I have been gluten-free for over 1.5 years now (self diagnosed - blood work was negative) - adjusting nicely to the diet. My health was great for awhile, but then I started having symptoms again - mainly skin problems, depression, anxiety. If I try to stay strict on a no sugar/no carb diet, I feel ok. But today, I had half a sandwich (Udi's gluten-free bread) and some potato chips (all items strictly gluten-free). About 20-30 min later, my eyes are burning, I have a headache, my lips sting, and my head itches like crazy. This isn't the first time this has happened. Had some rice with dinner a week ago, same thing. Had a couple glasses of wine, same thing. I know I have a problem with Candida, but will that trigger the almost immediate reaction? After having a couple drinks watching the football game on Sunday, I realize it is the cause of my anxiety - I was a mess the whole day Monday. I am taking probiotics everyday along with antifungals and digestive enzymes. I know I need to be more strict with the carb/sugar intake for the Candida diet, but this is getting crazy. Meat and vegetables is easy for dinner - lunch is the hardest meal for me....oh and that crazy time after dinner when all you want is a snack - I've been surviving on cheese, but I only like the GOOD cheese, so it's getting expensive (and technically not supposed to have it on Candida diet anyway). Just wondering about the allergic type reaction.

I was thinking it might be sulfites, or something similar. I can't eat Udi's nor most potato chips for that reason. Udi's due to the corn syrup; most processed corn as well as potato products are sulfited in the processing. As for the rice, the enriched rice has corn starch or something similar that many with sulfite sensitivities have to avoid. Not sure if you had white rice or not? I think I've been o.k. with rice, but I usually do a mix of brown and white rice. Wine also usually has added sulfites, in addition to the natural sulfites.

    • FOUND my sugar cookie recipe from way back when....THANK you for reminding me I also found a recipe for choclate sugar cookies, fudge balls, and even a sugar cookie cake recipe in my old binder I am wanting to make again. Here is my old recipe tell me if it works out Sugar Cookies
      75g Almond flour
      1/8 tsp salt
      1/8 tsp baking soda
      30g (2tbsp) maple or lakanto
      2tsp almond milk
      15g (1 1/2tbsp) coconut oil melted (nutiva Butter flavored)
      1 tsp vanilla
      few drops of almond extract helps bring it out
      And sugar topping/icing 1. Mix your liquid ingredient aside from the milk and oil, and heat slightly (this is so the oil will mix in later)
      2. In a separate bowl mix up your dry. Now combine yoru dry and you wet it is going to be a bit dry, now add in your oil and milk this will form d dough ball.
      3. Place your dough ball in a large gallon plastic bag an roll it out in the bag into a sheet (this makes it less messy)
      4. Cut open the bag and using a cookie cutter cut out the cookies, and place on a greased parchment paper, put this in the freezer for 20mins while you preheat your oven.
      5. Preheat your oven to 325F, when your dough is done chilling place it on a cookie sheet in the oven for 10-15mins til desired crispiness. LET cool at least 10 mins before attempting to remove from the sheet. then you can transfer to a cookie rack to cool and crisp up more. You can top these with a bit of sugar or sugar sub while they are cooling right out of the oven or wait to chill completely and decorate with icing.

    • Hi, i am suffering from pain in lover left quadrant from 5 week i take appointment with Dr.and undergo USG an they found swelling in sigmoid colon and suggest antibiotics for 5 days after that i start feeling some good but once i restart my exercises than again i start feeling pain at same place pain disappear in morning when i wake up but it start remembering me that some thing is there in left side.  same time i observe my stool is  always soft and smelly
    • The first study linked above by knitty kitty is indeed legit!  Mexican Conacyt is like our National Science Foundation - a prestigious and heavily peer-reviewed federal funding source.  I react to corn and corn flour but not to tortillas and chips.  I wonder if the processing (which I think includes lyming) de-activates the protein?  I have used corn occasionally in cooking, and tend to treat it like a condiment, not a side, but this has me re-evaluating.     Edited comments:  Second study is in a questionable journal, one that has been widely noted recently to be a "pay to publish" Journal.  However there are still legitimate scientists who publish there. Regarding corn in the US: last summer we drove through Kansas and Iowa on a trip.  Wheat was everywhere!  Towns that were too small to have a gas station had a grain elevator.  Guess what was growing right next to wheat fields, grain processing plants, etc?  That's right - young corn plants.  I'm thinking all those grain storage places, farm equipment, even the soil, is completely saturated with wheat!  I don't know if it's a problem, I just know that my son said "oh my gosh mom you could never live here, there is what everywhere"
