Homemade corn tortillas with spicy beef filling, melted cheeses and green onions. Jicama, daikon and broccoli slaw.

Mango for dessert.

Simple but good. :)

Pasta (ancient harvest veggie pagodas) with roasted red peppers, chickpeas, peas, and artichoke hearts. Flavored with: pecorino romano, oregano, basil, chili flakes, and olive oil.

Homemade chicken and rice soup pulled from my stash in the freezer. And I have a loaf of banana bread in the oven, which smells so good (made with my favorite Pamela's Baking & Pancake Mix).

Baked pork chops with Butternut squash/ Rutabaga mash

Ooh, I never thought of mashing butternut squash with rutabaga! Yum. I bet that's good! Thanks for sharing.

That sounds yummy! Care to share the recipe?

Sure :) I make mine in a 13x9 baking dish--it's actually more of a pizza casserole. You can take the "dough" ingredients and after mixing, spread it out in a greased traditional pizza pan for a more pizza-like dish.

About 3 cups of grated zucchini (squeeze out as much moisture as you can)

2 eggs

1 cup shredded mozzarella cheese

2 tablespoons sharp grated cheese--I use Pecorino-Romano

Combine these and put into a greased baking pan. Bake at 400 for about 15 minutes. (10 if using a pizza pan)

Remove from oven and top as desired. Our favorite is tomato sauce, sausage or pepperoni, sauteed green pepper, and more cheese.

Put back in oven and bake at 400 for about 30 minutes (20 if made in a pizza pan) or until browned and bubbly.

Oh I have seen something similar with cauiflower before for a low carb crust. Too bad I can't eat cheese. I wonder if this would work with vegan cheese or just with egg and zucchini. I love zucchini. Hmmm....I shall have to play with it sometime. I want to go back to a low carb diet eventually so I will keep this recipe in mind. thanks!

It's a very forgiving recipe. You could absolutely do it without cheese. I was dairy free for 6 years and during that time ate my pizza cheese-less. This would be good with just sauteed veggies and the tomato sauce. Actually now that I think about it, you could fool around with thinly sliced potatoes and spinach, etc.

Tonight we're having baked Maui Maui, brown rice and a salad of lettuce, mango, avocado, roma tomato and red onion slices. I just had all those things to use up and so I thought why not make a salad. I'm just going to use olive oil and a splash of lemon for dressing.

That's what I am having... first time posting here because I am not very creative... BBQ steak (it's a smokin 36 F outside.. time to break out the barby) and caesar salad... yum!

    • Look at carreggenan. I am a super sensitive Celiac and have the same auto immune reaction to anything made with seaweed, “the wheat of the sea”, such as MSG, carrageenan, agar and sodium alginate. The food industry is putting it in everything, even so called Misbranded gluten free foods. Even some coconut milk brands now are using it as are nut milks. It is a cheap emulsifier, so we do not have to shake things up! How about shaking up my whole body from it! You may have an iron defiency anemia not being treated or tested. Cookbook doctors treat numbers not patients clinical presentation. I have fired five doctors in eight years for stupidity and dangerous lack of clinical acumen which could have killed me. Do not be afraid to ask questions and confront doctors, you are after all the customer paying for their services.  Eat clean, meaning preparing your own foods. Stay out of restaurants! Gluten free is a joke in most restaurants if you are a celiac. And will cost you weeks of illness. Hang in there. Make bone broth, it has super vitamins and minerals and loaded with pre and probiotics. Go to Dr. Axe’s site. I only do chicken made with feet. I am allergic to beef since being bitten by a deer tick in 2011 and getting Chronic Lyme disease. The chicken feet bone broth is also loaded with calcium and is yummy. Takes a little work, but is well worth it. 😊

    • Some of that brand are gluten-free ,  but they will say they are.  Some of their  bars are not gluten-free because they do not use gluten-free oats.     If you are eating non- gluten-free oats or products made  with them, there is a possibility that some are actually gluten-free and some aren't.  So maybe a small amount of gluten has built up until it bothered you?  Or you got lucky until recently?  For a Celiac, some people don't feel a response until  their antibodies have built up from repeated gluten exposures.     Maybe it has nothing to do with gluten...
