This made a great chocolate cake - moist and somewhat high...and my 3 year old loved it (but its a tad bitter without frosting which I made w/ margarine, vanilla and powdered sugar to be dairy free so I could eat it)...ironically, my 3 year old is not gluten-free - I made the cake for me and she and my hubby ate it all! The recipe is from Bob's Red Mill gluten-free baking flour:

    1/5 cups Bob's Red Mill all0purpose gluten-free baking powder

    1 c brown sugar

    1/2 c unsweetened cocoa powder (not dutch)

    1 t baking soda

    1 t xanthan gum

    3/4t salt

    1/2 c milk (i used rice milk)

    1/3 c butter, margarine or shortening (I used canola oil)

    1 egg

    1 t vanilla extract

    3/4 c warm brewed coffee

    preheat to 350. place all ingredients, except coffee in large bowl and blend with electric mixer. add coffee and mix until thoroughly blended (I found the batter rather gummy, but it works). Pour into prepared pan and bake for 30-35 minutes or until toothpick comes out clean!


  2. I have been gluten-free for about 6 weeks now, and dairy free for 5 weeks. Just getting to feeling a lot better, and yesterday I broke down and had a starbucks eggnog latte (telling myself it would be a test.) Well, I prepared myself for the worst stomach issues all day yesterday, but they never came. I was excited until I woke up this morn with typical lactose gas, bloating, loose poo, cramps. I always thought lactose int. was supposed to show up nearly immediately or up to 5 hours later. I had the latte at 10am yesterday? I also find that the smallest amounts of milk bother me - even if its only a tiny ingredient in a product? Has anyone else experienced this?

    b...day 1 without gluten...

    I felt great about a week in - and then felt worse...who knows if it was cross contamination, other problems (lack of sleep and a cold) or just a withdrawal process. After I started feeling poorly again, I went dairy free...and now, about 6weeks in have gone soy free (1 week off that) and now feel AWESOME! So, either it took the 6 weeks, or I finally hit the magic combination. I also found that in the first month, I experimented with gluten-free packaged foods a lot...and now am eating just cleanly (fruits, veggies, meats, rice, some gluten-free pasta). I think the amount of packaged foods was still hurting my system - so keep that in mind as you go forward.


  4. So I have been reading all kinds of things on this board ,and its all wonderful. So now I have another question.

    Although some of my numbers are great, I still get some bloating and have constipation. I am taking iron pills daily, also calcium, vitamin D. What else should I be looking for, I was keeping a log of food I was eating. I am going to restart another log. Could that be another form of intolerance? Any Suggestions?

    Lactose could definitely be the culprit - but I found my bloating was worse when I went gluten-free and lactose free. I found SOY was the issue for the bloating (the gluten-free and lactose eliminated my other symptoms, however)! I haven't gone soy free (meaning, I don't worry about it as a minor ingredient in some foods), but I avoid large quantities of it b/c it definitely was making me feel about 6 months pregnant!


  5. I'm fat and I've never been like this before. I've always been active but now I'm tired and I binge...I need a structured program like the Zone. Does anyone know anything about it? Or maybe another diet that structures your food? I could use all the help I can get.

    I've done the Zone diet in the past - prior to being gluten-free; however, I would think it to be VERY easy to do without gluten. I used it after I had my first baby to lose a little of the weight hanging on...it worked. The thing I found with the Zone diet was it required a lot of thought for each meal to get the right proportion of carbs, protein and fat - but if you are up for those calculations, then your carbs for every meal can come easily from rice, potatoes (sweet) and vegetables. Easy meals that I really enjoyed during the diet were cottage cheese, blueberries and slivered almonds; salads with chicken, avocado and a few other veggies tossed in; grilled fish with sweet potato and a green veggie. GOOD LUCK!

The best way for telling if adapting a "real" baking recipe to gluten-free will work by just changing the flour to an all-purpose gluten-free flour is - if the result is a batter there won't be any noticible difference in taste - if it's a dough then it will need additional ingredients for it not to be grainy or crumbly.

    That's helpful, THANKS! I made my first chocolate gluten-free cake the other day (dairy free too) and thought I'd be eating it for weeks b/c no one else in the family would touch it. Well, it was gone in less than 24 hours (and there are only 2 adults and a 3 year old in the house)! The recipe I used had xantham gum - do you find you need it?


  7. Regular day looks like:

    Breakfast:

    eggs or egg white scramble

    turkey bacon (wellshire farms has a good one)

    smoothie of soy milk, protein powder,banana and frozen berries

    snack - peanut butter on a rice cake or Lara bar

    Lunch: roast chicken breast with lettuce, avocado, tomatoes etc or homemade soup (lately butternut squash as its in season) with a light salad or roast salmon with roasted veggies and a sweet potato

    Snack: some fruit, maybe some nuts, or gluten free crackers

    Dinner: I cook a lot, so we always have variety...last week we had osso bucco with risotto, lamb stew with quinoa, chicken in a garlic white wine tomato sauce with brown rice, sauteed tilapia with quinoa pilaf and roast carrots. I usually serve a large salad with dinner.

    after dinner: soy ice cream, or frozen mango slices

    Lots and lots of dishes are gluten-free - but I've only been at this a month and in the beginning all I could think of to cook were gluteny foods! Its that "because you can't have it" thing! Good luck


  8. I am having problems thinking of some good quick convienence foods for our 11 month old (8 months corrected age). We gave our older daughter allot of gerber products or quick desolving crackers but as we all know they seem to be full of gluten. I want things that she can feed to herself.....she has just started this so she needs things that desolve easily and quickly. What gluten free options are out there for her....healthy options are preferred. Thanks for any help.

    I have a 10 1/2 month old (corrected age 9months!!) - who is not needing to be gluten-free, but some of the snacks we use that I know are gluten free:

    bits of cheese

    cut up banana (if you are not into messy, well, not so good an idea)

    enviro kids cereals (some of the puffs (Gorilla & panda) are gluten-free--do know panda is peanut butter if that is an issue)

    enviro kids crispy rice bars (there is a peanut butter and a cocoa flavor)

    small pieces of gluten free bread - it often falls apart anyway, so its very manageable for baby

    firm tofu cut into small bits

    peas

    freeze dried fruits (the corn and apples are made by gerber and I believe contain only corn and apple...just veggies also makes a line that is freeze dried and I've seen at Whole FOods...expensive, however, but they have just about every veggie/fruit you might want)

    clementines slices cut in half

    very very very soft carrot chunks (cut too small for choking)

    bits of chicken nuggets (Wellshire Farms makes a gluten free, whole breast, all natural one that his sister likes, so he gets some too)

    small bits of turkey/ham...also gluten free all natural

    grapes - peeled and halved

    chunks of canned/jarred peaches, pineapple, mandarin oranges (again, messy - but you have a baby, how clean can mealtime be???)

    small bits of mango

    sweet potato fries (toss sliced sweet potato w/ olive oil and roast on a cookie sheet in 425 oven for 20-25 mintues (depending on thickness)...salt if you like.)

    most teething biscuits I've seen are full of gluten as are arrowroot cookies etc. I'd be very wary of raisins - they are awfully hard to chew at this age. This baby is MUCH more adept at eating things than my daughter was..his 23 lbs shows it...so I would be careful when introducing some of the food I suggested - you know as you are already a parent - just keep an eye out. Hope this helps!


  9. It's really hard for me to tell if it's because I'm nursing, if it's my body trying to adjust to being gluten-free (I've only been doing it a couple weeks), both, neither ??

    Whatever the cause, it's rather irritating. Especially because I really believe one of my symptoms was weight gain, so I'd really like to lose weight - and NEED to lose weight as I'm about 50 lbs. overweight. I will admit, I've been going a bit buck wild on the gluten-free junk food lately because I'm so thrilled to be able to eat that stuff and not get sick for the first time in my life (or at least in many years)! :ph34r:


  10. Has anyone else had problems with not getting a period for a very long time? I have not had one (except for when I was on the pill for a while) in quite a while. I know I'm at a low weight right now and that could be part of the problem, but I don't get it even after gaining some weight. I don't know if I ever want to have kids but I would at least like to have the option. Is this something that is common with celiac disease or should I be more worried and see the doctor about it?

    I am now 35 with 2 kiddos, but had a very very irregular period for most of my youth (I would go months (read 10-12) without one. I was regular when I was on the pill too - but as soon as I went off it, I never got my period. We tried off and on for 2 years for a baby. I did have big issues with infertility with my first daughter, but with a lot of assistance of fertility drugs, was able to get pregnant finally. That was about 4 years ago. When I finally weaned her, I became very regular - and was able to get pregnant with my son rather quickly. I did use TOni WExler's book (someone else in this thread recommended it). I am not a confirmed celiac, but do think gluten intolerance had something to do with it...the female body is incredibly intuitive and very sensitive to what it perceives as inadequate environments for a fetus. Gaining weight might help you, but don't necessairily expect it to...you might want to see a physician to have them help you bring down your period (with progesterone) and if that doesn't work, they will probably check your thyroid, check you for premature menopause - all the fun stuff. Its best to know...before you get too far along. Also, remember that periods are there for a reason - it is important to shed the lining every month - if you are not, it can build up and a d&c might be in order to clean it out (that happened to me as well). SO, I guess I would recommend going to a doc - just to be sure all is okay. Good luck!


  11. she was talking about ayervedic medicine - which is grounded in tantric philosophy and is part of yoga practice. Ayervedic medicine "types" your body and determines according to an extensive analysis of skin type, body shape,personality trait, etc. what foods are postiive for your system and which are regressive. I don't follow it, but do know it has some merits (ayervedic practices have been around for hundreds of years). I don't quite know how it would apply to celiac & detox b/c all the body types can have grains that contain gluten, but some more than others...however, that is where she was coming from...


  12. I live in Colorado Springs and there is a bakery here, "Outside the Bread Box" that has great crackers - and they ship. It is a dedicated, gluten-free bakery.

    I would recommend you google the name to get the website - I really like the cheese and the "saltine", but they also make a wholegrain cracker that I have not yet tried. Their other products are great...i just devoured an entire pie (5", but still). Funny, before I went Gluten-free, never wanted pie...


  13. I am very new to this, and have only been gluten - free a few days. BUT, in the past, I have noticed that after I eat a number of almonds (like a handful - 1/2 a cup, not a spinkle) that I tend to have the very symptoms you mention. When I was trying to narrow down what was causing my problems, I often thought it might be almonds (along with soy and dairy...now I believe it is gluten) I don't know if almonds I'm getting (from bins at whole foods) are tainted with gluten, or if its a separate issue. I usually get the unsalted, raw ones and roast myself....

    I can't offer any help, but I empathize and am too interested to learn if anyone knows anything.


  14. I'm sure this has been posted before, but sometimes I like to be away from my computer!!! and still want a resource. I found "gluten-free living for Dummies" and actually really find it helpful. (except for her rant about the caveman diet). She gives tips on everything from keeping your kitchen free of cross-contamination, the diagnostic process, recipes, eating out, dealing with manufacturers. I recommend it to all new people (and it probably could be helpful to veterans in some ways too!) (and I don't work for the company.)


  15. I have found enviro kids cereals to be tasty gluten-free options (the ones listed gluten free of course!). I especially like the Panda puffs (a captn crunch knock-off), and actually ate the whole box of cereal myself even though I bought it for my daughter! The koala cocoa rice cereal is okay as well! I find them at Whole foods and some mainstream grocery stores...


  16. Congratulations on your pregnancy!

    You may have been glutened, BUT do know that the hormones related to pregnancy do a wonder on the gi tract. Not only do these hormones loosen up the joints etc, but other areas - including the intestines. It is not uncommon to have runny stools with pregnancy. Just make sure you take in enough fluids to compensate. Gas will also increase with pregnancy! I had both of these symptoms...no morning sickness however.

    Feeling crummy - well, yes, that's part of the first trimester, so do keep that in mind. I slept so much with both my pregnancies...and the second one I felt even worse (don't know if it was b/c he was a boy, b/c I already had a 2.5 year old to chase around, or just b/c I was probably already celiac...just not diagnosed)!

    Hang in there. And do know, it's supposed to get better in the second trimester (I have to say though, I never had the dramatic change in energy that is purported to happen!)


  17. Has anyone ever noticed that on $40 a day she totally shortchanges the tip ALL THE TIME? She bugs me...so I have to find fault with her. Also, I find it odd that she mentions her broths are gluten-free as all of her products are "made up". I saw on "FOOD NETWORK UNWRAPPED" (I watch too much tv, okay) that she doesn't advertise the products she actually uses so there is someone who is employed to create and design the wrapping and packaging for all her products (to cover the real product). So...is she implying all broths are gluten-free? I think its actually not as great as it may seem!


  18. I tend to be a little overly sensitive, not to the fragrance themselves, but to the fact that I know those fragrances are poisonous!

    Dryer sheets are an "issue" in our house, b/c my husband loves them, and I think it just emits a film that then is stuck on the clothes/sheets/towels so you wear (sleep in, dry in) poison. But, we have compromised. I found Meyer's dryer sheets at whole foods, and they are supposedly natural. The ones I buy are lavender scented, and can be potent out of the box, but when put with the clothes in the dryer are rather faint in smell.

    I do a lot of cleaning with natural products - Meyer's all purpose is a favorite. I also use just plain old baking soda to scrub pots and pans and like white vinegar (watered down) to clean countertops and the like. The vinegar is stinky at first - but quickly fades.


  19. my doc too was unspecific - they said don't quit eating gluten before hand, just eat normally - but as I mentioned before, I just naturally avoid a lot of gluten-laden foods, so I was trying to determine what is a normal gluten intake! Thanks for those updates.

    And, Carla, I do think the diet will do me good - and be a diagnosis one way or the other, but as I said many times before - I'm having trouble letting go of having that medical "nod"...I'm trying.


  20. What was your IgA and total serum IgA ?

    I don't know...I just know the IgG was elevated, but not tremendously. I do need to find those numbers out.

    I will go forward with the biopsy, but it is kind of silly b/c I know I will try the gluten -free diet anyway b/c instinctually, I really believe that is my problem.

    I truly do appreciate all your support and help on this site - and personally to my question. Its so stressful and all-consuming when you know something is wrong with your body and it seems like you are on the cusp of defining it. I may have to let go of having the perfect diagnosis...as many on this board seem to have done sucessfully and just let my body tell me what it needs.


  21. Thanks - you have a good point, regarding purposefully damaging an organ...I have had the blood panel done, and my IgG is slightly elevated (which is why they then have recommended the biopsy). I'm just not feeling great with all the gluten, and so I think it does make sense to go back to a gluten-lite diet. I grew up in a "medical" household (dad is a doc), so its hard for me to let go of the "diagnosis factor".


  22. Hi everyone -

    I am having a biospy next Tuesday and would like a definitive diagnosis. How much gluten is recommended prior to biopsy - I can't seem to find an answer. I really have eaten gluten light for months now...just because I don't eat a lot of bread, pasta or crackers (or other baked goods). I know I get a lot of hidden gluten - and in the past week, since I've learned I will need the test, I have upped my intake (and my body is none too happy for it...)

    any recommendations?
