  1. Just be VERY careful about cross contamination. Don't use wooden spoons or nonstick pans which have been in contact with gluten. Make sure there are no crumbs lying around before you start baking. Check your pan spray, some contain flour. It would be a shame to go through all the trouble of making a wonderful gluten free surprise, only to have it make her sick from accidental cross contamination.
