I do feel a lot better than before my DX and I’m eating 100% gluten-free, and am taking 25 mg of Dapsone a day, every time I try to stop the Dapsone, I break out. So not worth it, guess my body needs that wee boost, but I’m still only about 60% of my former self.... But! We WILL get there. Have faith. 🙏
I finally found a good bread and have been enjoying toast at breakfast for the last 3 days. Xanthan gum has given me problems in the past and I generally avoid it - I thought I would give it one more shot with Canyon's cinnamon raisin bread as it had good ratings. I was doing okay until today when I was stricken with the worst abdominal cramping, bloating and di. Looking at the ingredients of the bread it seems like xanthan gum is rather high up there, generally it seems to fall at the very bottom. Does it seem to you that there might be a bit more than the normal amout of xanthan gum used in this bread? And I'm wondering if anyone else has had a problem with Canyon Bakehouse. I was so happy to find a good bread and I hate to give it up but I can't go about feeling this bad.

I am really sorry you struggle with this too. It is really rough. I thought it quite unusual the fact that her symptoms are worse weeks down the track. Thank you so much for taking the time to share some of your story with me. I cant tell you how helpful it is to hear that someone else has a similar experience as my daughter. This disease is perplexing indeed. My other daughter with Celiac Disease has very mild reactions after eating gluten.

Yes, I react to dairy. I have had some pretty weird experiences after consuming dairy. Yep, I would wake up in a panic with scary spiraling thoughts.
Also vitamin and mineral deficiencies can sometimes alter your brain functions and cause altered mental states (like the B vitamins niacin, B12, and thiamine). Because these vitamins are water soluble, they can be lost or used up quickly when you're exposed to dairy or gluten, leaving you deficient and foggy minded.
