I had tuna salad with pickles/red bell pepper. Instead of mayo, I used an italian salad dressing with no soy! Stuffed into a toasted Udi hotdog bun. Chips and to seem healthy. raw carrot sticks :D

Wow, that sounds great. Do you put butter and cinnamon on your sweet potato, also? That's what I do with brown sugar. Love it!

I had M&Ms, sliced apple with 365 crunchy peanutbutter, and water. I'm on spring break and was proofreading for a new magazine. No time for a big meal

This morning I made some amazing Italian breadsticks that remained soft on the interior with a lovely brown crisp crust. They were excellent for dipping in good olive oil and balsamic vinegar, of course. With them I softly scrambled eggs together with chunks of slightly spicy pork sausage and a sprinkling of fleur de sel.

A home made quinoa burger ( not sure why the call it a burger when there is no meat in it ,lol)

I am trying quinoa,again ( hoping to be able to add it to my good food list) ,, I need the protien now that I am eating less and less meat .

Just curious - what held it together (the binder)? I'm getting into quinoa a bit more as well. Do you have this book? "Quinoa 365"...

The recipe used egg and flour ( I used rice flour) as a binder.

I did use the cottage cheese but I did not use the cheddar cheese . I increased the amount of quinoa in place of the cheddar cheese. And I am sugar/sweetener free so I just left out the sweetener

Sounds good to me! How did you like the crust?

I loved it. It's the thin one (I did not like their thicker one). It was frozen, I brushed it with olive oil and baked it a little till just a little golden on the edges, then baked it with the toppings in a 475 degree oven. I'm a fan!

    • Almond flour has a lot more fat in it than regular flours. It made out of nuts/almond which are fatty

Is there something special about almond flour? I have combined a few different different recipes, and came up with recipes for vanilla wafers, and ginger snap cookie. The texture is great. In trying to bake low sugar, vegan, and gluten free; getting the texture right has been the hardest part. Using almond flour, I am getting great texture. Also these cookies are sugar free. I wonder if I could use almond flour for oatmeal cookies? FWIW: Ingredients for either vanilla wafers or ginger snap 1 vegan egg 2 tablespoons coconut oil 1 cup Almond Flour 1/3rd cup sugar-free pancake syrup & 2 tiny spoons of stevia tiny spoons are those stirrers you get at McDonalds 1/8 teaspoon Salt 1/8 teaspoon baking soda  For vanilla wafers add: 1 1/2 teaspoons vanilla  For ginger snaps add: 1/4 teaspoon vanilla 2 teaspoons Ground Ginger 1 teaspoons Cinnamon 1/8 teaspoon Ground Cloves 1/8 teaspoon Ground Nutmeg Instructions Preheat oven to 350 degrees F. Line a baking sheet with parchment paper. In a medium mixing bowl: mix vegan egg white and melted coconut oil Add other ingredients Freeze dough for 10-15 minutes. It should be firm, not frozen. Place dough on baking sheet. Gently place another sheet of parchment paper on top of dough. Use a rolling pin to flatten out the dough a little. Do not smash too thin. It should be about 1/4 inch in thickness. Remove top piece of parchment paper. Use cookie cutters of choice to create your cookie shapes. Carefully scrape away excess dough from cut outs and use for another cookie. Bake for 15-20 minutes. For softer cookies remove from oven promptly. For crispier cookies turn oven off and leave cookies in oven for an additional 10-20 minutes.          
    • A couple of days gluten-free probably won't matter.  but it doesn't work that way.  It isn't gluten in your system" they are testing for.  Gluten is not in your blood.  It is the antibodies your body makes to gluten that the blood test looks for.
    • yeah , i might try go tomorrow if I can find out - i literally stopped 2 days ago so unikely to be out of my system and if im due to go for a test tomorrow I could maybe try eating something witha bit of gluten in tonight or something to "top up" as it were
    • I was completely floored by the realisation after I went gluten free of just how badly it had been affecting me. Before then I had all these different things which I was either barely coping with, ignoring, trying to pretend they weren't there etc. I went gluten free and suddenly all sorts of different things started to resolve. It blew my mind! Try and get a blood test now before cutting it, its so much easier than going back on it for a gluten challenge.  If the test is negative, don't assume its not an issue for you. My test was negative but I responded to the diet.  Lots of help and advice here if you need it Best of luck! Matt
