  1. I would suggest trying things you've never eaten before just because you never felt like you needed to for variety. I've learned to love new vegetables. Using new spices and vinegars can add lots of variety to your food even if you're using the same basic ingredients. I could eat rice every night of the week and never have it taste exactly the same. Get a good cookbook or peruse the internet for new ideas. You could just google "quinoa recipes" and find all kinds of new things. Try quinoa (or even quinoa flakes) with fruit, nuts, cinnamon, etc for breakfast instead of cold cereal and milk. I'm not sure what you're specific sensitivities are, but I have lots of them and on top of that I'm veg by choice. I go through periods where I am bored, but mostly I'm getting to try new stuff all the time. Feel free to post or send me a message with your sensitivities and I'll see if I have tried anything that you might like. Good luck

  2. Are you interested in making homemade tortillas? I have a good recipe, I am sure you could use brown rice flour.

    Definitely! I made some last night and they tasted pretty good, but weren't tortilla-like (too dry/hard). I'd love the recipe. Thanks :-) And I'm actually not sold on brown rice as being the best, they're just what's been available. I really would love to make something using at least partial bean flour for the protein. I'm a gluten-free/soy-free vegan and add protein to staple foods where ever I can.

    I happen to have a TJoe's bag right here.

    Ingred: brown rice flour, filtered water, tapioca flour, safflower oil, rice bran, vegetable gum (xathan cellulose), sea salt.

    Made on equip shared w/ tree nuts & soy.

    They're not in the refrig section @TJoe's btw.

  4. I did a search and didn't see this anywhere on the board...I hope I'm not duplicate a topic. But I'm wondering...am I the only one having a hard time finding the FFL brown rice tortillas? There used to be 3 grocery stores in my area that carried them and all of them have been out for at least 2 months. I asked at WFM and the purchaser said he keeps ordering and they just don't come in. I've emailed FFL twice and gotten no response.

This was strictly a graphic/visual thing. There is this "golden ratio" in the math world. It is present in nature. It is widely believed to have been used in art and architecture and to be universally thought of as most aesthetically pleasing. So that's what my paper was about. Obviously since I just submitted the paper, I haven't gotten a grade on it, but I've gone ahead and posted it in case anybody cares.   6. Thanks everybody, I'm still collecting data. But somebody (tom)here is pretty quick and on top of their math! It's just a short little research paper (supposed to be 2-3 pages...but I can hardly write a letter that's only 2-3 pages!), but when I'm done I'll give you more info and might even post the paper on my website. The survey part is a little something I added to the boring "do internet research" stuff, so that it'll actually mean something to me!

    I'm sorry for the short notice, but if you have a couple minutes to help me out - that would be great!

    A short (6 questions) survey for a research project.

    The first question is just male/female (be sure not to miss it, i didn't design it very well!)

    Then the rest are groups of graphics (lines, squares, circles, etc) and all you need to do is choose the one in each group you find "most attractive"

    If you have a chance to do this today or Saturday I'd really appreciate it. (We were only given 2 weeks for the project and I've been fighting with formmail for the last week!)

  8. How do you make your chicken nuggets?

    I've actually done this with turkey, but would do it the same way for chicken. I can't have eggs either, so I make the flax seed egg replacement. Then I roll the turkey nuggets (cut breast cutlets to the right side) in that. Eggs would work if you can have them. Then I make a mixture of quinoa flakes and whatever gluten free flour i have (usually i use something other than quinoa as it tends to be a bit strong...amaranth or millet is the most likely for me to have) and coat the "egg" covered nuggets with that. Then heat oil in a frying pan and pan fry the nuggets. I don't "deep fry" but turn the nuggets on each side. At least in my mind this method soaks in less fat ;-) Yummy! I usually use olive oil, but it smokes A LOT so you'd probably want to use an oil with a higher temp tolerance.

    Last time I made turkey nuggets, I mixed some agave nectar and dijon mustard for tasty sauce. Problem with the sauce is that I ended up eating more of the nuggets than I should have just to finish it. Funny, it didn't make me eat more spinach salad that I had put it on as a dressing. hmmm....

    I'll have to do a little experimenting as i don't use much corn and am allergic to eggs. But the basis sounds really good and pretty easy. Thanks :-)

  10. My favorite at my local Chinese restaurant is General Tso's chicken and I haven't gotten that quite figured out yet. And at least next week I'm going to do a vegetarian/detox diet so it'll be a while before I get that. But since I've got the "soy sauce" pretty close and I know how to make "chicken nuggets" I think I'll get it eventually

    BUT...I finally made something that tastes like Asian food! And without gluten, soy and sesame that is not an easy thing!

    I made a sauce of blackstrap molasses and balsamic vinegar. (About 2Tbsp molasses and 1-2 tsp of the vinegar). Then I added salt, fresh ground black pepper & crushed red pepper. Would probably be good with a little cinnamon or ginger too, but I don't think I added them this time.

    Then I thinned it out with water to a thin soy sauce consistency.

    I stirfried in safflower oil - fresh broccoli cut in small florets and water chestnuts.

    In another pan, I browned ground beef (would be really good with chicken too)

    Then I mixed those two together and poured the sauce over it and cooked it until the broccoli was soft enough.

    Put it on bibb lettuce leaves (they were a bit small, so you might want to try somethlng larger...either iceberg or cabbage?) and wrap.

    To go with it I mixed brown rice and frozen peas/carrots with a little bit of the same sauce and apparently I added more red pepper!

    Yummy!!! :P

    Oh, and btw, my mom had some. She's not got problems with gluten or soy, and she still loved it, unlike some of my creations!

    For those of you who aren't allergic to pineapple, I think a bit of that would have been really good in this too.

    Ooo...I just had a thought...anybody made gluten-free fortune cookies?

  11. I'd also like to suggest probiotics. All those antibiotics have likely killed all the good bacteria in your gut, too, so you'll want to replace those.

    Are you trying the diet? If so, you might want to eliminate dairy for a while, too. In fact, a very basic diet where you slowly add in different foods might bee helpful if you think you have other food intolerances.

    Good luck. I'm sorry things have been so rough in recent years, but you'll get your diagnosis if you keep fighting for it.

    I second the probiotics idea. I'd also suggest looking into glutamine powder. It's really good for the health of your intestines. Unhealthy intestines affect everything else in the body. I hope things will improve for you soon.

  12. I've been wanting to try this product for awhile and I have a gift certificate to Sephora so I figured I'd give it a try. But I was wondering for anyone that uses this, can I still use products from other brands, such as my Nars Blush?

    I used to use the mineral veil with whatever other brand(s) of makeup I was using at the time. I only quit using it because I found out a few of the ingredients are no-nos for me. It was great stuff!

  13. I expect almonds would work - the flavor would be a bit different but probably just as good. You probably should use blanched almonds.

  14. I hope you don't get a major reaction!

    But just because you don't this time, doesn't mean much for later. Last year after being about 6 mos gluten/dairy free (right after dx) I went out of the country where I didn't have any choice about what I was served to eat. So I ate everything...with no reaction. The cravings started back for those things and I was ok, so I totally abandoned my gluten-free/df diet. BAD IDEA. It was just downhill for the next couple months until back into depression, anxiety, and constant pain. It hurt to even put my feet on the floor in the morning. After 3 mos being gluten-free again it still does hurt to get up in the morning sometimes.

    Barring some miracle, we're not just going to be healed of this. So one ingestion of gluten that doesn't go wrong doesn't indicate that you have been! Don't beat yourself up over it because today is over, but please learn from those of us that have messed up similarly and spare yourself the pain :-)

  15. Good for you...fire away! I had my gall bladder removed (there were some problems there, but after the surgery we figured out not THE problem) the a little while later I spent months on an acid reducer and had such bad chest pains that I ended up having tests leading right up to a heart catheterization!. Thousands of dollars later (which I'm STILL paying the deductible on) I fired my dr. too. (actually I fired two in a row) I did an internet search for a holistic dr and it's the smartest thing I ever did. Gluten isn't my only issue, but it is one of the major ones. She WANTS me to be off medication and to feel well as much as I do. I've been able to get off diabetes medication and cut my BP medicine from 150mg per day to 25mg per day. Another 30 lbs or so and she thinks I'll be off that altogether. While I admit dr's are a lot more educated than I and know a lot more about a lot of things, we know our bodies! I hope your search goes well. Ask lots of questions and make sure you find someone who LISTENS to you :-)

    I am allergic to milk, so would need to use a replacement for the buttermilk. Any suggestions?

    When I bake I usually use almond milk - would this work, with maybe added vinegar for the acid???

    I haven't tried it, but I have read that you can do that. Or use lemon juice with the almond milk. I tbsp per cup of milk

    Momma Goose, I wish I had been more active on this board a month ago...I was just on a weekend vacation in Edenton! It's certainly a lovely town. I was staying in the historic district just a couple blocks from the courthouse and the sound.

    I have been contemplating it for a while. This also will cutdown on dishes and having to wash my hands so much. Running back and forth becomes so exhausting. I need to be able to spend more time doing my work and studying. Finding balance is important. Right now, there is no balance. Something has got to give! My biggest thing I am craving is Chinese.

    It is my lifeblood. The spring rolls take some work, because of the chopping and shredding, which I am not the world's greatest at! I am going to have to practice!

    after reading your signature line, i was going to ask if you had any good gluten-free/soy f Chinese recipes. I like Chinese food and have pretty much given up ...i'd give anything for a good General Tso's chicken. Well, maybe not anything, but it would be worth a lot. Especially since I've got a pretty heavy case of PMS going on today! lol

  19. I have a boyfriend. I don't think I ever meantioned that I have a boyfriend. He's great. Only problem is my mom doesn't allow him to come over to see me, so I call him on the phone and go out with him when I get the chance. He's very open to this diet and he tries to eat gluten free just so I don't feel bad. He's offered to let me stay at his place because my family isn't very understanding of my illness, and that we could clean up his place and live gluten free. But as you may know, I am living in a house with a strict mom, whom I listen to even when she's wrong.

    She does not want me to stay with my boyfriend, who I will most definately marry someday. I'm angry because my mom gives him such a hard time, and he knows this. I'm 20 years old and I can move out if I want to. But you just don't know my mom...She'll have a panic attack and call 9-1-1 and make it look like i was kidnapped or something >< (not kidding).

    I believe that things would be better if I stayed with my boyfriend because he is willing to help in any way possible.

    (btw, thanks everyone who has taken the time to read about my lame complaints and outrages)

    Wow, now having somebody who tries to do this diet with you? That is a blessing! Everything is easier with somebody that will do it with you.

    And you don't have to feel that your comments are lame, we've all been there and it's great to have somebody to listen to us, so it's our pleasure to do it for you :-) Take care and let us know how things are going.

  20. If one more person says "but you look great, you have lost so much weight, don't you feel lucky that you have a disease that makes you LOOSE weight?" I might actually hit someone.

    I have wanted to respond: "yeah, its great to have to go to the bathroom 6-8 times a day, and feeling like someone is punching my abdomen repeatedly after I eat. Its AWESOME to know that I am eating tons but loosing weight (and hair) cause my body is damaged and malnourished. Do you want to start this "diet plan"? I can shove my fist up under your ribs and you can see what it feels like."

    I usually try to tone it down a bit, but it makes me so angry that I usually turn red... to which someone says "you don't look sick, you always have color in your face."

    One of my favorites is "but how much could possibly be in this little tiny cookie?" or something like that. Well meaning, loving people who just don't get it!

    I am going to have to start doing all of my cooking for the week once a week. I cannot keep this up. It is exhausting!

    You just do not have the energy for other things when you are obsessively cleaning and cooking all day. I definitely need to start doing this! That meal you posted sounds great! I am going to keep that in mind for a meal!

    Glad to hear that you think this will help you. It's amazing how much less time I spend in the kitchen and how much better I'm eating. In fact, this week I have enough stuff in the freezer from earlier that I didn't take out, that I might not have to cook at all. I had family in over the weekend and didn't get to, so I might just get to skip it :D I'll decide if I'd rather keep it for a busier week and cook this time. But the cool thing is I GET TO decide!! I did buy a little lamb roast the other day, so I might just have to try that lamb and prune tagine I've been wanting to try...mmm...I'll pass that along if it turns out well. I had one in a Moroccan restaurant once and have been wanting to try to make my own since. It will fit perfectly into this new plan I think.

  23. One nice thing about this board is, whenever you need a cyber-hug, there are lots of them here. Everyone here either is going through what you are, or they already did, or they are about to. When we joined, the experienced ones supported us , and when you are one of the experienced ones, you will be supporting the next round of newbies!

    That's definitely true. I've had days when I could hardly move that people encouraged me that it would be eventually over. Before I was dxd, I thought I was dying...for years.

    It does stink. Nobody is trying to take that fact away or push you beyond what you want to do. And my health insurance's deductible is so high and my dr out of network so I also understand the financial strain of it. But, as far as the slip ups go...it is most assuredly NOT easy to eat gluten-free, but every time I fix food I have to make a decision. Do I want to feel good today or not? In fact I'm not just gluten-free. Like a lot of people on this board I'm gluten-free, Egg free, dairy free, soy free and LOTS more. I can't even eat potatoes or strawberries. I'm allergic to chemical versions of Magnesium which is in nearly every medication known to man, so I get a sinus infection and have to get shots. I love good food, I love bread, I love eggs and milk. But I love my life more. I've experienced nothing worse than the depression, the anxiety, and the pain that comes from these problems. And I've experienced nothing better than figuring out what was causing it and being able to make a CHOICE as to whether or not it would improve. It's not a week long commitment, it's for a long time and for most of us it's for forever. But it is your CHOICE. You might feel out of control of a lot of things, but if gluten is the bulk of your health problems, you ARE in control of this. Just ask yourself if you want to feel good or not. Sometimes I've been stuck in places where it was better to be sick and miserable than to venture into something I don't know much about or don't think I've got the energy for. We all want better than that for you!! :-)
