  1. A few summer's ago I went to a Christian camp and my mom and I explained to all the directors about my situation. We brought lots of gluten-free food and they cooked it for me. So when everyone else was lining up to go through the food lines, I just went back to the kitchen and this really nice lady had my food all ready for me. Most of the kids asked why I was eating weird, different stuff simply because they're curious. But everyone at my camp was really nice about it after I told them why. They all asked about a million questions though, example: Oh my gosh, how do you live without eating bread? What happens if you eat it? Have you never tried an oreo...a biscuit...spaghetti...and the list went on and on. :lol:

    Then two summer's ago I went to cross country camp. I didn't explain my situation to anyone there because the camp was held on a college campus and we got to eat the food from the cafeteria at the college. There was always a variety of salads, lunch meats, veggies, and fruits that I could eat - so the only things I had to bring from home was a loaf of bread and some cookies!


  2. I was wishfully looking at a box of my non-celiac sister's Trix cereal that was in the cabinet yesterday, and out of habit and having nothing better to do I decided to pick it up and read the ingredients, even though I knew that it had malt flavoring in it which would make it not gluten-free.

    However, as I read through the list I didn't see it. So I read through a second time! And a third time! Finally I got my mom to read it and make sure my eyes were not deceiving me. But they weren't!

    I can now eat Trix cereal! I noticed on the box that it said, "Great new shape!" so maybe when they changed it from the fruit shapes to just the colorful balls they took out the malt, but anyways...I was super excited!

    I think I'll go eat a bowl of Trix.

    This summer I'm gonna be working in the little health food store where I get my gluten free food from. I probably won't get paid that much but the owners of the store really want me to work there so I can help them with their celiac customers, since neither of the owners is actually celiac.

  4. 2 tbsp. shortening

    1/4 cup sugar

    2 eggs

    1 cup white or brown rice flour

    2 tsps. baking powder

    1/4 tsp. salt

    1/2 cup milk

    1/4 tsp. vanilla extract

    Mix the shortening and sugar. Then mix the eggs. Then throw in the flour, baking powder, and salt and mix. Then mix in the milk. Then mix in the vanilla extract.

    Bake for about 20 minutes in a 350 degree oven.


  5. I also found that my bladder is ultra-sensitive when I get glutened, I have trouble doing any running or jumping because I feel as though I can't hold in my pee!

    this is going to sound INSANELY weird...but I think that may happen to me as well. I run track (long distance) and occasionally when I'm sprinting at the end of the race, my bladder won't hold it in! Normally it's just a tiny itty bit but this one time I totally wet myself! HOW EMBARASSING! anyways does anybody else have that happen to them? I would feel much better if that was a symptom of celiac instead of me just not being able to hold my bladder!

  6. I'm 16 and I've been Celiac my whole life. Neither of my parents nor any of my 6 siblings have Celiac. Hopefully this will help you:

    1. I have my own toaster. He will definitely need his own.

    2. I don't think it's necessary to clean the microwave every time you put a gluten food inside because gluten can't magically get into the atmosphere and make him sick.

    3. I'm the only one who eats a gluten-free diet in my family. #1 It would be entirely too expensive to feed the whole family with gluten free foods #2 My siblings would go CRAZY without wheat #3 My dad would NEVER give up his gluteny foods ;) So, it's not necessary for your whole family to go gluten-free unless you don't want to cook separate meals for your Celiac son and would rather have everyone eating the same thing.

    4. You don't have to buy new pots and pans and dishes and such. Just make sure everything gets washed well, hot water and soap work fine.

    Luckily he's young and it's good that he's diagnosed early. I was diagnosed when I was 2 so I've grown up knowing how to read labels on foods, how to order from restaurants, etc.

    He should learn to accept this new part of his life soon, and he'll be able to be a "normal" kid! I promise.

  7. You asked about Kraft carmels and if they were gluten-free. I know that some people react differently to different things but I am very sensitive and had Kraft carmels and was fine. So I'm pretty sure they're gluten-free but to check and make sure just call the number on the back. Most of those people are good about finding out if it's gluten-free or not, although some people are just plain rude.

    Which reminds me of a story I'll tell really quickly. I wanted to eat some Hardees hash rounds one time and so I called my local Hardees to ask them if they were deep-fried in the same oil as anything else and the guy said, "I DON'T KNOW WHAT YOU'RE TALKING ABOUT!" and hung up on me! :lol: Some people are just so rude.

  8. Yes BF I do live there. I just started the gluten free life style so I don't have any real recommendations. Although there is a Chili's and an Outback in town that have gluten free menus.

    There are two Buffalo Wild Wings in Springfield. One on Battlefield and the other on North Kansas Exp. almost to I-44.

    Oh, and there is a new Chick Fila and Red Robin on South Glenstone. I know they offer gluten free choices but I have yet to visit them.

    Do you know if all Outback restaurants have gluten free menus? Do you have to ask the waiter for a special gluten-free menu? Sorry for all the questions but after all of our school's big important track meets we go eat at Outback and I'm always stuck ordering the same thing - a burger without the bun. :rolleyes:

  9. Im afraid I dont know very much about hypoglycemia but I often did wonder might my son be a sufferer. He is celiac but sometimes when he hasnt eaten he just loses it... gets very cross and irritable. .... anyway, isnt hypoglycemia somehow related to diabetes? and isnt celiac carried on the diabetes gene? Sorry this is a very unhelpful post just asking you questions instead of helping out... apologies... but it made me think!

    Hypoglycemia is most often related to diabetes but there are a lot of cases where it has nothing to do with diabetes - I guess your body just reacts crazily to sugar.

    Thanks everyone! I just became a member of this website yesterday when I stumbled across it while doing research for a paper on celiac disease and boy - I wish I had known about this earlier! ;)

I've been a Celiac my whole life but I was just diagnosed with hypoglycemia a few months ago and all of my delicious, wonderful, sugary wheat-free cookies, cakes, etc. have been stripped from my diet. :( I LOVE sugar! I would continue to eat it and just say, "Screw hypoglycemia" except that when my blood sugar goes crazy while I'm running (I run cross country, indoor track, and outdoor track) I pass out.

    Anyways, I'm not really sure what the purpose of this post is: but if anyone's hypoglycemic - leave me a comment!

  11. I'm 16 and was diagnosed when I was 2 years old so I don't even remember what wheat foods taste like. My advice:

    1. DO NOT say you have Celiac disease unless you're talking to a doctor or a very close friend who's not going to shun you because you say the word "disease". Say that you're allergic to wheat.

    2. Kinnikinnik 's white sandwhich bread looks very similar to regular bread and it tastes GREAT. Most of my friends get really confused when they see me eating it because they're like, "I thought you were allergic to bread" lol

    3. Don't worry - the gluten free food world has gotten 100 times better. When I was really little, everything was DISGUSTING, but now there's a lot of very tasty foods.
