Looks good!

When I'm out of bread crumbs, I substitute peeled, grated potatoes! (3 small-med.--don't let sit in fridge, they turn brown...) It works great!

Spices like marjoram, dill, or garlic really add a nice flavor.

And, you can bake the patties in the oven for less fat. (Pour some oil on a baking sheet. Make patties. Bake at 350 for 15 min, turn and bake another 10 min.)

I tried this recipe with crawfish tails and it was yummy!, but I had to use 2 eggs to get them to stick together.
