I found a cookbook called Sugar-free, Gluten free by Susan O'Brien that has some great recipes. (I have been a Type 1 diabetic since the age of 26. I am now 37.) I didn't make turkey, everyone wanted ham. Can I have ham? I sure have enough left over and I didn't eat any at dinner.
I made roasted veggies and stuffing with quinoa from the cookbook. Also red potatoes, and corn. I was just diagnosed mid october and am still learning. I am enjoying the new recipes, I was in a bit of a cooking rut before. Is irritability normal? I am off the charts! Definately not myself, alienating everyone, almost like there is some sort of imbalance. Well, enjoy the leftovers.
