Rudi's gluten-free Tortillas

Finally found the Plain Rudi's gluten-free tortillas at my local Whole Foods - they are pretty good! I used to have a lot of recipes that used tortillas for burrito type wraps and I simply don't care very much for corn tortillas (unless I'm making enchiladas of course...but the flavor is masked by large amounts of sauce, cheese and sour cream) :rolleyes:

Anyway, these tortillas are a nice texture - a little stiff, but better than some others I've tried. I did learn today to NOT overheat them as they get overly stiff and chewy. 10-15 seconds in the microwave seems about right depending on the strength of your microwave. I used them today to make chili burritos - held up very nicely! They are in the freezer section, but according to the packaging, can be stored in the fridge or on counter for 10 days - I would keep in the freezer if not using right away though. Just thought I would share...Happy Monday all! :D

    • Yes! Sweat, heat & humidity drove me crazy with aggravating the dh! DH likes to attack pressure points too. Like AWOL said, waistbands & such. I had to get boy shorts type underwear that were seamless ( I like all cotton). they still had a little seam on one side that ran for about 2". That 2" killed me so I figured out that if I wore them inside out, then the seam did not affect me. Forget a bra!!!!!!! NOPE, no way!!!!! Even now, when I wear jeans, the button part at the front makes dh flare, also where they wrinkle at the torso to leg area when you sit down --- I still get flares there. My dh liked to hit scars too. Old scars, new scars. 
    • Bigchan, welcome to the forum! Your narrative is not an uncommon one. Many report that after going gluten free they still show inflammatory disease markers in followup testing. I wish it were the case that going gluten free is the magic bullet that we all have expected it to be at the outset of the Celiac journey. As more evidence mounts over the years from medical science studying this disease it turns out it is more complex than was first thought. Gluten may not be the only trigger of inflammation for a lot of Celicacs. And there is something called refractory Celiac disease (unresponsive to a gluten free diet, no reversal). Sorry, I don't mean to discourage you. And certainly, don't give up gluten free eating. I think there is still so much medical science doesn't know about these kind of autoimmune conditions. In the mean time, do the best you can and enjoy life. Each day is a gift. Having a condition like this can take over your life if you let it. Don't.
    • You could try the gluten free diet for six months then have your antibody levels remeasured.  If the  tTG IgA goes down, it would suggest that gluten was causing your body to make that antibody.  Celiac damage can be missed in an endoscopy.
    • Be forewarned & print this article out & take it to the doc with you. Many people with DH have no digestive symptoms and only about 40% of them have the positive blood tests (serology) for celiac disease. However, they almost always have the same, gluten-dependent intestinal damage as those with the more common symptoms of celiac disease.  From: http://www.cureceliacdisease.org/faq/what-is-dermatitis-herpetiformis-dh/ To reiterate...... that is 60% of those with dh test negative on the celiac serum panel.
    • Yeah I found "scents" Cologne and artificially overly smell things make me feel nasiuated and sick. I love just baking spices in the oven as it is the only fragrances I can stomach in my house....Heck that one time I spilled Italian seasoning and vacuumed it up....OMG my house smelled like olive garden...it was wonderful...other times i just put some apple pie or pumpkin spice on a foil sheet and preheat my oven with it then turn it off and open the door...

      As for other scents natural orange scented body wash does not bother me...I found orange is a small I tolerate well. I did end up making my own cologne ....this is odd but I got some leather oil and mixed it with refined coconut oil and dab it on my wrist, neck, ....funny but I love the smell of that fresh leather. Perhaps this might work with say essential oils for lavender, or orange?
