  1. I recently went back to eating gluten-free and immediately had tons of energy and started going to the bathroom again! (was chronically constipated). A few days ago, I ate over a friends house and she cooked this chicken with roasted veggies for us. She said the chicken was pre- marinated at the store when she bought it.. I also had been eating yogurt, but I for two days straight around there I started eating cheese in my eggs- After these two days, I stopped having ANY BMs and I feel AWFUL.

    Could itve been gluten in the marinade or maybe I need to also stay away from cheese (I had cheese a few days before that with no probs though so i dont know..? I had no problem with yogurt and I am not eating any other dairy.

    Also, I am currently trying to raisemy dosage of Armour thyroid because I have hypothyroidism, and I have no idea what's going on.

    My other complaint is chronic mouth sores (canker soreS). They seem to be appearing every time I take my b12 sublinguilly, but I'm not sure. Anyone ever have this?

    Ok, next question: I know there's no way hubby's going to go gluten-free along with me. I have a hard enough time getting him to eat veggies. <_< Is the toaster oven the best way to avoid CC? Hubby likes to have his toast and the occasional bagel and I'm concerned about this. Maybe putting foil down on the toaster oven tray when I make something would help to avoid CC?

    Still trying to figure out the details.

    You sound like me with the constipation and sinus problems your whole life. I actually do have hashimoto's disease (I have extremely high antibodies) and I definitely react to gluten. (no test though)

    My husband said he doesnt want me to be sick. When I first started a gluten-free diet, wed been together for four months and I was living at my moms for a month and when I moved here after him (to Hawaii, hes in the Navy and came first), he basically was on my case if I wanted to eat gluten. I never even had an official test done, but he knew i felt sick and he would be like, "WHat? No, you know you feel better now. No gluten."

    We were eating a lot of meats and cheese- and some fruits and veggies. I bought myself gluten-free waffles and he really liked them (i actually bought him regular ones though bc the gluten-free ones are so expensive and he eats SO MANY!). I also ate gluten-free cereal. He still ate pasta once in awhile, but for the most part we stayed gluten-free.

    Eventually i went and started eating it again (yes i felt sick) and he was happier because we could eat whatever again and go out to eat a lot. When I told him I was going gluten-free once he left on deployment, he kind of groaned about how our foods not as fun..(weve been eating KFC, cheez-itz, lots of pizza, pasta, deep fried stuff- so unhealthy)

    BUT. I know he'll eat whatever Im eating if thats what we buy in the grocery store.

    Some stuff he eats all the time are sf popsicles, drink mixes like kool-aid, gummy bears, lite string cheese, lime sherbert and pasta. LOL, i didnt realize what a big kid my 29 yr old husband is. He also plays his xbox 360 pretty much every day. ;D

    Anyway, just TRY it with your husband. He doesnt have to give up everything he loves, but let him try some new things and also, I dont know what kind of junk he eats, but some stuff, like some ice creams/chips/junk like my hubby eats/ is gluten free naturally anyway. Learn all you can and educate him.

    I know not every spouse is gunna care or be nice about what has to happen, but I think its very important for your spouse to WANT to help you be healthy!! When you love someone, you don't want them to suffer- ever.

  4. Yes I have been having pain in my right and left sides of my upper back sometimes so bad that I can't breath and then I will try to stretch it out and it somewhat goes away. Little tringes in my abdomin sometimes does hurt. I do have a family history of gallbladder issues with my mom and grandmother and possible sister too. I did have D last night I think what may have triggered it was the Yohoo chocolate drink that I drank I forgot about the milk in it I'm kinda thinking that could have been it but it could have been other food that I ate that was not gluten free. So thanks ya'll for your input.

    Well, if you are having pain, you should definitely get that checked out whenever possible. Its not normal. (of course could the pain be a reaction to a food you shouldnt be eating or something maybe??)

    My husband had green poo once.. but it was after he ate a HUGE amount of vegetables for a few days straight, when normally he barely eats any. ;) It didnt happen again,

  5. i think you ought to test the waters a bit. i seem ok eating a bowl of oatmeal every morning (did that for awhile when i ran out of grocery money last month, and had no more cereals). i'd just be aware of how much you're consuming, and watching to see how it affects you. i'd also keep a couple different kinds of cookies on hand, so you're not just eating oatmeal ones :D

  6. Actually when baking, lemon juice will help keep it juicy, but lemon pepper is what I use on the stovetop. For oven chicken, lemon juice, salt, pepper, garlic, whatever you like! I would be simpler with chicken breat, but when I do legs with skins on, I put a crapload of spices all over the tops, after squirting a little lemon juice. Basil, parsley, oregano, garlic, paprika, salt, pepper, rosemary. My dad used to call it forest floor chicken. Bake uncovered at 350 for 30 min and check, usually takes 35-45, depending on how much you're making. Also, burger patties with lots of cheese on top and sauteed soft onions with peas is one of my favorite meals. Adding squash to any meal will help make it more filling, too. Acorn squash, butternut, zucchini, yellow. I like using spaghetti squash as spaghetti instead of rice pasta. It soaks up more sauce than pasta though, so beware! Try slicing butternut squash in inch-thick slices (the bigger ones taste better) and laying flat in a pan, sprinkle with cinnamon and nutmeg and drizzle with honey. Bake those the same time as the chicken! The squash usually takes a little longer though.

    Those're a lot of good ideas. I recently bought a crapload of cheap spices at the commissary because I am trying to avoid using too many condiments (ranch, etc) and cheese. I forgot about spaghetti squash!! I made it twice for Juan. Both times I added extra mushrooms/onions garlic to the classico sauce!! HE LOVED IT! thats definitely one that I will be making more of a staple. He's free to still buy/make himself the regular pasta he likes on the days I dont have anything he wants, but, he really liked the spaghetti squash and its really filling and makes quite a lot- so- if thats available, I am sure he will eat it!

    (he tends to eat a lot of pasta with sauce and ramen noodles if we dont have a meal planned. Its quite awful. I want to avoid it and not buy it at all!)

    ps. he actually REALLy enjoys cooking and when I was working instead of doing school, he usually cooked our dinners. When I stopped working and took school online, I started making the food. If we establish some menus we both love, I know he will be cooking them for us, too, if I get busy! (right now, he likes to use margarine, breadcrumbs, pasta, sugar ;) lots of good but not that healthy of stuff)

    Seriously, you are a completely wonderful person for wanting so much to take care of your hubby. And tell him a stranger on the internet said thank you for protecting us!

    For recipes, I have lots and will post more as time goes by, I don't have much time right now. The best place to searchis in the baking and recipes section farther down the forum page.

    One of our favorite filling dinners is pan-fried zucchini (in butter, NOT oil, tastes funny) with any chicken and rice. Just salt and pepper the zucchini, or add yellow squash too, and make your rice in the cooker, and maybe pan-fry some lemon chicken?

    I love him so much and I just want us to be happy, healthy and live a great life together. He has never been one to gain weight, so while he knows fruits and veggies are healthy, he doesnt know much about nutrition past that! Since its become sort of my hobby, I can do a lot of good if I develop some good habits!

    Can I bake lemon chicken? What do you put on it besides lemon juice?

  8. Hiya! This might be a little lengthy but I dont think there is ANY other post on here quite like this one that I can reference. Please Help!!

    Ok, My husband is on deployment to the Middle East right now. I am sensitive to gluten and feel much much MUCH better when I dont eat any of it. My husband apparently has no such problems, but when I was buying gluten-free stuff, he pretty much ate what I ate.

    Problem is: The first time I was being gluten-free with him, I was eating a lot of cheese, meat and stuff like gluten-free cereals/waffles. I would buy him regular waffles and make them. We ate bad stuff like bacon a lot.

    I started eating gluten again with him and we ate HORRIBLY. (Pizza, chips/candy/soda/JUNK~!)I felt sick, too, obviously. Once he left I started gluten-free again and feel better,

    Heres my problem:

    Ok, I am currently eating only vegetables, fruits and eggs/seafood/some red meat/chicken and nuts (not peanuts just almond butter and other nuts)- olive oil, apple cider vinegar- herbs/spices. I use butter and sf coffeemate with my coffee. Eventually I am going to be adding back in brown rice, polenta and some gluten-free cereal again.

    I had Hodgkins disease (lymphoma-cancer) when I was 16 and now i also have Hashimoto's disease (hypothyroidism)- I am trying to get healthy again (I have been feeling extremely sick these past months) and I am eating like this and taking lots of supplements in order to build up my immune system and hopefully feel great!

    I am actually also worried about all of the vaccines and chemicals that my husband is CONSTANTLY around/receiving. I am scared that when we start having children they might not be healthy. (seriously, hes in planes alot- and some of the vaccines they make him get have caused birth defects in some babies, even when its the father getting them!)

    I am trying not to stress about it- as there is nothing I can do about having had chemo or his being exposed to this stuff-- I know that a lot of military people go to iraq and also get these drugs and they still have healthy kids and they are still healthy themselves... ITS JUST-- I can help my family be healthy at least in one way. I can control most of the food that we are eating. We eat at home most of the time anyway and if I can develop some great recipes and habits while he's gone, I hopefully can carry it into when he comes back and he'll like what I am cooking..

    I find that I am always feeling really hungry on this diet and I dont know how to make good salads and cooked veggies!!! I just don't. My husband loves his light string cheese and I dont mind feeding him that, but I want the bulk of our meals to be veggies- with some meat and fruit and some gluten-free grains (he loves brown rice from our rice cooker so that is easy).

    Please offer me any recipes or ideas you have for making great vegetable-based dishes that taste great and are light on the cheese (ill use olive oil and butter- any herbs and spices)-- THEY NEED TO BE FILLING!!

    I feel very dedicated to changing our diet into something that is really really healthy. My husband is 30 years old and prior to this he mostly ate junk and drank lots of beer ;) but- whenever we brought fruit and veggies home, he'd be all over them, finishing them in a few days..

    What Id like is some stuff that we both can enjoy that packs a nutritional punch and is satisfying!

    Maybe my reasons for this seem kind of strange, but I will have some peace of mind knowing that I am doing what I can to keep my family healthy! Its all I can do and I know how eating the right stuff affects my own health, so I want to MAKE it my responsibility to ensure that we put the best stuff we an in our bodies. (I dont think he'll mind as long as the food isnt getting too boring- like i said he'll eat whole foods when we make them)

    I have grass allergies and Celiac both. The symptoms you describe sound very familiar to me. For the allergies, I take an antihistimine and use steroid spray daily.

    I'm on a strict gluten-free diet, of course, for the Celiac. If you do have Celiac, continuing to eat wheat will lead to complications up the road--lymphoma included.

    Here is the Celiac Blood Panel--while you're consuming wheat is the perfect time to have this done. If you decide to be tested, don't try gluten free/lite until after.

    Anti-Gliadin (AGA) IgA

    Anti-Gliadin (AGA) IgG

    Anti-Endomysial (EMA) IgA

    Anti-Tissue Transglutaminase (tTG) IgA

    Total Serum IgA

    I'm going back to gluten-free tomorrow!!

    I read you need to be eatinga bunch of gluten for like 2 weeks to 2 months to get an accurate blood test. Clearly, I'm allergic. I don't understand why I crave the gluten sometimes even though it makes me feel so bad.. hmm

  10. What you describe is EXACTLY what happens to me when I eat gluten. My throat also had that tickle until the entire back of my throat swelled up and I could hardly breathe. My guess is if you eat enough gluten you will start vomiting, and when I did my whole face swelled up and I looked like a cabbage patch kid.

    And what kind of doctor would just assume that you could be allergic to some grasses and not others even though all of them were positive.

    You sound like you have a pretty bad allergic reaction to it?

    My reaction does seem more allergic than intolerant to me... I mean... bc I am not having the celiac symptom of D...

    But even if it IS an allergy, it doesn't seem to be a life-threatening one. I ate wheat my entire life and had chronic sinus issues my whole life.. (mostly a constant post nasal drip. gross, I know)..

    It's not very pleasant.

    I may continue to eat wheat and my body might adapt again and go back to having some low-grade chronic thing instead of this reaction.

    But. I don't know if this means anything. I read white spots and brittle nails could be a nutritional deficiency. I always had that. Once I went gluten-free, I grew a whole new set of nails with NONE of that. I duno if we have a coincidence or what.

    Alright.. I have Hashimoto's thyroiditis... I had Hodgkin's disease (lymphoma) when I was 15. My appendix burst when I was 6 and I had terrible allergies (sneezing kind) til I was about 12 when they started to die down and I sneezed less. but still constant stuffiness.

    Once I was dxd with Hashimoto's (Nov 2006), I started thyroid meds. I still felt fatigue and foggy brain a lot (constipated!).. so after doing some research about auto-immune disease, I decided maybe gluten was an issue.

    tested positive on skin allergy test for wheat and soy.. also all kinds of wild grasses, mold and dust mites, so doc said the wheat wasnt a "real" reading cuz of the other grass.

    5/13/07- started gluten-free diet. I messed up maybe 3 times ever... until last week. I thought I felt a little better.. but the fatigue was still bad and my doc has just upped my dosage of thyroid,.

    So I've been gluten-free for 2.5 months and now I'm not.

    I started by eating some cheez-itz.. Nothing too bad seemed to happen, so I was like.. hmm maybe I was wrong.

    Then a day or two later I had a plate of pasta. Nothing too bad... This wheat stuff tasted like SAWDUST though to me now.

    I started getting low-grade nausea (I've had it for over a week now.)

    I also noticed I had more.. mucous? probs and was sneezing out of nowhere randomly.

    No D or anything.. a little C.

    I was eating a bowl of lucky charms a day...

    I started thinking I might be pregnant or something bc of the nausea!

    I'm not pregnant, though.

    Last night we ordered pizza.

    I ate maybe 2 or 3 pieces and some breadsticks. Felt pretty nauseaus, as usual.

    Woke up this morn with the worst nausea yet - thought I was going to Vomit... and took another pregnancy test,,, Still not pregnant.

    Silly me, ate 3 pieces of leftover pizza for breakfast this morning. I immediately started getting a mild pain in my head(didnt develop into a full-on migraine or anything) ..and then took a nice BM ;) and I went back to sleep.

    Woke up feeling like I needed water so so bad. my throat feels like cotton. I have a SORE under my tongue. like a cankersore or something. just appeared... and the roof of my mouth is itchy and feels hot and swollen! The back of my throat feels funny.. kind of like when the beginning of a cold starts and you sneeze a lot, first you know? thats how my head feels right now, but I'm not sneezing or sniffling.

    I'm not as nauseaus as before though, but stil nauseaus.

    OH! And this morning, another thing. I don't have muscle ACHING.. but in various parts of my body (my arms it seems) my bones/muscles feel .. weak. I don't know how else to describe it. Kind of like when you have the flu and your limbs feel.. umm.. bone-weary or something.

    If this is wheat, I don't WANT to continue this just to get a blood test.

    If I'm not pregnant, though,,, It seems this is the obvious reason for my nausea as it's origination seems to be around when I started eating it again!

    Ectopic pregnancy that the home birth control is not picking up? That's my other far-fetched idea. I'm on BC pills and I have never missed one.. though I have been late (no later than 3 hours tho!) on maybe 4 of them this month. I am on monophasic pills and don't let myself get a period on them...

    I'm sure you are all just like. DUH! stop eating it!

    I just would like some opinions of people. Sometimes I don't feel validated in being so picky and gluten-free.. I feel like I'm being a hypochondriac instead. I just don't think I could cause this kind of nausea or this sore on my tongue.

    Oh yes, that's been me for the past 5 years. My thryoid got REAL bad when I was in L.A. last year. I was in a girl group singing and under a lot of pressure and stress because of it. I used to be extremely smart in school, too, but everything slowly started to slide.. (I actually had a mildly low thyroid for a few years before it got bad,, but no doctor told me that, they just called it "fine")

    Anyway, it got worse and I would have to try to concentrate SO hard just to understand anything. Also, I was very apathetic about everything. I noticed when I've eaten gluten recently that that "apathetic" attitude comes right back and I'm taking naps and avoiding my responsibilities!

    Even before I started gluten-free, the thyroid meds helped me to focus better and actually have some ambition/drive to get my stuff done. The only difference gluten-free is that I am learning everything a lot quicker than I did last quarter!

    Did you doctor check your thyroid!?!??!

    Please tell me he did, so we can rule that out.

    *heart palpitations are a symtoms of HYPERthyroidism.

    *brain fog (and also depression and some other things you can look up) is a symptom of HYPOthyroidism.

    Celiac disease is linked to autoimmune thyroid disease. (I am not sure the exact rate, but it's notable and there is a link)- if you look in these forums, many people have both!

    I HAVE autoimmune thyroid disease. It is called Hashimoto's and it is where your body attacks the thyroid gland, causing it not to work properly. With Hashimoto's, you can go through periods where you are hyperthyroid AND hypothyroid. Mine eventually seemed to settle into Hypo. I self-diagnosed last October and went to my oncologist (I had cancer before too- lymphoma).. and made him test me. That's how I found out I was right.

    I started thyroid meds and the brain fog went away sometimes but I was still fatigued and having it other times.

    Then, I found the connection between auto-immune disease and celiac and so around 5/13, I decided to go gluten-free. I have made some mistakes BUT MY BRAIN FOG is now gone as a result of what I suppose to be gluten-free and taking thyroid meds.

    If you know you do not have thyroid probs, then you just need to be better about eating gluten-free.

    Eating gluten-free is not that much more expensive and you do not need to be taking out extra student loans to buy food. You simply need to be more disciplined in your eating habits. (I say this in the nicest way since I fight with myself every day to try to keep my food costs down and not be lazy and go get easy to eat/make gluten-free specialty foods) There are plenty of cheap foods you can buy at your local wal-mart that are gluten-free (many band names have lists of foods that are gluten-free and they are cheap! Kraft, etc).

    The cheapest diet you can go on is Brown RICE AND BEANS (for your carbs- you want cheap? make them from scratch and make big batches. beans and rice come for $1.50 a bag)

    Fruit and Veggies. You can get the veggies frozen so they don't spoil. Buy fruit a little at a time to ensure you eat it.

    If you eat dairy, yogurt and cheese can be bought fairly cheaply if you buy it on sale and get blocks instead of shredded cheese.

    As for meat, that gets to be the most expensive part. Either buy it when it is on sale and freeze it, or buy frozen singles of meat (I get chicken breast raw or fully cooked and microwave it- it ends up costing me a dollar a piece usually but its worth it to me- you can of course get burgers or steak or fish fillets- frozen fish can be super cheap!) Canned tuna is a good thing to eat. I eat it with lemon juice, olive oil, a lil mustard and spinach as a salad. it's great. Spinach is $2.00 for a big bag. Olive oil is expensive but I only use less than a tablespoon for a salad! That salad is one of the healthiest things you could eat (of course there are questions about mercury in tuna.. so use chopped chicken or steak instead!)

    I often eat chicken or beef with classico mushroom spaghetti sauce. I put kraft parmesan cheese (the kind in green bottle) and eat that when I'm hungry.. They do sell rice pasta that isnt too too pricey....

    I actually cook spaghetti squash and eat that in place of my pasta. IT IS SO GOOD!! seriously. I love it. One spaghetti squash is two or three meals of "spaghetti".

    potatoes are cheap, too, and can be used in alot of ways.

    But I haven't been gluten-free long enough yet to tell if those frozen ones make me any sicker. I guess I'll go off of them for now and test them later when I'll be more sensitive to gluten.

    My mom used to make us our own french fries! just cut up a potatoe and fry it in oil. They are really good!!! My sister used to slice potatoes really thin and then fry those so that they kinda resembled a fry/chip. then she'd put powdered ranch or bbq seasoning on them (I know that stuff has gluten alot of times.. but any kind of powder, whether its a seasoning for meat or a salad dressing mix, would work good if you like the flavor and can verify its gluten-free!)

  15. Do any of you actually trust any food from restuarants. If IHOP leaves the batter out of your eggs but the eggs they cooked before yours had batter wouldn't there be a contamination issue. It seems that that would apply to just about any situation in any restaurant. If employees aren't educated about it how would they know to not put a piece of battered anything down where salad veggies are going to be cut up. I went to Chilli's in Arlington, TX. I asked for their gluten free menu and the waitress didn't know they had one. She was very nice and went to ask the manager. They had one but had to print it out. On the menu they have a disclaimer. Nothing could actually be guaranteed because of possible contamination issues. Wouldn't that be true for all restaurants?

    I would love to confidently eat a meal out but I don't see enough reassurance out there.

    Yeh, I will never, ever trust a restaurant. I've worked in many, and the one thing restaurants pretty much always have in common is an uneducated waitstaff (that doesn't really even care if you are gluten-intolerant) and also a high turnover. So, even if a place tries to educate their employees about food intolerance- employees are almost always coming and going.

    I worked at Cheesecake Factory and I've seen the vegetables placed in the same water they heated up the pasta with (since the pastas cooked beforehand and is just heated)!

    Things may be separated on the line, but I have never met a cook who would go and wash his hands and super-clean something just to make sure there were no traces of a bread crumb. It ain't happening. Most places don't have time to be doing all that when they are making your food.

    Since I've felt sick after eating stuff that is just "processed in a facility with wheat", why would I risk it?

    I wouldn't want to.

  16. I just inquired about the FritoLay product contamination.. and regardless of what people say, I might try it a few more times, but I am starting to feel like it definitely DOES matter. I've been sick when the bag/box says that stuff.. maybe not all the time, I don't know yet..But I would rather be feeling good than feeling sick because I thought something might be ok. Its just not worth it.

  17. This may sound completely retardedbut it WORKED FOR ME!

    I had TMJ a few years back (clenching my jaw very tightly, especcially while I was asleep,and most likely grinding my teeth)- I got to the point where I couldnt even open my mouth. I literally couldn't open it. I guess my muscles were tense/swollen in my jaw.. I'm not even sure but the doctor diagnosed it TMJ.

    My doctor measured me for a mouth guard because it was supposed to help me while I slept, but I ended up never needing it.

    All I did was this:

    Every single night before I went to bed, I would very consciously tell myself to relax, I would imagine my jaw muscles relaxing and not being tense.. I concentrated really hard on it. I also would stop myself regularly during the day and if I thoughT I was tense, I would have to stop and try to relax myself. Well, it worked. It took a few weeks to get rid of the awful pain, but it went away!

    As for nutritionists. I was sent to one one time, because I was obsessing over food too much (I was always feeling foggy brained and sick and couldnt lose weight and this led to me obsessing and feeling like I had some mental disorder- but I feel validated now because I was diagnosed with hypothyroidism, which explains the foggy brainedness, depression AND the inability to lose weight.. and now I'm doing the gluten-free thing- losing weight and thinking clearly!)

    Anyway, the nutritionist was a complete fool. She literally sent me away because she was frustrated that I knew more than she did.

    Go ahead and send a die-hard food-obsessing person to a nutritionist. I gurantee you that nutritionist will know less that the very educated food-obsessor. At least, in my case it was true.

    Everything you need to know can be found online. You should always cross-reference the stuff you find on a forum and website with other reputable sites, though, as sometimes people are misinformed. Once you get the hang of doing the research it'll be so easy for you.. and, over time, you will automatically know what you can and cannot eat,

  18. So, I have been feeling pretty terrible. This may be because I have been eating A LOT in the last three days..When I say a lot, I really do mean it. I noticed when I have anything really salty/fatty/sugary, I tend to go way overboard and EAT IT ALL!

    One thing I did notice, whenever I "binge" like this and eat a whole bag of cookies or something, I automatically gain three or four pounds and get bloated. NOT SO when I eat a lot of the gluten-free stuff. I had some gluten-free arrowroot animal cookies.. ate them all.. didnt bloat or feel sick at all.

    This has never happened to me before, and it just tells me that I am gluten intolerant since eating gluten causes me to gain so much weight, so quickly.

    Now, I had given up milk after feeling really really sick last time I had some.

    I noticed peanuts give me a stomachache (but they very frito-lay and may be gluten contaminated, i guess)

    I went and had cheese in my eggs yesterday and felt sick.

    I had coffeemate today and cracker Jacks (I know I am just so healthy right now. ugh)

    and i feel REALLY sick today..

    All the sugar!

    Did I mention the M&Ms I had last night?

    Sugar overload.

    It's like this horrible vicious cycle.. I eat popcorn with butter, chocolate with lots of sugar or anything else with sugar or peanuts (with salt) and it's like I'm starving and I end up eating way more than a normal person ought to.

    Am I just hungry because that stuff makes you feel hungry? Or am I intolerant of something?

    I do know sugar makes me have a really bad stomacheache and yet I continue to want it (same with peanuts and chocolate!)

  19. I went to their site and looked up all their gluten-free products.. They do say that all products are made on same line..

    I am pretty sure that

    *Cracker Jacks

    *Natural White Cheddar Cheetos

    *Hot, Honey Roasted, and Regular Peanuts by FritoLay

    have all caused me to have a reaction.

    But!! Now, of course, I have to question whether the Dairy that might have been in the Cheetos and Cracker Jacks.., and the Peanuts, themselves, might actually be the cause of me feeling sick- and not the possibly gluten-contamination.

    Anyone have any experience with their products (I'm sure you have, there is a huge amount of gluten-free Frito Lay products.)

  20. I'm not officially diagnosed as Celiac but I've been on a gluten-free diet for a month now and when I ate some gluten i DEFINITELY reacted. It was pretty awful umph.

    anyway..

    I have autoimmune hypothyroidism (hashimoto's), I have tons of allergies and I had Hodgkin's diease (lymphoma and apparently not linked to Celiac, but who knows)

    Anyway, my appendix burst when I was 5!!!!

    I'm only 22. Hoping to get healthier now so I'll go gluten-free if I think it could be causing all this, u know? My research led me to trying this.

  21. I thought about my Celiac as a "starvation" problem. My body wasn't getting all the nutrients and all that, so it started to store what ever it could get it's hands on, and not let go! Now i'm gluten-free it's still not letting go, but I have also started eating alot fattier and bad (chocolate!) foods.

    Could be....

    Have they checked your thyroid?? An underactive thyroid makes it damn near impossible to really lose weight.

  22. I eat that way also, except I don't do eggs, corn, rice or potatoes. If I just eat veggies, fruit, meat and salad I feel really good. I don't eat rice or potatoe because they instantly bloat me for some reason. Eggs and dairy give me the big D and corn makes me itch. My diet is very limited but I works GREAT for me. It is all about how it makes YOU feel. Some diets will vary depending on each person, but I would recommend eating what make you feel better in the long run. It is usually trial and error for a while until you adapt to what works for you. I have only been gluten free for 6 months but have learned alot about my body will and will not tolerate.     I don't mind NOT eating rice as I find it is a pain in the butt to cook (unless I ca get the kind already half cooked?? I duno if itd be gluten free Ill look it up)

    I just thought giving myself some extra carbs in teh form of rice would make me feel better because other wise the only carbs are in fruits and veggies and beans

  23. I am not one who is going to tell you of the need to test first, there are too many false negatives. Your body and it's reaction to gluten is really the deciding factor. I replied on your other post also, your plan is solid for now. I do want to note on the issue of the cereal, the one you mentioned has a very, very high chance of CC. Do not judge whether it was milk or gluten by that cereal. EnviroKids makes a chocolate rice cereal that is also very good but is less likely to have CC issues.

    The gluten free diet is a very healthy diet for the most part and if you start out like your other post plans for a couple months when you do add processed food back in you will have an easier time telling if you are reacting to it.

    Alright.. I am going to stick to the simplest diet I can. It's an inconvenience for sure.. (Like when i am flying to Hawaii next week.. 17 hours of travel.. what do I eat???!)

    But I am so bloated and in pain right now I think it's definitely worth any inconvenience.

  24. I am really tired of having all these health problems. I'm sick of feeling dirty or sickly or gross- AND FAT AND BLOATED TOO! (and I do sometimes around my significant other with my low-immunity, ill health and gross bowel probs)....

    The only plan that I can see that should alleviate most of my problems, would be to eat nothing but

    -meat and eggs (fish, chicken, beef, eggs)

    -fruit (all fresh fruits)

    -veggies (probably frozen kinds + squash, spinach, etc.)

    -nuts, on occasion..

    -olive oil, lemon juice, mustard, ketchup, tomato sauce, for sauces/dressings

    - rice and beans for extra carbs (probably non-fat refried pinto beans)

    I will really really miss my cheese and my half n half in my coffee.... The simpler I keep my diet, the healthier I should be...right? That's the thought anyway. I'm afraid I'll somehow be unhealthy if I try to eat like this. I don't necessarily like all of these foods I just listed.. I really like my chocolate, yogurt, cheese, milk, and gluten-free baked products.. But I don't want to have to try to question every little ingredient everytime something in a complex diet screws me up.

    What do you guys think?? Could I get adequate nutrition like this? Maybe take a calcium supplement....
