Nearly everyone diagnosed with "celiac" will have one or two "celiac genes." However, some get it without the genes. Also, you can have a problem every bit as severe from non-celiac gluten sensitivity and not have the genes, too. Having the gene doesn't mean you have the disease. It merely means that you might get it. As the information from Enterolab said, there is a "predisposition." No, I've seen people report results saying they aren't sensitive to casein. The lack of severe reactions following something doesn't mean anything. If you are having casein all the time, you could have built up a tolerance to it or are in a constant state of reaction. See how you react to the stuff after you've been off it awhile. Of course... -

For the most part, yes, but it depends on the restaurant. Certainly places that are Asian-oriented or have lots of fake meats seem to have lots of soy sauce, tofu, seitan, other sauces that rely on soy beans, soybean oil, you name it.
