Edy's has Pumpkin Ice Cream (limited edition) which is really quite good! I served it to company with ginger snaps. I personally prefer ice cream in the winter with a good movie. B)

Did they make the cinnamon this year? So good with apple pie or just cooked apples!

Yum..must explore. Ooooh, wouldn't that be good on pumpkin pie??? :P(<licking lips.) I'm bringing a Smithfield Honey Ham, cornbread stuffing and a crustless pumpkin pie to my daughter's in-laws.

i ate too much

First, somehow, my microwave burnt the broccoli O.O so it had to be pitched (replaced with not totally cooked carrots)

Then i somehow oversalt my plate. So i toss the mac and cheese back into the pot stir it in (this is why i don't season whilst cooking most of the time) and put more on my plate. Was good, but every so often i got a bite of salty

can't win for loose can i?

Tomorrow I am making:

Korean Scallion Pancakes with Homemade Nuoc Cham

Lemongrass Shrimp with Spicy Thai Chile Sauce

Thai Mung Bean Noodles with Vegetables and Spicy Chile Sauce

Topic of conversation: Food, no doubt, as usual! :) Hopefully I can skirt the Christmas-with-the-inlaws-issue without argument. :P

Oh, for pete's sake, Addy! I told you a thousand times, it's not leftovers, it's "encores"

Cats do not care what we think..I have worried myself sick over Bella when she wanders....and she always comes home.

and finally....make pumpkin muffins, or bread or pie....shakes are not that great in winter...

They are okay in the summer, but in winter, nah.....they are fleeting and cold...It's like reading a sexy novel, with the window open in December.....goosebumps, shivering and no satisfaction.

I may have said leftovers just to be annoying. :P I also am obsessed with milkshakes, year round. I just can't help myself.

Hey, just have lots of champagne and you won't give a hoot about the cheesecake!!!

Sadly, I do not partake. But the rules don't forbid me from cooking with it! You drink my share, I'll stick with pictures of cake I can post on my facebook to make everyone jealous. My family I'm sure is missing me and my baking from 2000 miles away. They have no idea how awesome being gluten free is, but I make sure to rub it in every time I cook up something yummy. :D

Let's see, you admit to being obsessed with ponies and milkshakes. Nothing wrong with either of those. Enjoy, toots! ;)

Dinner tonight:

Burgers and sweet potato fries.

Mom's coming for the week....she is tough to cook for. Think: Plain. Think: no spices, herbs, onions, etc. Think: 3 ingredient dinner.

(and BTW, that was SkiLisa's rule...like most younger sisters, she's keeping mum and letting me take the blame for it. I was pretty sure that was not my rule....But it's good to know I have not completely lost what's left of my mind):D

To go with my husband's insane work schedule last week and this week, a busted car! Okay, maybe not busted but acting funny so I had to drive him to work today because he hates driving my Jeep. (Fine by me, I hate feeling trapped at home.) So anyway, instead of breaking out the waffle iron for turkey and waffles I think I'm just going to be 100% lazy tonight. Leftov...... Encores again. :P We'll do turkey and waffles tomorrow when I have more get up go.

Sweetie, we requested the change of topic title so no one felt "pressured" if they went slightly off topic talking about their day or their reason for choosing their dinner.

It does not mean (literally) that we expect to know what everyone is talking about during dinner. Some of our members eat alone, after all and some members just relax and do not talk much during dinner..

We meant the title to be interpreted as a " what's for dinner...and feel free to chat" thing.

we mean it like this....we post our dinner plans and we chat..we post our dinner plans and we chat (about everything from muu muus to an ideal gluten free compound)

Okay everyone? we just want it to be a safe place to talk about food. Good and healthy and nourishing food. :)

hope this makes sense.

Yes, IH! I just typed that in sort of tongue-in-cheek. At our house we do not exactly plan our conversations!

Anyway, more on the gluten-free compound location. What are your considerations? Mine are as follows:

- warm climate (such as Croatia)

- beautiful scenery (such as Croatia)

- wondrous food and ingredients (such as Croatia)

- surrounded by sea (for example, Croatia)

- amazing ancient art, culture, language and architecture (did I mention Croatia?)

- welcoming people - bet you can't guess where I'm thinking of!

Not too sure who "we" is/are, but WE had pork tenderloin, slathered with grain mustard with roasted potatoes and carrots. Great on a cold and windy day.

I like the idea of loosening up the topic. Good thought! And a thought for some future threads. :)

I used the word "We" to refer to the people who requested the change --and there were several of us---so people felt comfy talking about anything they like---- along with their dinner plans. Like muu muus or gluten free compounds.

We--are those who do not worry that much about staying on topic because sometimes a little chit chat is FUN. Hope this clarifies my use of the word we. :).

I agree.

Like Ba-con!! (I am not sure why bacon gets a bad rap from the medical community-- so many of us seem to think it is nourishing and healthy and so good.

I know that you know what I meant. ;) and it sounds like maybe you're inviting us all to just build right next to your place. Karen, maybe we have our "secondary site"!

    • Are doctors even getting close to diagnosing the actual number of cases of celiac disease? Or are they missing the vast majority? Researchers have said for some time that there are far more people with celiac disease than are being diagnosed, and that the vast majority of case go undiagnosed. If a new study by Canadian nutrition researchers is any indication, most cases of celiac disease remain undiagnosed. View the full article
    • Thanks for your input, everyone!  I will get tested soon enough for this condition, and I will definitely update you all when the results finally come in.
    • Have you had a sleep study? I have severe sleep apnea and used to sleep 12 hours a night and still was exhausted. Falling asleep at a stoplight exhausted. I do not fit the typical male and overweight stereotype either! But my cpap keeps me more well rested and alive. A sleep study is easy and it's the cost of an office copay.
    • Have you ruled out the common Keratosis Pilaris (KP) also know as chicken skin?   https://www.aad.org/public/diseases/bumps-and-growths/keratosis-pilaris
    • Squirmingitch brought up the macaroon idea, I find Zsweet, and Swerve Sugar Free sweeteners do not throw me out of keto and I use them to make my "treats" You might sub it in these if your like that idea. I personally just use coconut and almond meal in my baked goods with high fat nuts like walnuts and pecans (Walnuts and pecans have so much oil in them you can butter then in a blender or food processes into a pour able sauce that can be used as a dressing or mixed with eggs and coconut flour into a dough)

Also brought up batch beans....bad idea for keto, but to integrate a keto version, try cooking a roast in a crock pot, or a whole bunch of chicken breast. You can eat on it for a week just serve it over greens. Or Miracle Rice (zero carb rice) Batch cooking will become a life saver. (works with some foods) and meal preps give you time to just grab a pre fixed meal out of the fridge and go if you need to do something later in the day. First year I was gluten free I did this daily for myself before meat became a issue (I look forward to doing it again).
CB brings up the issue of selenium and melotonin. YES this is a huge thing and completely evaded my thoughts. I consume massive amounts of seeds, like pumpkin, sancha inchi, hemp all high in these in addition to flax and chia. I tend to rotate my seeds to prevent intolerance issues and only the roasted ones. Look up GERBS allergen friendly foods for pumpkin, hemp, flax, and chia.  I suggest the ground flax under meals as the seeds I notice have issues, I personally always have to cook my chia, and flax seeds into egg dishes or I can not eat them. If you blend them in with the eggs  1-2tbsp seed meal to 1 1/2 cups eggs -1/2 cup almond milk 2tbsp coconut flour and some almond butter and stevia to taste let it set up 5-10mins then blend again you have a batter for pancakes/waffles/doughnuts/breading batter. >.> something like this I whim it as a chef.

I was thinking of another think I like to snack on. Rythem Super foods roasted kale and the kale chips in moderation. I also crush the kale chips up and sprinkle over eggs as a condiment, Adds plenty of vitamins and the ranch flavor for this is amazing.
