Hello!
My diet isn't oil free, although maybe it should be? I am still trying to figure out what I can tolerate and what I can't. I was vegan before I went gluten-free and now I don't eat any dairy or meat, but I do eat eggs since going gluten-free... I want to cut them out (and go back to being fully vegan) as soon as I get a grip on what I can eat & make a healthy diet out of what's left!
I looked up the McDougall Diet online, it sounds pretty similar to a regular gluten-free vegan diet & so I am interested in it, but it doesn't allow you to have soy products... how do you deal with that? What do you eat for protein?
Thanks!
Oh & I would love to have another gluten-free Vegan to talk with & get recipes from... although I should warn you, I'm not that creative in the kitchen, my "recipes" are very basic & quick lol
Well, I don't know how good the McDougall diet is for you on a long-term basis, but I know that going oil-free for a while is supposedly very good for your heart. I take a capsule of oil everyday though and I seem to be tolerating that okay for now, just so I can get in my EFAs. I definitely know what you mean when you say that you're trying to get a grip on making a healthy diet out of what's left...it seems like I'm trying to create recipes out of the same few ingredients, over and over again!
I get my protein from beans. I eat 2 or 3 cups a day. All different types. Currently I'm scouring the web for gluten free, oil free, vegan bean recipes. It's a bit tough. Haha...
Glad we can relate

Thanks for all of the info
And congratulations on gradutating!
I'm going bike shopping soon...my grandma is getting me a "beach cruiser" bike (or something like that haha) as a graduation gift. That's one of my favorite things about Davis. I don't like driving much, so I think it's fantastic that everything seems like it's walking distance, or biking distance at least.
I think we're heading up to visit Davis soon, and I think I might try out the Thai restaurant. I'll let you know how it goes! What do you usually order there?

I'm actually going to school in Davis
I'm SO SO excited!
Any advice for a gluten free vegan that's a soon-to-be resident of Davis?

Hello all. I am new to posting but have been reading/registered to this blog for months now. I stumbled upon a great bread substitute & had to share it...
I had a small amount of Bob's Red Mill gluten-free pancake mix left over & decided to try & make the badder off the top of my head - it was not nearly as thick as it should be, but I was desperate for pancakes so I used it anyway. IT WAS SO GOOD!! I ended up with a bunch of large, thin pancakes that make a great bread substitute!
I had always put things other than maple syrup on my gluten-free pancakes but these are different, they're like crepes. I put pb&j on one & Tofutti better than cream cheese & berries on another and folded them like crepes - delicious!!
I don't know exact measurements as I was just adding away, but I highly recommend adding more milk/soymilk to make the badder thinner.
PS I replace the following items: soymilk for milk & applesauce for oil
I do the same thing with the "Crazving's Place" pancake mix! How funny, I thought I was the only one. LoL. I also thought I was the only one who substituted applesauce for oil in everything...is your diet oil free? Mine is, besides the one small capsule of EFAs that I can tolerate once a day.
I also noticed that your name has "veggie" in it...are you a vegan? I'm also a vegan...so basically I follow the McDougall diet (fat free and vegan), but gluten free.
I just thought I'd ask, because perhaps we could trade advice or recipes

In Santana Row in San Jose they have a Pluto's and they look pretty celiac and vegan friendly. It looks like I can make a salad (even though I dont know WHAT the heck I'd put on it for dressing lol) and I heard from a friend that you can get a baked potato there and dress it how you please, but on the menu online it doesn't say that (or at least I don't think it does). So does anyone have any suggestions, or want to share any experiences?

I've been gluten free for 6 months now and im JUST trying to take vitamins again. I'm still pretty sensitive to them, even though they're free of the common food allergies. My doctor says it's not uncommon for people with a lot of GI damage to react to vitamins, because there's so much in there to react to. Does anyone have a solution to this, or has anyone found a way to get in essential nutrients without reacting?

So being vegan AND gluten free is going surprisingly well! I actually feel GREAT! Thanks guys
The only thing is, I'm having trouble finding recipes that work for me. I've realized that my diet is EXACTLY like the McDougal diet (vegan and fat free), but those recipes are hard to come by. But I just wanted to share the dinner that I made tonight, you should all try it...I was so proud that I thought it up all by myself! LoL. I guess you have to be creative when you have this many limitations
So basically, I made a vegan, fat free, gluten free eggplant casserole.
I have a George Forman grill, and I use it to grill a lot of my veggies. Tonight I used it to just soften eggplant and zucchini. I sprinkled them with garlic powder, and put them on the grill for just a couple of seconds. Then I got out some sweet onion, fresh garlic, red bell pepper, plain canned tomato sauce and red beans. I coated the bottom of the pan with the tomato sauce, then chopped up some garlic and sprinkled it on top. Then I layed down some eggplant. I covered the eggplant with tomato sauce, garlic, onions and beans. Then I layed down a second layer of eggplant. I continued layering like that, but with zuchinni as the last layer. On top of the zuchinni I put a thin layer of spaghetti sauce and a thick layer of onion. Then I stuck it in the oven at 400 degrees for about 40 minutes. I covered the top with foil for 20 minutes then took it off and let the onions on the top brown. It was delicious! I'm glad I cut everything thin too, because everything had a great texture and such great flavor.
Anyone have any recipes that they reccomend?

Okay, so I took that drive down to whole foods and to my surprise, they were already sold out of Ricera yogurt
AND to top it all off...it's back-ordered for the whole west coast
They didn't know that it was going to be so popular! The nice man that was working the dairy section told me that they aren't back ordered on the east coast, so all of you over there are lucky
But here in California, he said we're going to have to wait QUITE a while until we get a hold of some. Bummer. You all have to get your hands on some and tell me how it is!
-
How ironic! I was JUST going out to buy some in a few minutes! I saw it a few days ago in Whole Foods, but they only had the peach version. I don't care for peach much, and I wasn't sure if it was gluten free, so I went home and looked it up on the computer. I'm going back today in hopes that they'll have the blueberry or strawberry version! It'll be nice because I don't feel that confident in my "Whole Soy" yogurt cups...I hear that with hormone problems, soy isn't the best for ya. So I'm excited to test this out!
-
Wow, thank you so much for your input everyone! SO...I've been vegan for about 3 days now
I eat about 2 cups of beans a day, trying to get that protein in...and tons and tons of fruits and veggies, plus some rice porridge, sweet potato, and rice flour pancakes. I'm on a 2500 calorie diet so I'm just hoping that since I'm eating so much, im getting protein in. My hormones are ALL out of wack...I haven't had a period in almost 3 years, but I decided that in order to get protein and calcium I'm going to have about a cup of soy a day. Does anyone have any input, advice?
-
Thank you so much...ALL OF YOU...for your great responses
I'll definitely be checking out those websites that you guys suggested as soon as I finish this post! So thanks Turtle for that vegiac link...I'm really interested to check it out!
Hathor,
I hope you have a great trip! I wish you lots of luck with your diet while you're away! You know, you seem to be JUST the person I've been looking to talk to, because I also have to be careful of soy too. I have some hormone issues and just don't think soy would help too much. So I was wondering, how exactly do you get your protein? I mean, I practically LIVE on beans now...at least a cup a day (half a cup each meal), and chicken (which is what I want to quit eating)....but I'm not sure if I'd be getting enough protein if I cut the chicken out, especially with my situation, trying to gain healthy weight and weight training to build muscle mass back. Do you feel that you get enough protein? Well, I'll start out by checking out the link you gave me
Spunky,
Thanks for sharing your story! I'm sorry going vegan went so terribly for you. I'm worried that things might go a little wrong if I try it out too, since I'm already having SO many issues with food...I don't want to tack more onto the list!
Anyone else have any words of wisdom?

We're having a little birthday party for my daughter. The cake needs to be gluten and dairy free for my daughter and sugar free for one of her friends whose diabetic. Do any great tasting recipes exist that meet all these requirements? Thanks in advance for any suggestions!
I'm actually looking for the exact same thing! I'm having a graduation party and want to bake a cake for myself. LoL. I've done it before, I actually used a "Cravings Place" mix. They have a "Create your own Cake" mix that has NOTHING in it...so i'd just google them and you can order a package online.
Has anyone else found any other mixes?

I've been gluten-free and casein-free for almost 6 months now and the bloating has gotten *a little* better...but I still get crazzzzy bloated too
Isn't it terrible when ya start to look pregnant at the end of the night? LoL....i dont really know what to do either. But I hope you feel better soon!

Thanks fiddle- faddle for searching. I appreciate it.
peacenlove_girl17, I can't believe you have it too. I'm not anorexic either, but I am small. Researching it on the Internet, I have read that it mostly happens to leaner people. I have found out a lot of information from google and yahoo, but not that much information in relation to celiac disease. Also with the Internet, it is hard to tell what is true and what isn't. I'm dealing with it okay, but as you probably know, it is incredibly frustrating and painful when I eat. I only eat 10 or 11 foods. How long have you had it and how did you get diagnosed? I just found out about it recently from having a CT enterography, and I haven't got too much information from my doctor yet. Not all doctors really believe it exists. It's good to know that I'm not alone.
How are you feeling?
Hi, Danielle,From the links I found, it sure looks like "Nutcracker Syndrome" is totally different from Superior Mesenteric Artery Syndrome. Weird, huh? So either the info on the links I found are wrong, or your doctor is. Or maybe both are wrong? I dunno, it's way beyond my scope of knowledge. Sorry I'm not more helpful.
Any possibility that this could be Lyme-disease related? (Just a shot in the dark, but you never know...)
Oh my goodness Fiddle-Faddle, what an interesting suggestion! I actually have a co-infection of lyme! Gosh I never even thought to make that connection. Did you happen to read that somewhere?
I'm glad that you're finding info dagreen
And I know how you feel on the restriction to 10 or 11 foods
Same thing EVERYDAY, right? It's not very exciting. Do you mind if I ask what happens when you eat something that doesn't agree with you? I feel like at first, it gets stuck in my upper stomach, but then a few hours later (about 5 hours) once it gets to my lower digestive system, I start having intestinal spasms. Hopefully you don't experience any of that! I was diagnosed about a year ago, and my doctor was NO help so I actually switched doctors and have found a doctor that believes in the more homeopathic route to treatments. Has your doctor been much help to you? Does he have any theories? I was diagnosed through a barium xray. not fun! haha. But I'm feeling okay. I have my good days and bad days, all seeming to be food-related. Thanks for asking.
How have you been doing?

I think I was glutened by Alexia's hashbrowns! I drefrosted some frozen hashbrowns (Alexia's) with just water in a clean pan, and I experienced some of the same symptoms that I experience when glutened, 3 hours later. 3 hours is my typical reaction time. Go figure!
-
wow....i HAVE it. My jaw dropped when I saw the title of your post. I just can't believe that someone else out there has it..let alone even KNOWS about it! I can't find any information on it either....it's like this mysterious condition I guess. It's so frusterating.
I actually truly believe that it's food allergy related, but the doctor who diagnosed me with it (who was a real jerk) told me that it only happens to people who are anorexic, therefore he diagnosed me with anorexia. I totally wasn't anorexic at all...so that was pretty difficult to deal with. But ANYWAYS....
I know it can be painful...are you dealing with it okay? I really hope you feel better soon.

I was put on zelnorm by a doctor who refused to test me for anything. He said that all I had was IBS. I took zelnorm for a year, and it made me even sicker. It was horrible. Finally I switched to a private M.D. who practices alternative medicine and he took me off of zelnorm immediately and started testing me.

I live in northern California! Not going to camp though...LoL.

It's so strange...I react to ALL oils. If anything even has a drop of oil in the ingredients..I react. It's so odd. I'd love to hear if you've experienced more with oil, and I'd love to hear anyone else's perspective on issues with oil...because that's not really a common allergy.
-
I react to nearly all milk substitutes as well! So you're not alone. Unfortunately though, I can't be of much help to you. I haven't exactly figured it out either. I HAVE figured out though that I react to anything and everything with oil and/or fatty acids in it...so that would be the oil in rice milk and the almonds in almond milk. Are you okay with oils and fats?

Hey Everyone,
I don't know if you remember me, but for a little while I chatted with some of you and posted a bit on some of your boards
I guess I was a resident of Rachelville for a while! I've just been thinking of you guys a lot lately and wondering how you've all been doing. I'd love to hear an update from each of you! Especially those doing bio energetics/accupressure allergy treatments. How's that going? Have you guys been able to introduce new foods? Has anyone discovered anything earth shattering? I really hope all is well with each and every one of you, lord knows you deserve it

Oil-free chocolate sounds a lot like that mockolate on the Friends episode.
But, yay for cream of buckwheat! Although I do have a bone to pick with Rachael Ray when she said last Thursday that buckwheat was just another kind of wheat...
peacenlove...are you really completely oil-free? That sounds a little, I don't know, like not good.
Goodness I know! Don't you wish that there could be a chef on the food network that specializes in cooking with food sensitivities? Perhaps that should be a long term goal of mine. Haha.
But yes...I am indeed oil-free and it scares me to death. Well, perhaps I shouldn't say "to death". LoL! But it does scare me quite a bit because I'm not getting omega 3s and all that good stuff anywhere. I seem to be fatty acid intollerant though...everytime I try something with the fats...even if it's just a drop...horrible intestinal spasms about 5 hours later. I'm kind of stuck and not sure what to do and what's causing it.
But anyways...How was everyone's Easter?!
-
I woke up this morning and what do I find in my easter basket? A nice new box of cream of buckwheat! Haha. The Easter Bunny gifted my sister some lovely bars of dark chocolate, but I'm sure when he got to my basket he was quite stumped on what to give a gluten free, oil free, egg free, dairy free girl. So he decided on a nice yellow box of cream of buckwheat!
Happy Easter Everyone, I hope the Easter Bunny left some great goodies in your baskets (be it chocolate or hot cereal).
