Dry Ingredients:

180g Certified Gluten Free brown rice flour

105g Certified Gluten Free cornstarch

90g Certified Gluten Free Tapioca flour/starch

50g dried milk powder Marvel etc (use better than milk {rice or soy} powder for Dairy Free)

2 Tbls of Sugar

1 1/2 tsp of Xanthan/Guar gum

1 tsp of salt

1 tsp of Vitamin C powder for baking

1/4 tsp of ground white pepper

1 sachet of dried yeast

Wet Ingredients:

330 mls of milk (use a non dairy variety for Dairy Free)

6 Tbls of vegetable oil

2 large eggs

1 tsp of lemon juice or vinegar

Method:

Combine all the dry ingredients EXCEPT the yeast and set aside.

Combine in a seperate bowl all the wet ingredients (mix well)

Add the wet ingredients to the bread pan first.

Then add the dry ingredients and stir with a non-metalic spoon (to avoid damaging the non-stick lining)

Finally sprinkle the yeast on top.

Switch on bread maker to quickest bake time (usually No. 1 on machines without a gluten-free setting)

Baking takes up to 3 hrs in total (depending on machine).

Do not leave baked bread in pan to cool as the steam will make the crust soggy.

Remove from pan and allow to cool completely on a rack before slicing (don't forget to remove the paddle).

My Breadmaker is a Morphy Richards Fastbake 48268.

recieved as a gift from someone who never used it (it was still unopened when I recieved it)

I will be trying this in a 2 pound well-built.

I love to smoke pastrimi, but it's not right without bread and mustard.
