  1. I am interested to know what your doctor's reaction to the elevated Liver Enzymes was. Is there a reason for them to be elevated? Are you taking any meds for high cholestrol that might raise your Liver Enzymes?

    Unfortunately, the only way to test for Fatty Liver Disease is to have a Liver Biopsy done. It is not a fun procedure. Many doctors are not very educated in Fatty Liver Disease-I had a doctor say it was nothing to worry about, but on my own research found that it can lead to Liver Fibrosis and Fibrosis leads to Cirrhosis. Cirrhosis is not cureable and is fatal. Fatty Liver Disease is part of a condition called Metabolic Syndrome. You can ask your doctor if he/she is more familiar with that condition. Signs of Metabolic Syndrome include obesity, high blood pressure, high cholestrol, fat in the midline area of your body, Diabetes II.

    I would suggest you press your doctor a little more on the elevated enzymes to see if there is a reason and what you can do to bring them back to normal levels. Hopefully this is just a temporary symptom for you!

    Well, my elevated liver enzymes was one of the reasons that I left Kaiser. My Kaiser doctors kept telling me that they were finding abnormal things, didn't know why they were abnormal, so they just left them and figured it'd be okay, or I'd just have to live with it. They couldn't find a reason for my elevated liver enzymes, so they just left it alone. So I switched over to the alternative medicine world and I found a private M.D., who believes the elevated liver enzymes may be due to bacterial and viral infections, and parasites in my digestive system...but he can't be too sure. All he can do is treat the infections that he thinks are there, and see if my liver enzyme issue clears up along with it.

    I don't have any of the issues that you've mentioned. I actually have the opposite of a lot of those issues! I don't take any meds that would elevate them. I'm not obese, I actually have the opposite problem. Due to not being able to digest ANY fatty acids (which i really think has to do with my liver!!!!), I fell to a dangerously low weight...about 50 pounds underweight. Currently I'm still about 20 pounds underweight. Maybe 30 pounds, considering my height. I don't have high blood pressure either, it's actually very very very low...it's come up a little bit with the tiny bit of weight gain i've been able to achieve, thank goodness.

    Goodness, I really wish I could find some answers on this liver issue (and fatty acid intolerance)...because those illnesses sound so dangerous!

  2. Hey, I'm glad you had a nice trip :) Where exactly did you go in California? I live in Northern California but as a senior trip this summer I'm doing the whole "road trip" thing to Southern California and my friends and are are renting a beach house. Like you said, I thought that'd be safer. BUT im sure my friends are going to want to eat out a lot, so I was wondering if you had traveled along the coast in southern California, and if you could reccomend any accomodating restaraunts? Thanks :)

  3. Well, I can't tell you how long it's going to take before you can eat those things again...BUT I just thought perhaps you'd feel a teency bit better if I told you that I feel your pain. LoL. I'm gluten free, dairy free, egg free, soy free, corn free and fatty acid free....which means no oils, nuts or butters :( I eat pretty much the same thing everyday too. I know how it is....I'm not particularly craving a salad...all I happen to want is a bowl of cereal! Too bad rice milk and almond milk have fatty acids :( But ANYWAYS...I hope you get some answers and start to be able to introduce things soon!

    I was going to post a topic about this too...but the only difference is that I'm not sure if I have a fatty liver or not, but I suspect that I have liver issues. I have terrible bloating just like you described...but I also have what feels like painful intestinal spasms, especially if I eat ANY kind of fatty acid. I can't digest ANY oils. When I even have a drop, it seems like my whole system starts to shut down. Has anyone heard of this or experienced this? About 6 months ago I believe my liver was tested and my enzymes were elevated, but that was all. At the time though, I dont know if I was having this much trouble digesting fat. But ANYWAYS...I just wanted to know what everyone thought :)

Thank you guys for sharing your results, now i dont feel so panicked :) But I was wondering...everyone who had really extreme deficiencies (according to the analysis), do you ALL take supplements? Unfortunately my body tends to reject all of the supplements my doctor tries to give me...we've tried A LOT...especially ones labeled "gluten and dairy free", but my body just hates them. Especially ones with calcium. *sigh*. I'm such an unhealthy person. LoL!!!!

  6. So I've been wondering what all of my food sensitivities have been doing to my body. I'm sensitive to gluten, dairy, and fatty acids (all oils, nuts, butters). I figured that a diet without all of these things MUST be terrible for my body. The I came across this:

    It's an analysis that tells you what you are defiecient in! I was so thankful to find it! I think everyone should take it. Here are all of the things I am supposedly defficient in, and how defiecient I am:

    94% vitamin b12

    90% vitamin d

    76% calcium

    72% vitamin e

    63% zinc

    60% pantothenic acid

    60% omega 3 fatty acids

    Ahhh!

    Well, it IS nice of them to give you recipes on how to fix that...but unfortunately I can't eat many of the recipes they suggest :( This makes me a little nervous. I've decided that I'm going to eat a lot more spinach...but Im just not sure how to get in all of those omegas that i need, plus my calcium and my vitamins B12 and D! But thank goodness for informative sites like this one.

  7. It's so funny that you just posted about lentils, because i just had the strangest lentil experience last night! LoL. I bought these "split red lentils" from Draegers...they were "packaged by Vanns spices" or someone like that...and i took them out of the package and started boiling them, and noticed they had a REALLY strong smell. The package says that it's just lentils, just like your package says...but these HAVE to have SOME kind of spices in them. And mine turned out weird too. Like mush. LoL. The again, the package DOES say that they can take a "puree" form....but ANYWAYS...do you all think they're safe to eat, even though they obviously have added spices? I don't think their website has any info on gluten.

    Hey I noticed that you said you go to school in Davis....the UC right? Well I'm deciding on whether to go to USF or Davis...and I think you might be the perfect person to ask this...in your opinion, how well does Davis deal with their students with food allergies? I have an allergy to gluten and to oil...tough one. LoL. I was just wondering how you were getting along with your diet over there :)

    So far I think Outback Steakhouse sounds like a great option because it looks like i can get plan steamed veggies and a yam. That's what i eat at home anyway, since im so restricted. LoL. Not being able to do very much oil makes this hard though...

    But here's what I've found so far (please let me know if you've been to any of these places!):

  11. Ya im from San Diego! Ya there r lots of support groups here! i love the support groups not celiac! i hate whoever made it!!!!!! GRRRRR!!!!! Well ya do anyone act sing dance lacross gymnastics. the only reason i ask is cuz i do all of that belive it or not!!!! :P

    Aww thats great that San Diego has a lot of support groups! That sounds fun. Because I live near San Francisco and there isn't any...AT ALL! Not one! :(

  12. Hey im from CA!! WHOOP WHOOP! I SING ACT AND DANCE. I WAS DIAGNOSED 2-3 WEEKS AGO! ITS REALLY HARD! I DONT KNOW ANYONE WITH CELIAC DESIE SORRY ITS LATE AND IM TIRED SO IM NOT SPELLING CORRECTLY RIGHT NOW! WELL THIS IS LIKE THE HARDEST THING EVER!

    Hey! I'm from California too :) What part are you from? I think California seems like a pretty good place to be gluten free.

  13. I'm taking a senior trip for 7 days in June and I was just trying to begin to plan it out now, because I know it's going to be difficult as a Celiac (plus many many other food sensitivities). We're driving to L.A. (From San Francisco) and we're renting out a beach house there (which is convenient for me because it has a kitchen). We don't know what we'll do or what we'll go see, all we really know is that we're going to Disneyland one day :) So anyways, I was just wondering if anyone had any advice for me on how to eat in L.A., like does anyone know of any good restaraunts that are accomidating, any good grocery stores or health food stores? Any tips or hints would be great :)

  14. The McDougall diet is vegetarian, with no dairy, eggs, added fat, or high fat plant foods (the last if one is trying to lose weight). So there are lots of recipes there (several books, a free monthly newsletter with recipes [archived], a discussion board). It isn't gluten-free, but those of us that are have our own little subforum to talk. There are some nice recipes at www.vegsource.com/marla (have to convert those that have gluten) and www.fatfreevegan.com/gluten-free.

    If you eat meat & fish, I can't help you recipe-wise. (Do the fatty acids in them bother you?) But this at least gives you some side dishes or recipes for meatless meals. I had a big problem with fats, dairy, & egg, which is why I went to McDougall to begin with. Now I find that I can digest occasional items with some added fat & high fat plant foods, which I can "afford" since I'm now skinny :lol: But now I find out I need to avoid gluten, soy & yeast and do a complete job of avoiding dairy & egg, so I don't know that I'm making progress :huh:

    One thing I've noticed is that you can often leave oil out of a recipe without problems. One can saute in water, broth, wine, soy sauce, balsamic vinegar, etc. and things work. At least sometimes, in baked goods you can substitute something like apple sauce for the fat and it actually works! In the regular fatfreevegan dessert recipes, you can get some ideas.

    Wow, you have no idea...you might have just saved my life! I'm so limited right now and gaining weight is nearly impossible...these websites actually might help me to be healthy again! Thank you SOOOOOOOo much!!

  15. I made a totally easy (and quick!) dish tonight, so if you're ever in a rush, try something like this (if you're not in a rush, add chicken to it!):

    I boiled up some lentil pasta (high protein!)

    Tossed it with some Road's End Golden Gravy

    Threw in some frozen peas and carrots

    And had it all over some zuchinni!

    Was great :)

  16. Aww I know how you feel :(

    There are days when I get SO frusterated. I'm allergic to gluten, dairy, eggs, and fatty acids (which means anything with oil, nuts, avacados etc.)

    So if you have any of those inollerances and need help...please let me know! If you need dinner ideas, snack ideas etc.

    OR if anyone else has the same intollerances as I do, I'm still open to suggestions too :)

    Debbie...that is AMAZING! I should do a trial run and test it out before my birthday party! Do you happen to know if it would work if I substituted the oil for applesauce? I do this often, but i know that some recipes reccomend that you don't...

  18. Aww I definitely feel your pain, especially with the whole constipation thing. I don't think people understand how uncomfortable and actually painful constipation can be too. When I get glutened and go into that whole cycle, I just sit in the bathroom and cry. LoL. Part of my feels like I'm missing out on life by not going out and having fun, but then the other glutened part of me wants to hide in my house forever. So I totally know what you're feeling!
